New brewery opening I went to Takanomiyate - Akihamadaka, an event to enjoy the dreams of a hawk. I arrived the day before for this event because I had plans in Nagoya the next day. I know it is a lot of work to hold an event, but we had a very delicious, enjoyable, and happy time. Thank you very much. Thank you very much! We enjoyed the delicious food. The sake had a flavor that went well with Nagoya rice, and it was thicker than any other sake I have ever had. I am going to eat miso nikomi udon now while savoring the lingering flavor!

This brewery is located in the same district as Kami no I and Kuheiji, and like Kami no I, it is a locally produced for local consumption brewery. It is good for sake lovers that there are three breweries in the neighborhood of our kappo restaurant.

National Sake Fair 2025 Day 2㉔ Aichi ③. Yamamori Sake Brewery in Odaka, Midori-ku, Nagoya City I think Odaka was pretty much in the city, but I see that Kuheiji and Kami no Ii are also located in Odaka 🤔. I drank Takanoyume Junmai ALL NAGOYA Nama-zake Polishing ratio 60% Yumeginko 17% Sake degree -2 Acidity 2.2 Amino acidity 1.6 FIA-2 (Aichi Prefecture yeast) 1540 yen Nama-shu, but it is colored. Slightly matured The sake's sake and acidity were not disclosed at the event, but they were listed on Jizakaya Kodama's website. It's not the same BY, so it's just for reference. Takanomusume Junmai Daiginjyo Genshu Polishing ratio 50%, Yumesansui, 16%, 3844 yen Muscat-like fruity taste. I was looking forward to drinking it because many people are drinking Takanomusume, but I wonder if it was a coincidence.

Tonight's sake was made in January of this year, but it is so rich and mellow that it has the aroma of dried shiitake mushroom stock. It is a sake that has the aroma of dried shiitake mushroom juice. It is a very rich sake, with a thick acidity and umami that surges through the bottle like a torrent of water. It would probably be better if it were heated, but it's too hot, so I'll pass. It might be good on the rocks. No, it's a very good sake 🍶.
