Rice polishing ratio 90%❗️
This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing.
The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in.
This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing.
It's amazing. Michiko Urasato, Toji 💡.
I had it with ginger yaki, and it was delicious.
The sake and side dishes go well together😆.
I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today.
I heard it's also good at different temperatures.
