A brewery that specializes in aged sake serves sake made for aged sake as undiluted sake. It's been about two years since it was made, so maybe it's been sleeping in the shop? It doesn't have a nigori feeling at all. It has a certain aged feeling, but it's clearly different from the old one. It's not fruity, but it's sweet. It is not fruity but sweet. The sourness is strong and it is like a thick honey. It is sweet, but some people may feel the alcohol in the latter half is pungent.

As I recall, this was a return item from last year's Kurafan. When there is no money to buy rice for sake, the relationship of trust between the brewer and the drinker is to help each other out. Aged for more than 4 years, 70% Nipponbare rice polished to perfection The sweetness is moderate and the acidity invites warming up. Warmed up, it becomes well-balanced and full of flavor as a mealtime sake. Goes well with oily food and curry The downside is that it smells a little musty... I wonder if we can buy more expensive sake rice this year... A small sake brewery in a rural area that I don't want to see go away

Jizake Train E501 SAKIGAKE 2nd Anniversary(Yuki→Mito) We participated in an event where we could compare local sake from Ibaraki while enjoying a view of Mt. The first sake we drank was this one. It tastes like honey and has low alcohol content. My companion won this sake in a raffle held on the train! It was nice to talk with the brewery staff. The label was designed by a local Tsukuba University student with the image of this sake in mind. The label and the taste matched perfectly!

Jizake Train E501 SAKIGAKE 2nd Anniversary We went to an event where you can compare local sake from Ibaraki while looking over Mt. I was most shocked by this sake. It tasted syrupy sweet and mellow. The alcohol content was not high and I did not feel any alcohol. It was the first time for me to drink this drink and it was very tasty. I won a prize in a raffle held at the event! I am looking forward to drinking it at home! I am looking forward to drinking it at home.

The Year of the Rabbit will soon be over, so I decided to open the bottle. Time flies............................................. When the bottle is opened and poured, the aroma is full of bitterness like chocolate. The mouthfeel is surprisingly mellow and rough, and the taste is very chocolaty. The balance between sweet and astringent umami and mildness makes it seem that way, and it is a delicious taste that can only be described as chocolate ✨. It has a unique old sake taste, but I think it is one of the easiest to drink! And the aftertaste is also choco choco choco... 🍫. It was the first time for me to buy and drink it properly, but I guess it is delicious because it is from an old sake brewery! If I see it again, I'll buy it 😌.

Daruma-san is always available at my favorite izakaya that serves kusetsu-tsuyo sake 🪆. I bought it with the hope that 3 years of aging would make it a versatile player...? I bought it with high hopes 🍶. As it turns out, it's not so much a versatile sake as it is the best sake when heated lukewarm: ♨️ It has an aroma like caramelized nuts and a rich sweetness that spreads 🥜. It was perfect with gratin or anything warm and creamy in winter 🐄. I think even those who have no experience with aged sake can drink this without any resistance. I think this is a bottle that even those who have never experienced aged sake will be able to enjoy it without hesitation 🍶. I wish I could have photographed it while it was still in its colored contents 😭

After a first visit to a liquor store or a first visit to a department store to buy sake, we went to Ikoma. A customer gave him a bottle of sake😁. It's so golden in color after 3 years 😹. It seems to be aged at room temperature 😅. It's like the Notoji I drank the other day, but I think this one is more beautiful 🤔. I drank it cold, but I guess it's generally a heated type of sake, but I thought I'd rather drink it at room temperature. It's sweet but has a strong sense of maturity, so I guess it's not to everyone's taste 💦.

This is another souvenir from our trip to Tottori Shimane. It had a unique taste as well as an impactful name, and it was a hard-to-drink sake for professionals. It was amber in color like old sake, and the acidity and astringency came first. My partner said it tasted like Shaoxing wine. I have never had Shaoxing wine before.

Special sake that I got as a gift when visiting the shuzo. It is new year blended koshu released from the brewery every new year time. It blended the Daiginjo from year 1989, 2001 & 2013. Surprisingly, its still very light body - unlike other koshu which makes you too full. I like the aroma, while soy sauce and umami is significant, you can also feel the raisin, dried grapes inside. On palate it leans more towards coffee, toffee & dark chocolate. Serving hot is a good choice too.

Purchased at the HYOGO SAKE EXPO. The aroma is of aged aroma like Shaoxing wine. The hint of gunpowder-like aroma. I think it is clean and easy to drink for an aged wine. I thought it would be good to drink with fruits and sweets. The acidity is a nice accent. Perhaps because it is a daiginjo, it feels fruity even though it is an aged sake.
