The label has a design of Koizumi Setsu and Shimaneko, who are the models for the NHK drama series "Bakebake" that is currently airing. The sake is said to be made from a combination of sake rice from Shimane Prefecture, which is associated with Koizumi Yakumo and Setsu, and yeast from Kumamoto Prefecture🍶. I saw it last month when I went to Matsue to get some groceries and brought it home 🚗. I bought the label 😙. I watch the drama every day and Setsu's model, Toki, is having a hard time 💦. I also bought the label when I was in Matsue last month to pick up some groceries 😙. Rice polishing ratio 55 16% alcohol by volume 100% Green Mai grown in Shimane Prefecture The top aroma is not strong, but the hint of lychee-like elegant aroma expands, and the rice flavor is centered on the umami of the rice, with a moderate acidity, bitterness, and a moderate spiciness. It is more beautiful and refreshing than the Kamisen we had the other day because it is more refined 😊.

Souvenir from Kami's friend who was visiting Matsue. Souvenirs of local sake really make me happy😙. Alcohol content 15 degrees. Mild, grain-like aroma. It has a full-bodied, caramel-like sweetness with a moderate acidity, and finishes with a spiciness. Easy to drink with little bitterness or astringency. I drank it warm, but it would also be good hot 😊. I paired it with stewed ramen noodles, but it didn't overpower the squid, pork, quail eggs, and other ingredients, making it an easy match for a mealtime drink.

I procured this sake in Fukuoka last month. I had had Wakanami sake from Wakanami Shuzo at a kaku-uchi (corner bar) in Fukuoka before, but this was my first time to try their Dragonfly series. Polishing ratio 60 Alcohol content 16%. The aroma is mild and the taste is full of rice flavor. There is a hint of sweetness, which is then tightened by a firm acidity, but it is also spicy. It's delicious. Delicious 😊. I had it with oden, and both the sake and oden went down a treat 🍢. Of course, sake alone is good too👍

Abe series black label. They changed the name of Junmai Daiginjo to GOLD from September. Since it was purchased in August, it is the old name: Junmai Daiginjo. This one was purchased at the brewery, so the preparation lot is Vol. 0, which is limited to direct sales. Polishing ratio 45 Alcohol content 13%. Koshigaraku produced in Niigata Prefecture is used. Koshigaraku is a rice suitable for sake brewing with Yamadanishiki as its parent, which was developed by Hara Shuzo, located in Kashiwazaki City, the same city as Abe Shuzo. It has a fruity, elegant and gentle sweetness with Abe-san's typical citrusy acidity, followed by bitterness and a sharp finish. Abe-san was purchased on a trip to Niigata. This one was purchased in Niigata City because the timing was such that I was still unsure about visiting the brewery. Polishing ratio 45 12% alcohol by volume +The + is due to the addition of a single distillation shochu (distillation of sake lees) by Hashira shochu brewing. Amazing 🤔. The aroma is not gorgeous, but it is delicious. The citrusy acidity is the main ingredient, and the rice flavor and sweetness are added, and it finishes with a crisp acidity. It's light and easy to drink with little bitterness, and it's very tasty both on its own and with seafood or sashimi (batou-dai this time) 😊. Today it suddenly got cold, so we went to Matsue City in Shimane Prefecture to get some ingredients for a violent seafood hot pot 🍲 with anglerfish, crab, and spear squid. But at the supermarkets in the San-in region, each is under 500 yen and anyway inexpensive.

Genzai-san has been the talk of the town in Sakegawa. I had planned to get it on my trip to the Kanto region, and I was able to get it at the Hasegawa Sake Shop in Nihonbashi 😙. Polishing ratio 50%. Alcohol content 15 100% Fukunoka from Aizu Fukunoka is the first sake brewing rice from Fukushima prefecture. When the bottle is opened, it makes a nice sound. It has a gorgeous aroma with a hint of fruitiness and a muscat-like sweetness. It also has a nice citrusy acidity and a slight bitterness that gives it a nice sharpness 😊. This is my favorite 😋. No wonder it's a hot topic. Fearless is the information network of Sake no Wa 🤔 The combination with the pork belly and radish stew was especially ummah ✨.

