High alcohol content and very dry.
I bought this as part of a set, but I think the 2021 3-year-old brewing was a bit too long.
I can't rate it properly.

But they are all very good!
It is more umami than dry.
It is not fresh, but it seems to go well with salty dishes without interfering with them.
It is somewhere between dry and sweet.
I like to drink it when I want a change of pace.
I went all the way to Kagawa to buy it,
I would like to have a bottle in my cellar.

Made in 2021. Aged beautifully with no unpleasant taste. Mildly spicy with a strong sake flavor.
It is a royal road sake, just like the image.

Kurosawa Kame no O Junmai Ginjo Unfiltered Nama
Kurosawa Kame no O seems to be produced in Miyagi Prefecture. It seems to be grown by Mr. Kurosawa.
It has a sense of maturity, but it is not unpleasant. It has a complex taste of sweetness and grain.
Blue Bottle Junmai Ginjo Unfiltered Nama
I wonder if I didn't take a picture of it because I've had it in the past.
I borrowed Nemuchi's photo.
I heard it is light and easy to drink among the Trijin, but I still felt it was dark and sharp and had a unique character.
There was also Akaban Omachi, but I guess he didn't drink it!
I'd like to try Kaijin again!
