OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

Yukijaku Junmai Ginjo Sakurahime Rating 4.4 Rice: Shizuku Ehime (produced in Ehime), Polishing ratio 55%, Alcohol 15%. Made with flower yeast isolated from Sakurahime, a flower of Ehime's original variety. 4 types of yeast are used, of which "TYPE-4" (Rich) is used. It is characterized by its mild aroma and smart spiciness. This junmai ginjo-shu maintains a constant line of aroma and flavor with the acidity that frames the whole. It has a sweet, mellow, slightly sweet, flowery yeast flavor, with a spicy, bitter taste at the convergence.

Purchased at the roadside station Furari in Matsuyama, Ehime, on the third day of a tour of roadside stations in Ehime and Kochi. Oh, it's Hiyoroshi! It's hiyaoroshi! I got hiyaoroshi for the first time this year. I drank a fresh stored sake of Yukijaku before I started sakewari and was impressed with its very clean and dry taste. This one is a little bit more matured hiyaoroshi and has a nice, clean, umami dry taste. It tastes better chilled in the fridge😋.
