I'm opening another bottle today😍. My first Miyazaki sake. Everyone says Miyazaki is hard to get, so I popped in 🤣 I ordered it with Jidori Koko 👍. It's a bit sweet, but not too sweet. It has a modern umami taste, similar to a brand I've had before like Tsushima-ya 😋 It's quite refreshing and the sharpness disappears quickly 😋 It seems to be the only brewery in Miyazaki that specializes in sake 😋 It's delicious - thanks for making sake 😂.

Scoring: ☆☆☆☆ Miyazaki's only sake brewery specializing in sake, Chitoku Shuzo. It has a mild aroma with a good sweetness 😄. Refreshing drink with little lingering aftertaste. 😋 A lightly flavored umami type, or perhaps an 🏠. Not much umami or bitterness lingering on the tongue. Easy to drink but needs one more punch😅. It has an old fashioned taste but with a modern drinking style😋. Quite a tasty sake😋. Tonight I'm having seafood nabe with oysters, cod and scallops 🎵👍

I bought this sake at Nishizawa Shoten, a liquor store in front of Kawayuonsen station in Teshikaga-cho❗ I went to the south for the first time to try a sake I had never had before 😊I see this sake is made by Miyoshino Brewery, which brews Hanaboe 😃. The color is amber as you can see! It has a rich and sweet taste like an aged sake! I think it has the feeling of being organic due to the Yamahai method 😋. I would like to have a bottle with something salty like cheese or cured ham 😉.

It is a light nigori 26BY of Iwo 🍶. First, cold sake. The top aroma is that of old chests 😂. In the mouth it has a hint of sweetness, but the aroma of old chests is strong😅. Next, warmed sake 🍶. When warmed, it smells like wet wood 😌. In the mouth it tastes a little acidic and the taste wasn't bad. Like the Chiyomusubi I had two drinks ago, nigori-style sake is said to be unsuitable for aging because the nigori part of the sake is altered and causes off-flavors. This Sake is very interesting. It has a citrus flavor like grapefruit. The flavor really cleanses the pallet.

Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.
