I went to a shopping mall to do some shopping. We wandered around Cardi's. Sake. Ice sake? I thought it would be good when it gets hotter. I tossed it in the back of the basket. I had it waiting in the freezer, but I didn't realize how quickly it would crisp up. It was hot, so I decided to finish it off with a dessert. Adult sherbet Naoshichi is a brand of citrus fruit from Kochi. It's good to have in the freezer from now on. ⭕️ The manufacturer is Kikusui Sake Brewery. No, it's from Kochi, so it's from here.

Okan's present sake series. Today I chose Kikusui. I didn't know there was a Kikusui in Tosa. I didn't know that😓I expected some sweetness since it is a junmai ginjo, but it was very dry. Sometimes it is nice to drink sake at room temperature. It's a single-batch bottle, so it's easy to open 😄.

I went to the supermarket because I wanted a drink for the evening to drink while watching the opening game of the Premier League. I bought a bottle of Kihei's Omachi, a sake made by the Shizuoka brewery, expecting to like it as much as I liked the gorgeous Omachi. It was not what I had imagined, it was more like a classic Shizuoka sake. It is very light and dry.

This year, the rice used for the sake has been replaced by 2038 Honorific Fuji, and the label has been redesigned. When you drink it, there is a distinct sweetness at first, but the bitterness comes later and disappears. It has a sweet taste, but it is dry. Since it is dry with a clean aftertaste, it went well with Hamamatsu dumplings (🥟). I think I like this kind of sake lately. By the way, recently chilled dumplings are easy to cook and delicious. They are surprisingly inexpensive.

National Sake Fair 2025 Day 2⑭ Shizuoka ①. Shizuoka Heiki Sake Brewery in Suruga-ku, Shizuoka City. Moved to Okayama in 1967 but resumed sake brewing in Shizuoka in 2012; with about 100 koku, it is the smallest brewery in Shizuoka Prefecture Even in Shizuoka, there are still only a few stores that sell it. The brewery's staff was very helpful, and when I returned home I found out that he was the president and toji (master brewer). He is also the president of Heiki Brewery in Okayama and is still young in his 30s😳. We drank Junmai Daiginjo Yamadanishiki Red Polishing ratio 40% Yamadanishiki 16-17%, 3300 yen This sake was made for a national sake competition. It is a fruity, rich and juicy type of sake, which is not typical of Shizuoka. When I mentioned this to the brewer, he told me that they use 1801 instead of Shizuoka yeast. Junmai Daiginjo Yamadanishiki Ao Polishing ratio 40%, Yamadanishiki 16-17%, 3300 yen This sake was made for the Shizuoka Prefecture's annual sake competition. This one uses Shizuoka yeast. This Daiginjo is completely different from the previous one in that it is less assertive and more food-friendly. It tastes very Shizuoka-like. Both bottles and labels have a luxurious feel, but at 3,300 yen, they were not as expensive as I thought they would be 😅I expected them to cost around 5,000 yen. I was going to try the Kihei from Okayama, but forgot to go to the Okayama booth💦.

☀️ Masamune hunters go today🍶. Today we visited the Tottori & Okayama Antenna Shops, a place of relaxation for Masamune hunters 📡. As soon as I arrived there, I started looking for Masamune and found it 🤩. It's sake 🍶. It has a crisp, Hakka-like aroma. It is also very refreshing on the throat. The umami of the rice is subdued, and then there is a subdued sweetness and an equally subdued acidity. Overall, it has a light and simple taste 😙. It is probably best suited as a food sake 🍶. The 800 check-in is the H27BY (2015 brewing year) Sanko Masamune from which Toji Takagaki retired 😆. We were lucky to get it 😊. This is the only sake from Mr. Takagaki but we are holding Takagaki festival 😅🍶. When opened in the fridge, it smells slightly like a soy sauce warehouse (there was a soy sauce warehouse in my neighborhood when I was a kid) or Shaoxing sake. It's a dry and light sake when cold. Sanko is still a warmed sake, so I'd recommend heating it up 🍶. The top aroma is the aromatic aroma of a freshly heated sake. When heated, it does not have a matured aroma. In the mouth, you first feel sharp acidity and spiciness. The acidity is not as strong as that of Sanko Tenpyo's Namahashi or Yamahai, but it is quite good. There is a slight sweetness and a beautiful umami that does not make you feel the rice polishing ratio of 72%. This is a perfect food sake 🍶😊. I don't know if this is the original taste since it is an old sake, but it was deeply delicious 😌. After retiring, he returned to farm near his hometown, but unfortunately, he died in a field accident last year 🥲. I learned of his death when I saw a relative of his on Instagram late last May with a picture of H27BY "Katsumasa" to inform me of his passing. A toast to Mr. Katsumasa Takagaki 😌🍶.
