Along with Sanwari Koji Junmai Sake, it is actively introduced to overseas customers as a key export product. Yamae-Nishiki, a sake brewing rice developed in Nagano Prefecture, is characterized by its light taste! The green apple-like acidity that bounces in the mouth gives it an exceptional crispness. The slightly low alcohol content of 15 degrees Celsius gives it a balance of flavors that is only possible with sake in its original state. It has been matured for about a year and has a mild taste. Convergence is a slightly bitter aftertaste.

This sake is only sold in one bottle. The first brewing was dry due to high temperature and early fermentation; the second brewing, to be released in December, will have a different flavor. It is distributed almost exclusively locally. Kiso-village has a lot of sake drinkers, so it is sold by the case. Wow.
