Good evening, I'll have your first series of Shinrai ⚡️ from Hiroshima 🙌 Jinrai Junmai Senbon Nishiki Unfiltered Unrefined Nama Sake 2023BY✨ It's been a while since I've had a Senbon Nishiki sake. The aroma is mainly banana yogurt with floral nectar, greenish pear, acidity and alcohol, which I like very much. The sweetness and acidity of the banana yogurt spreads quickly in the mouth, followed by the bitterness and spiciness of the pure rice from the sake, making it so easy to drink without feeling the high alcohol content 😋😋😋😋. It's like drinking a higher alcohol Sentori Classic and I like it very much 😊.

We opened a bottle of Daikoku that we bought today at Kado-ya Sake Shop. It is said that this sake is brewed with 100% Yamada Nishiki harvested in a special area of Hyogo Prefecture. It's rich and dry. The rich taste in the mouth and the long lingering spiciness are exquisite. I think it's a very cost effective sake.

This was the first time I drank Daikoku Masamune at home. I bought it at the direct sales counter of the brewery. The aroma is mild, but the taste is fresh and fruity. It was really good even when it was heated. The reinforced concrete brewery was demolished due to old age, and a prefabricated direct sales store was built on the site, with the rest of the land used for a convenience store and Marugame Seimen noodles. The rest of the land is used for convenience stores, Marugame Seimen noodles, etc. Now they are brewing in a rented part of Hakutsuru Brewery. I have a new impression of Ehime sake 😁. I had never had much Ehime sake before, but I had an image of it being somewhat mellow and dry. This sake is completely different, it is light and slightly acidic, and together with the bitterness in the aftertaste, it is somehow like grapefruit 😊. It also has a bit of a fizzy feel and is very easy to drink as there is no unpleasant spiciness that lingers in the throat 😋. If it were a little more sour, I think I would find it too sour for me, but this level of sourness is just right 😄. I'm only one bottle away from the nationwide domination of the four-gouple bottles or more limited edition. The last one is in Osaka, when can I achieve it? 😅

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.
