When I was getting very drunk, one of my junior staff members told me he had never had a drink before, and I wanted him to try it. (I wanted to try it myself 💦.) Polishing ratio 45 80% Sake Mirai produced in Yamagata Prefecture The mouthfeel is soft, sweet and delicious, with a perfect balance of richness. The switch to another wine was powerful, with a pleasant aftertaste like no other. The younger member of the group said, "This is the best sake I have ever tasted. When he started the store, he could not get any sake from the liquor stores he dealt with, and it took him a long time to finally get them to allow him to sell it. It was a valuable sake that showed the personality and hard work of the owner.

No.6, there were S and R, so this time it is R-type. The rice flavor is clearly expressed, and the wooden vat gives it a feeling of being made of wood. It can be easily served as a stand-alone sake or as an in-between-dinner drink.

The third set, this is Denshogiku. Polishing ratio 50%. 100% Yamadanishiki from Hyogo Prefecture I had some Kangiku in stock at home and was going to hold off at the store, but I thought it would probably be my junior's favorite taste, so I chose it. (The stock is not Denshogiku, so no cans 💦) The mouthfeel had a good balance of sweetness and acidity, and the lingering aftertaste was nicely balanced by the chiri-chiri-chiri-chiri-gassiness. My younger colleague was also impressed with the taste. I liked it a lot too ✨.

The third set of instruments Masamune in a drinking comparison. Polishing ratio 60 100% Yume-no-Ko The first sip had a sweetness that made it easy to drink, and the glass was empty in a matter of minutes. I looked closely and realized that the low alcohol content (12%) was the reason for the sweetness, and it was hard to believe it was junmai sake. I told him that the sake lineup was too good and that it would be a shame for him to waste his money on a sake that he would not normally choose at this restaurant.

The fourth cup is Koei Kiku. Sagabiyori 100%. I was curious about this brand at Sake-no-wa. We had it at the opening of the bottle. It has an impact as if the mouthpiece is lit up, but the aftertaste is refreshing. It is easy to drink.

The third sake was Yokoyama. I was discussing with the owner about what sake to recommend to my junior staff, and he offered me a glass of Yokoyama, so I chose it because I wanted to drink it myself. Yamadanishiki 100%, Kake rice 55%, Koji rice 50%. The aroma was good. The sweetness was not as strong as Oumine's, but it was fresh, effervescent, and easy to drink. The owner offered us a new sake that was not on the menu. Such a good sake, it's foul, right?

The second bottle is Oumine. 100% Yamadanishiki, Polishing ratio 50%. A junior colleague of mine often goes to this restaurant for a drink, but since he is a beer drinker, he said he did not know what brand of sake he wanted. I ordered three kinds of sake at the same time, and he said he liked Omine the best. It is a delicious sake with a modern taste and sweetness, just as other reviewers have said. It's interesting to hear what people think when they drink it without prior knowledge 🤔.

I had to move up the schedule for a saki-no-kai because my junior colleague at work was going on childcare leave at the end of the month. The owner of the restaurant is a sports buddy of my junior colleague and I am addicted to sake, so he brought me along. We started with Shinshu Kamerei. 100% Hitogochiki from Nagano Prefecture. I wanted to try this brand after reading your review on Sake-no-wa. The aroma was fruity and pleasantly acidic, and the aftertaste was quite good without any harshness. It goes very well with two kinds of sake: Shime Zaba and Aburi (grilled).

Purchased during a recent trip to Shikoku via Awaji. There are two sake breweries on Awaji Island, and this sake is from the brewery in Awaji City (north side). It has an alcohol content of 19% and is a robust, strong sake with a punchy flavor.

The last one is Tosatsuru. I am heading to Kochi from Tokushima tomorrow, and I don't think I will be able to drink it, so I decided to give it a try. Lately, I myself have been drinking sweet Kochi sake made with Cel24 yeast, but this one was light and deliciously dry. It was the driest sake I drank today. Kochi sake is interesting in that it has two extremes of taste. I finished it with Negitoro roll and yam. The seaweed was still crispy and delicious. The price, service, and taste are all very reasonable and I will visit again when I visit Tokushima.

The third cup is Hyoho Taikoh. The reading is hisago taikou. If you can read it on the first sight, it's great. (I couldn't read it 💦). After the junmai sake, the sake was again aluzoe. It starts with umami and acidity, and is sharp and dry. It is light and dry. Motsu nabe (motsu hot pot). Soy sauce based with a strong flavor that goes well with sake 😃. It was delicious ‼️ My only regret is that I should have taken a picture before mixing it 😵.

