[Fukui Spring New Sake Festival 10] I'm on my 10th cup of sake 😁. I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶. Unnoi Junmai Ginjo Nama Genjyo. Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste. I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This bottle was given to me as a birthday gift last year. I've been accumulating a stock of sake, so I decided to drink it slowly. It's a rare opportunity to see a bottle of sake in a tobin enclosure! It makes my heart dance ✨. When you open the bottle and pour it, you can smell a slight ginjo aroma. It is almost scentless. The mouthfeel is very clean, but the soft, milky sake quality and subtle sweetness of the rice gradually covers the tongue! The spiciness and the strength of 16% alcohol can be felt in the latter half of the bottle, but the overall flavor is moderate. I think I have not had such a clear sake since I drank the highest quality sake of "Akagisan" (12,000 yen for 720ml)! It is as pure as a gentle breeze. It quietly accompanies you from the beginning to the end. The taste is the very embodiment of "elegance. It is a good bottle to drink by itself or to enjoy as a food wine! Enjoy it carefully over the course of the day👍.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. The one I bought at the Kisegawa venue of the Shiga brewery opening event. It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice. It is better at room temperature, but it is also good on the rocks or with soda. After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass. And if you heat it up The contrast between the plumpness of the freshly cooked rice and the tangy bitterness is again delicious. I would like to try it with mackerel sushi as an entrée.

This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

☀️ I've been seeing a lot of Toyoaki lately 🧐. I'm out drinking and trying a little 😁. It's a thin nigori🤍 with a hint of rice🌾. Sweetness is pale and soft on the tongue😚. Feels super slightly carbonated, a bit like cider🫧. The flavor lingers in the mouth and has a great aftertaste 😚. The crackling and lingering taste certainly has a "fireworks 🎇" feel to it 🤗.

Second souvenir from KazKaz. It is a brand name planned and sold by 7 sake stores in Aomori. Rice used is 100% Hanasoui. The top-tasting aroma is a calm ginjo aroma. A souvenir from a business trip to Niigata. My colleague introduced me to Miyakoya and I bought it. It was a very tasty sake with the beautiful lightness and umami of Niigata. The bonito was also very nice and fatty, so it made for a good dinner.

I was drinking it on 7/1. It is aromatic, fruity, sweet from the rice, and refreshingly delicious. Niigata is a great place after all! My daughter had it with her lunch of seared nodoguro (northern bluefin tuna) 😊My daughter had it with her lunch of hegisoba (buckwheat noodles) and tarekatsu (pork cutlet with sauce) and drank it with takachiyou. Yum! She mumbled like Mr. Purgatory and only gave me a small bite 🤣.
