I bought this sake because I felt that a sake made with Hitogokochi from Nagano Prefecture suited my palate.
The aroma was gorgeous, the flavor was strong, and it was very satisfying.
This is only the third sake I have had, so I will actively buy more when I find other sake made from Nagano Hitogokochi.
I am completely addicted to fall sake today.

I wondered if it is a fire-aged autumn sake, can it be served at room temperature? So I opened the bottle when it was back to room temperature. I was surprised to see gas! I was surprised to see gas 🫢.
The mouthfeel was also gassy, with a green apple-like flavor, sweetness, and umami.

Oh. Slightly darker, richer mouthfeel. More of a classic type. Slightly sweet, with a bit of sourness. When I tasted it carefully, I thought the bitterness came later.
On both the first and second days, the bottle opened with a pleasant sound, but there was no gaseous sensation.
I was not sure which one to open since it was a special sake day, but I was late on my way home from work and could not prepare much, so I went with this one, which I could drink in a relaxed manner without being overbearing.
As with many other things, the BY date was one year ago (smiles).

Sourness is there, but it is easy to drink. The sweetness comes out later.
The sake is said to be made by Yukawa Shuzo Natsujun Junmai Ginjo Shop, which brews "Kuroemon XVI", in pursuit of ease of drinking.
The aroma is slightly cemedine-like.
The taste is sweet and refreshing.
The more you drink, the more addicted you will become to this sake.
