National Sake Fair 2025 in Osaka㉒ Ibaraki Prefecture Booth ⑫ Nomura Brewery in Joso City has experienced many difficulties, including partial destruction of the brewery in the Great East Japan Earthquake and extensive damage from the 2015 flooding of the Kinugawa River, and has been able to rebuild each time. Junmai Ginjo ◉紬美人 Junmai Ginjo The first taste is sweet and fruity, with a slightly complex finish. The toji (master brewer) is Mr. Tsutomu Umezawa, a Nanbu toji (master brewer). Mr. Umezawa trained at Asakai before joining Nomura Brewery.

National Sake Fair 2025㉓ Ibaraki Prefecture⑭ Nomura Brewery in Joso city. I thought that there would be a lot of XX beauty if I look for it 🤔. There seems to be a French restaurant attached to the brewery! I found out that the regular junmai ginjo has a more classic label. This one seems to be a modern type named "Grand", so I wonder if they are making a modern label? This sake won the Platinum Award at the 2017 KURAMASTER Sake Competition Polishing ratio 55% Yamadanishiki from Ibaraki 15.3% Sake degree +1 3000 yen Fruity and sweet but a little strange? Maybe the taste of Senhime is still in the boar's mouth😅. I forgot to take a picture, so I borrowed Nemuchi's picture.

Summer is here. Today at the Kesennuma Bonito Festival We were served free bonito nigiri at the Kesennuma Bonito Festival today. It was delicious, with a nice aroma of raw bonito and tataki sushi, and the oil on top made it tender and refreshing! Thanks to the fishermen and the festival committee members.... We were in a good mood and bought some summer sake. I was told that it is a sake to drink with a peaceful feeling, to make the earth a round place. I picked it up because it was the day I was feeling so good. It was the summer sake I wanted to drink now. It's great with steamed clams, which I bought as a souvenir. Close your eyes and let your mind become nothing. And thank you and I guess that's all I can say. The sweetness of the rice, the deep flavor, and the long aftertaste that permeates all five organs. It is a sake that makes you feel smooth and flat to the core 🍶. Maruni Boichi. This is a good sake for reconciliation and a gift for companionship. May the world be at peace.... it's okey!

100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

I bought a small bottle of Kikusui Shuzo at a nearby convenience store 🥂. It was labeled as a ginjo-shu, but the aroma was subdued and it was a delicious regular sake with just the right amount of umami 😋.

First Eagle of Koshi. Dry, clear and light. A little sweetness and acidity. The last taste is a bit bitter and lactic acidity. The impression is that it is a food sake type. Souvenirs from my husband's business trip to Fukui I have been enjoying it slowly since the weekend. I guess it is the type of drink I don't usually drink. I felt it was dry. I have no idea what other people were drinking in this shop😅. Lastly, I chose Wasshin, which I like a lot but don't see much of! I realized later that I drank at home 2 years ago💦. I felt the tea taste in the past Washin, but this time I felt it was normal light and dry 🤔. I regret that I should have had the Hanyo Hakubai that Umaisan was drinking 🙄(3rd photo) It was about 9pm, so it was time to call it a night. I arrived at the nearest station in about an hour and got sucked into I don't know what it was but I got sucked into the Ikoma Sake Shop 🤣.

Yamamori Sake Brewery in Odaka, Midori-ku, Nagoya City I think Odaka was pretty much in the city, but I see that Kuheiji and Kami no Ii are also located in Odaka 🤔. I drank Takanoyume Junmai ALL NAGOYA Nama-zake Polishing ratio 60% Yumeginko 17% Sake degree -2 Acidity 2.2 Amino acidity 1.6 FIA-2 (Aichi Prefecture yeast) 1540 yen Nama-shu, but it is colored. Slightly matured The sake's sake and acidity were not disclosed at the event, but they were listed on Jizakaya Kodama's website. It's not the same BY, so it's just for reference. Takanomusume Junmai Daiginjyo Genshu Polishing ratio 50%, Yumesansui, 16%, 3844 yen Muscat-like fruity taste. I was looking forward to drinking it because many people are drinking Takanomusume, but I wonder if it was a coincidence.
