Yamagata Sake Eikofuji Junmai Daiginjo Unfiltered Nama-zume Genshu LEAP YEAR 2024 KATSUTSU This sake can only be drunk once every four years, in a leap year. It is made by polishing Aizan to 50% and has a sake degree of -10. Eikoufuji is a great place where you can easily buy unfiltered, unpasteurized sake. Moreover, it is delicious. From the fresh aroma, the mellow taste typical of Aizan spreads and finishes with acidity. It is not only sweet but also has a good acidity. The next time I can drink it will be in 2028, and I would like to buy it again then. Degree of liking 10/10

Kochi Sake Kameizumi CEL-24 This is a sake from Kochi. This may be the first sake from Kochi. I have not had a chance to drink it because sake from western Japan is not available in Ibaraki. I bought it unexpectedly because it was sold at a liquor store where I went to buy Nozomu. It seems that the sake level varies depending on the tank, and the one I bought was -17. It is quite sweet, and CEL-24 is a yeast developed by Kochi. The aroma is quite gorgeous and is directly connected to the taste. It has a slight sourness that keeps it refreshing without being bland. While Hanamup is sweet like honey, it has a sweetness like that of a pineapple. This is delicious! It's not easy to buy, but I'll be a repeat customer. Degree of liking 10/10

Ibaraki Sake Takeyu Junmai Ginjo Yamadanishiki Takeyuu is a sake brewery located in Yuki City, Ibaraki Prefecture. Takeyuu is a sake brewery that was featured in the manga "Mijishinbo. Takeyuu is famous for its Honjozo sake, but this time it is a Junmai Ginjo sake, Black Label. It is made with Yamadanishiki and brewed with Ogawa yeast, which has low acidity. Rather than a mellow umami-kuchi, it is slightly sweet with a crisp bitterness that makes it perfect as a mid-meal drink. It is a gentle sake that does not match its name, Takeyoshi. Sake in Chiba Ocean99 Nagi Junmai Daiginjo Mild Nigori Unfiltered Nama Sake This is this year's Ocean99 Nagi. The image of this sake is the sea of Kujukuri in early spring. The sake rice has been changed from Omachi to Kitashizukushi this year. The moment I removed the plastic cover to open the bottle, the cork flew up to the ceiling. It barely didn't blow out, but I was surprised because it was the first time the cork had flown out with such force. When I poured Ocean99 Nagi into a glass, I didn't notice much of an aroma. In the mouth, it has a faint sweetness and a mild acidity that comes later. It is just like a windless ocean, with little change in taste. It is tasty, but after drinking Ocean99 Aomi, it might be a bit lacking. Degree of liking 8/10

Sake from Fukushima Hirotogawa Junmai Ginjo Omachi Hirotogawa is a very well-balanced sake. Hirotogawa Nigori Nama Sake, which is released during the year-end and New Year holidays, is famous, but the Junmai Ginjo, which is available year-round, is also very cost-effective. Hirotogawa is usually made from Fukushima Prefecture's "Yumeko" sake rice, but this sake is made from "Omachi" rice. This is a dream combination for Hirotogawa fans and Omachinists. It has the full flavor of Omachi rice and is more floral than the Junmai Ginjo from "Yume no Kaori". It is a delicious sake anyway, so if you can find it, be sure to try it. It is a pity that it is only available in four-pack bottles. Degree of liking 10/10

Tochigi Sake Hououmida BlackPhoenix Nama Shu The flagship model of our favorite Hououmida. The label is Black Phoenix. When you open the bottle, you will find a sweet aroma typical of Hououmida. When you put it in your mouth, it is a little bit hard? It does not taste very sweet. Still, it has the delicious taste of rice, and the sourness makes a sharp cut. According to other people's reviews, it is said that the sweetness increases after a few days of drinking, but I drank it in 2 days, so I could not confirm it. It has the gorgeousness of Houou Mita, but it is more elegant. I prefer the Ao version. Maybe I had higher expectations because it is the flagship model. Degree of liking 9/10

Akita Sake Hanamaru Omachi Junmai Ginjo Nama This Omachi is the most gorgeous and sweetest of all the Hanamup brands, with a fine acidity. It is sweet like a white peach, but has no unpleasant aftertaste, so you will want to drink more and more. I like Omachi the best among Hanayu. I have yet to buy a Junmai Daiginjo made with Yamada-Nishiki, so I would like to try that as well. Many people think of sake as dry, but in the past, the sweetness of second-grade sake was sticky and left a cloying taste in my mouth. Because of this, I feel that many people prefer light dry sake, but I would like people to try the mellow sweet sake made with junmai, which is also shockingly tasty. Degree of liking 10/10

