A souvenir from Matsue from a friend of my wife's who has a sake brewery in Matsue 🍶.
Li Bai comes from the Chinese poet Li Bai, and the anecdote of its naming is said to be quite venerable.

This sake is made from Kaminomai, Shimane Prefecture's rice suitable for sake brewing.
Kaminomai is a cross between Gohyakumangoku and Miyamanishiki, and is grown only in Shimane Prefecture.
The aroma is mild, and the mouthfeel is of rice flavor, or perhaps the flavor of rice, with a clean and dry finish.
I paired it with yazu sashimi, but Shimane sake goes well with fish in any case 😊.
