National Sake Fair 2025 part69 Yamagata Prefecture 2 Matsuyama Sake Brewery in Sakata City The company name is different from Sake no Wa, but it looks like they changed the name. I've been interested in this brand since I started drinking sake, because I know many bloggers and SNS followers who drink it. Rice polishing ratio 40%, Yamagata sake brewing rice 16%, Sake degree -3.0 Acidity 1.3, 2750 yen Fruity, sweet and delicious. I wish it was available in Kansai! Looking at the list, there were many breweries in Yamagata that brought high-priced sake. We gave up after 2 breweries because we didn't have time! The rice used is Senbonishiki from Kumano in Hiroshima Prefecture. This brand is probably the first. To be honest, I didn't know about it. The person of the shop said "It comes in after two years". Kokushu fair 2025 in Osaka⑳⑳ Ibaraki Prefecture booth 10 When we say "Shirakiku" in Kansai, the image of Shirakiku Brewery of Daisen Shirakiku comes to mind, but Hirose Shoten in Ishioka City has been using the brand name of Shirakiku since 1805 when the company was founded. ◉Shirakiku Junmai Ginjo The taste is mild and mellow, with a dark sweetness. It has a complex aftertaste. According to bouken's information, it is made from rice Inochinoichi, which is a mutation of Koshihikari. I forgot to take a picture of it, so I borrowed it from bouken-san.

Polishing ratio 60%, Inochinoichi 15-16%, Sake degree -6 1925 yen I've never heard of Inochi no Ichi before 😳. It is sweet, refreshing and delicious! Shirakiku, I'd like to try many other specs, but I'll have to pouch this one to get it too...
