⭐⭐⭐⭐ The other day, I went to Yamaguchi Kintai-bashi Bridge for a cormorant fishing trip. 🐦️ During the trip, we visited the Asahi Shuzo brewery and got a bottle of Otter Blue, which is sold exclusively in Yamaguchi Prefecture😊. It was brewed at the Otters BLUE New York brewery, the first sake brewery outside of Japan built in Hyde Park, New York, and reimported. It uses a blend of Yamadanishiki grown in the U.S. and Yamadanishiki from Japan. When you uncork it, you can smell the sweet aroma of koji malt. There is a sense of effervescence. Pungent taste covers the tongue and bitterness is felt at the back of the tongue Dry Excellent sharpness Rice polishing ratio: 50 Alcohol content: 14 Ingredients: Rice, Rice Koji 2,000 yen/375ml at Asahi Shuzo

⭐⭐⭐⭐ If you like Hiroshima's famous sake "Amego no Tsuki", this is definitely the one to buy 👍 I was also attracted by the fact that the brewery is located on Iki, a remote island in Nagasaki 💕. I had it in a glass of wine, as recommended! The aroma is like white peaches! The first day, it has a fizzy, slightly effervescent feeling. On the second day, smooth and moist The sweetness is followed by sourness and bitterness. and then quickly fades away. Ingredients rice (domestic rice), rice malted rice (domestic rice) Rice used: 100% Yamadanishiki Polishing ratio: Kake rice 55%, Koji rice 50%. ⭐⭐⭐⭐ Hakubotan Sake Brewery is one of the oldest sake breweries in Saijo, one of the three major sake brewing areas in Japan with a history of 350 years 🎶. I've known Shirobotan since I was a child, but this is my first time to try their sake 😌. It's like old-fashioned sake! Slightly sweet rice flavor No peculiarity at all! It's not "spicy and refreshing". Sake wears off while slowly tasting the umami of the rice. Ingredients rice (domestic), rice malt (domestic) Rice polishing ratio 70%. ⭐⭐⭐⭐⭐ Anyway, I'm impressed: ‼️ The mysterious power of yeast The depth of sake I never knew that such a powerful schwash is created by the fermentation of yeast😃. The cork stopper makes a nice popping sound Fine bubbles Lightly cloudy There is a gentle sweetness from the rice, but the bubbles and dry sharpness do not leave any sweetness. But it's not just dry! I want to drink it again! Ingredients Rice (domestic), Rice malted rice (domestic) Alcohol content 11 1,100 yen/360ml at Yamanashi Meishojo direct place

⭐⭐⭐ Gorgeous fruity aroma even before you put it in your mouth 💕 The bitter taste comes at the same time as the rice flavor, and then the bitterness slowly fades away and you get a woody taste like the aroma of oak barrels 🌲. (I'm not sure if it really smells like barrels 😅) It's more dry than refreshing.