Sake in Saitama, Japan Hanayuyo THE MARCH Unfiltered Nama Sake The name of this sake is gorgeous. The label is also stylish. It is made only in small quantities and has become famous as a hard-to-find sake because of its fruity taste. I was looking forward to drinking it. When I opened the bottle, I could smell the pineapple aroma even before pouring it into the glass. It was stronger than that of Kangiku, and it was like Houou Mita. It was slightly cloudy when poured into the glass. When you put it in your mouth, it is sweet and sour with more acidity than sweetness. This sweet and sour taste seems to have high potential as a food sake. It seems to go well with dishes with strong flavors. On the second day, HANA-YOUNG became less sour and much mellower. I will drink it again after a few days. I like it 8/10

Sake in Chiba Kangiku Red Diamond Aizan 50 Junmai Daiginjo Sono Kangiku is very popular for its juicy sake. The sake is made by polishing the precious Aizan up to 50%, and is available only once a year without filtration! The label is stylish. The aroma is like pineapple. The acidity from the subtle sweetness is piquant. The Kangiku Aizan I drank two days later had a mellower sweetness and acidity, and the tanginess was gone. No wonder it is so popular. Gunma Sake Machida Shuzo Junmai Ginjo 55 Yamadanishiki Machida Shuzo is a sake brewery that I often hear about these days. I happened to find a store that sold it, so I bought it. It has a sake level of -1 and an alcohol content of 16 degrees. The aroma is citrusy, with more acidity than sweet and sour. The bitterness that comes after drinking seems to go well with various dishes as a food sake. Is the strong acidity similar to that of modern Senkou? After drinking various kinds of sake, I have come to realize that I may not like sake with strong acidity and a tangy taste. Degree of liking 7/10

Ibaraki Sake Sakura Sho Junmai Daiginjo This is "Sakura Sho" made by Urasato Sake Brewery. Usually sake is made from rice dedicated to sake (Omachi or Yamadanishiki), but this sake is made from Milky Queen edible rice produced in Ami, Ibaraki Prefecture. The yeast is a flower yeast isolated from "Princess Michiko. This sake is unusual for Urasato Sake Brewery, which mainly uses Ogawa yeast. The aroma is gorgeous because of the flower yeast. It has a gentle sweetness and a sourness that comes from the sweetness. Even though it is made from edible rice, there is no cloying taste at all and it disappears nicely. It is delicious! It is a limited edition, so it is hard to find, but I hope you will try it. Degree of liking 10/10

Akita Sake Hanamaru Rikuwada Nama Sake This is Hanamup, as always. Kai-san of SakeLabo ranked it 10th on his list of hard-to-find sake, and I am happy that there is a distributor near me. This year, my goal is to complete the entire Hanamup series, so I went to buy some as soon as I checked the SNS. Hanayu is only sold in 1-sho bottles, so it's hard to store them. Sometimes they offer four-pack bottles, so I buy them when I find them. The sake rice, Rikuwada, was cultivated by the chairman of Jyushiyo, Mr. Takagi, and is grown in small quantities. It is precious. The sake level is drier than the other Hanayuup varieties, with a gorgeous sweetness that is quickly followed by a sourness. While the sourness is still in the mouth, the sweetness doubles when you take another sip of Hanayuup. It is a sake that makes you feel that it is delicious. Degree of liking 10/10

Sake from Iwate SHISORA Junmai Ginjo Hatsushibori Gohyakumangoku This is a sake from Iwate. It is a limited brand of Japanese sake launched in 2021 by Shiwa Shuzo, a brewery in Shiwa Town, and is not well known, but it is a modern sake. This sake is made with Iwate yeast "Giovanni no Chikusa" and rice "Gohyakumangoku. As a Kenji Miyazawa lover, the name "Giovanni no Chosasen" is perfect. After I bought it, I noticed that this sake was made in February 2022. It has aged quite well at the liquor store. So please use this sake's rating only as a reference. When you open the package, you will find a gentle fruit aroma. It tastes slightly sweet and sour in the mouth. The sweetness is stronger than the sourness. The yeast called "Giovanni's Research" does not seem to produce much sourness, and it may be like the "Ogawa Yeast" from Ibaraki Prefecture. It has a good mouthfeel and disappears quickly, which may be similar to Raifuku or Urasato. It is not gorgeous, but it is easy to drink because it is not alcoholic and has a gentle mouthfeel. It is delicious! Next time, I would like to try the new sake. Degree of liking 10/10

