The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.

Sake from a brewery famous for Ryujinmaru. It has been a very long time since Kirakuri. After Shikishima, tkmts-san was drinking Ryujinmaru, and I wanted to try something of Takagaki-san's sake, so I chose Kirakuri. This time it was an unfiltered raw Nakadori. It has a caramelized taste with sweetness and a sense of maturity. It's just a coincidence that there is a succession of sakes with a sense of maturity, such as Washin, Shikishima, and Kirakuri.

Daruma-san is always available at my favorite izakaya that serves kusetsu-tsuyo sake 🪆. I bought it with the hope that 3 years of aging would make it a versatile player...? I bought it with high hopes 🍶. As it turns out, it's not so much a versatile sake as it is the best sake when heated lukewarm: ♨️ It has an aroma like caramelized nuts and a rich sweetness that spreads 🥜. It was perfect with gratin or anything warm and creamy in winter 🐄. I think even those who have no experience with aged sake can drink this without any resistance. I think this is a bottle that even those who have never experienced aged sake will be able to enjoy it without hesitation 🍶. I wish I could have photographed it while it was still in its colored contents 😭

After a first visit to a liquor store or a first visit to a department store to buy sake, we went to Ikoma. A customer gave him a bottle of sake😁. It's so golden in color after 3 years 😹. It seems to be aged at room temperature 😅. It's like the Notoji I drank the other day, but I think this one is more beautiful 🤔. I drank it cold, but I guess it's generally a heated type of sake, but I thought I'd rather drink it at room temperature. It's sweet but has a strong sense of maturity, so I guess it's not to everyone's taste 💦.

Tonight, our first in the series, Aizu Otokoyama Kai from Fukushima Aizu ✨. First of all, the specs are 100% Fukunoka with Jungin polish and 16% alcohol. The aroma is clear with a hint of pineapple and a mojito-like flavor in the second half. The attack is soft and sweet just like the aroma, but soon the acidity and bitterness overtake it and it has a nice crisp finish 👍 It is perfect as a mealtime drink and is very easy to drink without feeling too much alcohol 😋.

Otokoyama Brewery is located in Aizumisato-cho, Onuma-gun, Fukushima Prefecture, which is different from Kaito Otokoyama. The brewery was dormant for a while, but has restarted again. It is a fresh, raw ogara-mi sake. It is slightly carbonated and tastes great with the bitterness of the oli.

At Ya-Ya in Kobe. This is the first time to drink Neko Masamune since it was transferred from the defunct Omi Sake Brewery to Maihime🐱. 1948 2025/10 Yumemado Tokubetsu Junmai Nama-nazake 60% 17° 25/8 A+ Matsuzaka City, Mie 720 1776 This sake is a pure sake that has been aged for a long time. The aroma is mild on the palate, and the flavor is somewhat nostalgic, but with a robust taste and a bit of character behind it. It was my first time drinking this sake, but I got the impression that it was a simple but very tasty sake I used to drink in the past. When heated up, the flavor became more mellow and different from that of cold sake. While everyone is trying to be modern and end up with the same old thing, this is a sake that is safe to drink and tastes like the old-fashioned way, I am thankful for the old-fashioned sake that I can drink with peace of mind. Although the type of sake is a little different, I felt happy to have found a new sake in the same Mie region as Miyamasugi, which I can no longer drink.

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... Echigo Den-emon Toyosaka The nose has a strong grape-like aroma. When poured into a glass, it gives off a fizzy sensation. When you take a sip, you are first surprised by the very strong acidity. It is not often that such a strong acidity comes out on the whole surface of a sake. After a delay, a moderate sweetness arrives, and the palate is filled with a lingering bitter astringency. The impression is light, fresh and dry. Overall, it is well-balanced and never gets old. The Mishaguchi I drank once before was full of sweetness and punchiness, and I thought it was a brewery that specialized in making such sake, but this time, the impression of acidity was strong anyway. It seemed that Mishaguchi is not a one-size-fits-all brewery, and I was eager to try their other sake as well. The sake is brewed in very small quantities by a single person, and as the label indicates, one can sense the tremendous care that goes into making it. The price is a little high, but that is acceptable if the sake is this unique. In these days when it seems that there are many sake with a somewhat similar taste, this is a bottle that makes you happy with its unique impact.
