The 800 check-in is the H27BY (2015 brewing year) Sanko Masamune from which Toji Takagaki retired 😆. We were lucky to get it 😊. This is the only sake from Mr. Takagaki but we are holding Takagaki festival 😅🍶. When opened in the fridge, it smells slightly like a soy sauce warehouse (there was a soy sauce warehouse in my neighborhood when I was a kid) or Shaoxing sake. It's a dry and light sake when cold. Sanko is still a warmed sake, so I'd recommend heating it up 🍶. The top aroma is the aromatic aroma of a freshly heated sake. When heated, it does not have a matured aroma. In the mouth, you first feel sharp acidity and spiciness. The acidity is not as strong as that of Sanko Tenpyo's Namahashi or Yamahai, but it is quite good. There is a slight sweetness and a beautiful umami that does not make you feel the rice polishing ratio of 72%. This is a perfect food sake 🍶😊. I don't know if this is the original taste since it is an old sake, but it was deeply delicious 😌. After retiring, he returned to farm near his hometown, but unfortunately, he died in a field accident last year 🥲. I learned of his death when I saw a relative of his on Instagram late last May with a picture of H27BY "Katsumasa" to inform me of his passing. A toast to Mr. Katsumasa Takagaki 😌🍶. The fourth picture is a sake from the brewery where Mr. Takagaki worked in the past.

Congratulations on your 800 check-in✅, Matsuchiyo! ㊗️🎉🎉🎉 I wonder if there is something about the sake brewed by a particular master brewer that transcends the brand name. I'm learning a lot about that kind of enjoyment 🥹.

Thank you Manachy 🥳. I'm a maniac 😂. I'm glad I bought it, especially the Yamahai from Yoshimizu, which I've never had before, but it's really good 🍶✨️

Congratulations on reaching 800 check-ins, Matsuchiyo 🎉! You've been lucky enough to find and get a bottle of sake that's been stored for almost 10 years, and it's one that's too good for a commemorative check-in ✨. The toji guess is helpful 😁.

Thank you Maru 😁🫶. I'm looking for a sake that's good for my taste. I'm just looking for a good sake that I like so I'm just drinking from one end of the spectrum 😂.

Thank you, Hiro 🤗 Takagaki Touji's sake is characterized by its acidity, and all three breweries have inherited this characteristic. It's a completely different sake from modern sake, but if you have a chance, please try it 😉.

Thank you Jive 😚. I looked for it after I found out Mr. Takagaki passed away and I'm glad I was able to buy it 🥹. There are quite a few liquor stores that also promote Touji.

Happy New Year & Happy 800 check-in, Matsuchiyo 🎍🎉The sake here looks unique 🍶 Please keep up the good work this year 🙇.

Masaaki Sapporo-san, Akemayo omedetou 🎍. It is basically a dry sake with a slight matured aroma when it is cooled down. It doesn't have such a strong personality 🤔. Thank you for your kind attention 🙇🙇.

bouken
Matsuchiyo-san, I know I'm late, but congratulations on your 800 check-ins 🎉🎊 Mr. Takagaki was also a member of Okuharima 😳 It's great that you can find the sake from those days after he passed away 🥰.
Japanese>English
まつちよ
Thank you bouken 😸. Yes, that's right. He was the toji when Okuharima started up. I think there are still some sake for a few enthusiasts if you look for them 😅. By the way, has the toji changed?
