Junmai Ginjo
Dry, slightly strong aroma (flower), slightly weak attack,
Sharp, slightly thick, short umami aftertaste, light bitterness, somewhat simple, somewhat habitual but not averse to it, more like a Souzake than a Kaoru-shu
Found forgot to raise last week.
The aroma is mild.
It is hot and spicy.
Not sweet, but the umami is firm and solid.
Alcoholic punch and bitterness.
The acidity is good and sharp.
It is an orthodox, super dry, food sake.
Goes well with ray fins.
Degree of liking ☆3/5

This will be a comment from an amateur drinker. Today I found and had a bottle of World's First Synthesis after a long time. I was satisfied with it, although I had to check it against my past taste buds. However, I am starting to think that a little more Junmai Ginjo would be easier to drink for me at the age of 50.
I am thankful that I can drink good sake again today. I had this at an oden shop I stopped by on my way home from a betta-ichi in Tokyo. Thank you very much 😊.
It is slightly sweet, but has a mild flavor that is typical of hiyaoroshi.
From the start, the umami and moderate ginjo aroma spread quickly, and then it goes through at top gear, finishing with a subtle bitterness.
It has a good balance of brightness and mellowness, and can be easily matched with a wide range of dishes.
