The other day, I went to Yamaguchi Kintai-bashi Bridge for a cormorant fishing trip. 🐦️
During the trip, we visited the Asahi Shuzo brewery and got a bottle of Otter Blue, which is sold exclusively in Yamaguchi Prefecture😊.
It was brewed at the Otters BLUE New York brewery, the first sake brewery outside of Japan built in Hyde Park, New York, and reimported.
It uses a blend of Yamadanishiki grown in the U.S. and Yamadanishiki from Japan.
When you uncork it, you can smell the sweet aroma of koji malt.
There is a sense of effervescence.
Pungent taste covers the tongue and bitterness is felt at the back of the tongue
