I think they had closed their brewery for some reasons and were shipping out their stock, but I saw on SNS that they have started brewing again. I see that they have also released a draft sake. I drank a bottle of nama sake about 4 years ago when the warehouse was already closed, so it was a slightly matured one. Polishing ratio 55%, domestic rice, 15 degrees, Sake degree +2, Acidity 1.6, 1401 yeast? 1747 yen I thought it would be matured, so I was disappointed with its clean taste and no sense of maturity😅. I wonder if there are any liquor stores far from Takatsuki station or south of Kyoto station 🤔.

This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.
