This is a super new sake that was just made yesterday✨.
The first taste is koji, followed by sweetness and a lingering alcohol taste, which I personally experienced for the first time.
I visited the brewery and the proprietress was very nice and let me try some tasting and I had a good time shopping 😉.
It goes great with the local sesame pickles 😘.
I didn't put it on the picture, but the fresh pickled pepper they were selling is also very tasty...!
The second bottle of Mai-Zakura was sent to me by my brother who lives in Chiba. It is a crisp, dry sake with a very bitter taste and a strong rice flavor.
It is a junmai ginjo sake from the Moriya Sake Brewery in Yamatake City, Chiba Prefecture, and is a delicious sake with a robust rice flavor and the petitiveness typical of nama-shu.
It is not spectacular, but it has a rich and robust flavor that spreads softly and passes through the nose.
It is a perfect sake for grilled fish, nameko mushrooms, and other sea foods, and is a perfect match for the fishing town of Kujukuri.
