最近は日本酒の深さを改めて感じてます♪生酒原酒やうす濁酒、山廃作り、発酵が進化する泡物、一回火通し、精米度数、等々体調や心理状態にもより変わるフルーティな味👅を家飲みで、女房の料理で楽しく研究中です。ですが年一回の生産とか限定などの謳い文句に弱く飲み過ぎ、単なる備忘録になってます。皆さんのコメントを参考にしてこれから頑張ります。私なりの飲み感を伝えて行きま〜す。宜しくお願いします🙇

Junmai Daiginjo made from Sakahomare, a sake rice developed by Fukui Prefecture. It has a fresh aroma and refined taste with little cloying flavor. The aftertaste is clean and crisp. The umami flavor is enhanced even when the temperature is raised a little. Delicious 😋.

Fresh and crisp with a hint of spring. It has a sparkling feel. It has a fresh sweetness and richness, but with a refreshing acidity. According to the sake store, Kangiku Meikozo's sake is very popular these days and sells out quickly. It is indeed easy to drink, well-balanced, and delicious 😋.

Ma Feng (Ma Bo). It has a slightly sweet aroma. While the alcohol content is a little high at 17%, it has a rich flavor unique to unfiltered sake, and is excellent to drink. Delicious.

Fruity and gorgeous aroma, robust flavor and clear taste. The balance between acidity and sweetness is good, and the aftertaste is lingering yet refreshing. You will never get tired of drinking it. It was great with kue (kelp) sashimi.

This is my first Jikin. It is fresh and fruity on the palate...it has a strong sake-like character, but it also has a good finish. You can enjoy the lingering aftertaste for a long time. It is delicious.

This sake is made from 100% Celebration Rice, which is only produced in Kyoto. The taste was full and soft, like grandchildren's rice of Yamadanishiki. Delicious.