Sake from Sado Island that I had bought back in Niigata🍶. I had received a bottle of Maryo from a sake tasting, but now, now.... Polishing ratio 55 Alcohol content 16%. The top aroma is not strong and slightly floral, with a hint of pear-like aroma and a slight sweetness and umami that finishes with astringency and dryness. Overall, it is clear, modern and slightly dry 😊. It is a little high in alcohol content, but the ease of drinking without feeling it is dangerous 😙.

Today we celebrated our daughter's birthday a day late 🎂. We went to Itoshima to get some ingredients and celebrated with hand-rolled sushi. We also took on the challenge of acquiring a certain sake and were able to get it, but this evening we opened a bottle of Kawanakajima Genmai, which we had acquired on our trip 🍶. Polishing ratio 55 Alcohol content 15 Made with 100% Kinmon-Nishiki The aroma is not strong and relatively mild. The soft mouthfeel is boosted by a sweetness hidden in the umami, and the bitter taste and chirichiri-ness finish it off nicely. It makes good use of the alcohol additives 😄. The flavor of the fish 🐟️ and octopus (🐙) is enhanced, and the sake goes well with them anyway 😊. My dad enjoyed it more than my daughter 😙💦.

This is the second bottle of Takachiyo I had bought in Niigata. This one is Junmai Daiginjo🍶. Polishing ratio 45 Alcohol content 16%. 100% Yamadanishiki produced in Minamiuonuma The aroma is gorgeous and fruity, and the sweetness is quickly followed by a clear and dry finish. The sweetness has a richness, and the spiciness is not too strong, but it is exquisitely balanced. This is a great drink 😊. The Kanji character "Takachiyo" is also a no-brainer 🍐.

I was touring the shopping streets in Tokyo when I saw this sake 🍶 and bought it home. Polishing ratio 50%. Alcohol content 16%. 100% Gohyakumangoku The aroma is a little gorgeous ginjo aroma, and while the acidity is the main taste, the umami and sweetness of the rice can also be felt, with a well-balanced bitter taste from the acidity. It has an image of being light, but it is anything but that. It says it has been aged for 150 days, but the sense of maturity is not strong. It can be drunk as it is or with other food 😙. It is delicious 😄. I had it with bonito tataki for the entrée, and the acidity and slight sweetness brought out the umami 👍.

Kawanakajima Genmai, which I was sad to not get on the first day of my trip to Kanto and Niigata last month, was the first store I drank at. On the second day, I was able to pick him up on my way from Yokohama to Niigata Prefecture 😊. Polishing ratio 59 Alcohol content 15%. There is a slight sweetness of rice in the umami, and after the bitterness is added, it finishes crisp and clean. I had it cold at first, but on the second day, I was told that room temperature was recommended, so I had it at room temperature as well, and the umami was fuller and more flavorful 😄. The bitterness is pleasant, as I felt with the Junmai Ginjo 🍶.

The last one is Saku-san, whom I had not had a chance to meet for a long time. We finally got it 😄. Polishing ratio 60 Alcohol content 16%. It has a gorgeous aroma, sweet and juicy. It was described as slightly sparkling, but I don't know if it has been open for a long time or not, I didn't feel much gas. But it is full-bodied and delicious 😊. The downside is that the bottle is so stylish that you have to have a good sense of where to take the picture💦.

Polishing ratio 65 More than 17 degrees Celsius, less than 18 degrees Celsius It is well-balanced, mellow, and full of flavor. It is not too heavy for its alcohol content. It goes well with iburi gakko (pickled ginger). When I see a brand I'm not familiar with, I always want to try it 🍶.

At the second standing drinking place. The first Etsukaijin. I wanted to try this brand at least once. Polishing ratio 68 Alcohol content: 17 to 18 degrees Celsius 100% Akaban Omachi It has a rich, full-bodied flavor and is very satisfying to drink, including the acidity in the back end 😄. I've heard from my sake colleagues that this is a classic, timeless, robust sake 😙.

It's been a long time since I've been to Jikin. Polishing ratio 60 Hachitanishiki 80%, Yamadanishiki 20%. Alcohol content 15.5%. Compared to the previous junmai ginjo made with Tojo Yamadanishiki, this is less fruity, but the sweetness afterward is addictive and still delicious 😊. Whenever I have Jikin, it's always Tokujun. The waitress told me it was Aizan a while ago and I wanted to try it😅.
