At home. First time in Gifu, Shirakawa-go. It's very thick, even among the nigorizake I've drunk. The aroma is like sweet sake. When you put it in your mouth, you can feel the sweetness of the rice and grain, and the sourness. The texture is tart and leaves a little residue on the tongue, but it's not unpleasant. I think it is best served on the rocks.

Home drinking. 100% Yamadanishiki produced in Shiga Prefecture The color is slightly whitish. The mouthfeel is clean and mild. The taste is sweet like green apple. I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough.
