Junmai Ginjo ◉紬美人 Junmai Ginjo The first taste is sweet and fruity, with a slightly complex finish. The toji (master brewer) is Mr. Tsutomu Umezawa, a Nanbu toji (master brewer). Mr. Umezawa trained at Asakai before joining Nomura Brewery.

There seems to be a French restaurant attached to the brewery! I found out that the regular junmai ginjo has a more classic label. This one seems to be a modern type named "Grand", so I wonder if they are making a modern label? This sake won the Platinum Award at the 2017 KURAMASTER Sake Competition Polishing ratio 55% Yamadanishiki from Ibaraki 15.3% Sake degree +1 3000 yen Fruity and sweet but a little strange? Maybe the taste of Senhime is still in the boar's mouth😅. I forgot to take a picture, so I borrowed Nemuchi's picture.

It's been a long time since I've had a chance to try it. It is a sake limited to a certain liquor store in Fukuoka. This is very tasty. The aroma is not so much. The taste is juicy and melon-like. There is a slight bitterness in the aftertaste, which is also good. If you come to Fukuoka, I recommend you to buy it 🍶.

Leaving the new sake festival, we went to the second restaurant. The second party was at a soba restaurant on the restaurant floor of Amu Plaza Kumamoto, adjacent to the station. This soba restaurant has a great selection of sake 😁. The price is... no way 🤣. The second drink was Shashaemon I had this sake at this restaurant before, but I couldn't remember what it tasted like, so I ordered it. The moment I put it in my mouth, the gorgeous aroma spreads and sweetness, sourness, umami, and spiciness all come at once 😳. This feeling is like no other 😁. There was one more restaurant I wanted to visit in Asahikawa, and I went to Ogawa Shoten, which interacts with local izakaya in Obihiro. Here, they recommended Huataka from Oita Prefecture. I told them what I liked and decided on this one. It is refreshing but has a strong alcohol taste rather than a spicy taste. 16 degrees Celsius is a bit heavy, but it becomes softer when it is cooled down to a crisp, so it is quite tasty. I found myself drinking a lot of it because I wanted to unravel its complex flavors. The taste reminds me of sake from Kyoto or Gifu. I'm looking forward to another sake meeting at Tokachikan this fall.

@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).