The second drink was Awa Taikoo. This was a junmai sake. It started with the umami of rice and had a spicy aftertaste, making it a very satisfying sake. The appetizer was fried cartilage.

I went to Tokushima City via Awaji Island to celebrate the day before my wife's birthday. Since we came here at an opportune moment, we had a chance to try Tokushima's local sake. I have been drinking only junmai sake recently, but this is the first honjozo sake I have had in a long time. It has a sweet and delicious taste with a slight aftertaste. Fried scallops were served with it.

100% Sakonishiki produced in Shimane Prefecture Polishing ratio 50%. Shimane k101 yeast Sakonishiki is a sake brewing rice developed in Shimane Prefecture. The aroma is not as strong as that of Muhaku Tenshitsu, but the structure is acidity-driven, and the transition is soft like Tenshitsu, with a spicy aftertaste. Sakonishiki is said to have Yamadanishiki as its father, but I do not feel any Yamadanishiki-like flavor at all. Breed improvement is a mystery. I served it with oden (rice with vegetables) as an accompaniment to sake.

100% Yamadanishiki (produced in Hagi, Yamaguchi Prefecture) Polishing ratio 45 This is an autumn sake from the Goddess of Mercy series developed by Sumikawa Shuzo, famous for Toyo Bijin, in collaboration with Yamaguchi, a regional trading company. It has a fruity aroma, a firm sweetness, and a rich mellow taste like an autumn sake. The most surprising thing is that a four-pack bottle costs about 1,800 yen including tax. Too cosy💦. It is for those who like sweet and fruity taste. Fittingly, the wasabi is pickled in soy sauce made in Tokuchi Town, Yamaguchi City, Yamaguchi Prefecture.

Polishing ratio 50 Yamadanishiki Association 901 yeast It seems to be a brewer's challenge sake and is distributed only in Shimane Prefecture. (One supermarket in Izumo City had it, to our surprise). The aroma is subdued, with a juicy sweetness typical of Yamadanishiki, and a hint of acidity. The lingering aftertaste is very strong.

Domaine Sakura Organic Kame-no-o (produced in Sakura City, Tochigi Prefecture) Polishing ratio 90 It has a sweet aroma, but it is not too sweet and gaseous. It has a delicious taste of rice, and it is easy to drink because it has no strange spiciness or bitterness. We served it with Yose-nabe as it was getting cold. Even if there is a difference in the rice polishing ratio, a good sake really tastes good regardless of the ratio.

100% improved Omachi produced in Okuizumo, Shimane Prefecture Polishing ratio 60 Sanin Ginjo-zukuri x Tsukihaze 3-day koji ×x Additive-free raw material Yamahai making. The sake made from the combination of these three points is called Mukyutenju. The name "Omori" comes from the town of Omorimachi located in the World Heritage Iwami Ginzan Silver Mine. We walked from the Iwami Ginzan Silver Mine Park parking lot to the sake shop, but it was a longer walk than we expected. My wife, who walked with me, scolded me for walking so far and said I should have rented a bicycle💦. (I was told at the liquor store that you can drive there if you are a user of the liquor store. As for the sake, here's my review, The aroma is subdued, the mouthfeel is sour, then switches to umami, and the aftertaste is soft and fluffy. This softness seems to come from the lactic acidity. There is almost no sweetness, and it is the type of sake that is savored for its umami. It was a delicious sake and well worth the trip. The accompaniment was a grilled horse mackerel that I bought in Shimane.

This sake is made from "Strong" rice produced in Tottori Prefecture. This is the first time I have had this sake, and it seems that only breweries in Tottori Prefecture can use it. It has a ginjo aroma and is sweet and fruity on the palate. It is sweet and fruity on the palate with a full-bodied, astringent flavor that does not linger. The accompaniment was a seafood bowl with hamachi (yellowtail), sea robin, and sweet shrimp, all of which were obtained in the San'in region. The shells of the amaebi were used as dashi (soup stock) and made into miso soup. I enjoyed the destination, enjoyed buying sake and fish at the store, and enjoyed eating and drinking it when I returned home three times👍.

Kaze no Mori. It's a brand that gets a lot of attention, but I've never had the chance to try it (although there are still many brands I've never had 💦). I finally had a chance to try it. The aroma is fresh, like grapes. It is not too sweet with a gaseous taste, but rather a good sweet and sour taste. The lingering aftertaste is a nice sake. I really want to try the other series of Kaze no Mori.