Ibaraki Sake Hikoichi Arago Unfiltered Nama This sake is made by the Tsuki no I Sake Brewery in Oarai-cho, Ibaraki Prefecture. Recently, Getsui Sake Brewery was featured on NHK (Japan Broadcasting Corporation) and became well known. All the sake rice is made in Oarai. The aroma is only slightly fresh. It is fresh, but has a traditional bitterness and alcohol taste. This is not my favorite sake. I tried heating it up with some freshly bought chirori. The freshness and the alcohol feeling disappeared, and the taste became more rounded. It seems to go well with strong flavored snacks. I was going to drink it at a camping trip with a friend who likes dry sake, but it was postponed. Too bad. Degree of liking 6/10

Niigata Sake Gagakuyo Tamahibiki This is a sake from Sado Island. The label is cool. I was interested in this sake because Tenryohai Sake Brewery was featured in DANCYU's sake book. I was interested in this sake because Tenryohai Sake Brewery was featured in a DANCYU sake book. When I drank it, I found a subtle ginjo aroma and a gentle sweetness. It has a strong acidity and is refreshing. I had been drinking Hanayu, Hououmida, and Eikoufuji, all of which have a fruity flavor, so this kind of light and refreshing sake was new to me. The alcohol content is 14.5 degrees, so it is easy to drink as a food sake. It is similar to Morishima, a sake produced in Ibaraki. It is recommended for those who prefer dry sake. Yamagata Sake Eikofuji Sake Mirai Junmai Daiginjo Unfiltered Nama-shu This is a sake from Yamagata. I can't find Eikoufuji anywhere near me, so I go to a liquor store about 50 km away to buy it. Sake Mirai is the name of the rice used to make sake, which is produced in Yamagata. There is a version made from Sake Mirai in Hanamamu as well. Eikoufuji has many versions, and most of them are made in a very labor-intensive way: unfiltered raw sake. The taste of Eikoufuji's Sake Mirai is refreshingly sweet, like strawberry, and it disappears easily without any cloying taste. Even though it has a sake level of -10 degrees, there is no dullness to the sweetness. It is light and easy to continue drinking. This is the first time I have had Eiko Fuji, and it tastes great. I would like to drink the various versions that come out each month. Degree of liking 10/10

Sake from Wakayama, Japan Kido Nigori Sake Nama Junmai Ginjo Kido's Junmai Daiginjo is a very tasty sake that can be purchased for the first half of 3,000 yen for a bottle. The fruity ginjo aroma and the delicious rice flavor are outstanding, and it disappears quickly and easily. I bought a bottle of nigorizake nama because it is my favorite sake. When I opened the bottle, it blew up if I wasn't careful. It has that much of a shwashy feeling. When I drank it, I felt the sourness and bitterness spreading through the carbonation. Huh? I don't really feel the sweetness that I felt with Kido's Daiginjo. The sweetness appears a little after the drink is over. This feeling is similar to Takeyuki's nigori sake. Other people's reviews say it is fresh, sweet and sour, so maybe my taste buds are not right. Degree of liking 7/10

Fukushima Sake Kasumi Romain Light Nigori Nama ROMAN" is a sake made from water, rice, koji, and toji all produced in Fukushima prefecture. When I drank a fire-brewed junmai ginjo before, I didn't feel so much sweetness, but this "Kasumi Romain" is very juicy and sweet. But this "Kasumi Romain" is very juicy with a strong sweetness. Yet, the lightness of the mouthfeel makes it easy to drink. The sourness that comes afterwards is also nice. I think it is similar to Ocean99, which I drank the other day. I looked it up and found out that it is the sweetest sake in the "Romain" series. It was so delicious that I would like to buy a bottle if I have room in my fridge. But I still have a lot of sake I want to buy... Degree of liking 10/10

Nagasaki Sake HIRAN Nikkomaru Unfiltered Nama This is the first Nagasaki sake. It is Hiran from Mori Sake Brewery. The first is that this sake is made not from rice specially used for sake (Yamada-Nishiki, Omachi, etc.), but from edible rice (Nikkomaru), which is eaten in Nagasaki. The second is that the sake is made using the traditional method of sake brewing that has been used since the Edo period (1603-1868), which is a very time-consuming process using lactic acid bacteria that have existed in the brewery for centuries, without the use of yeast, etc. Recently, the NHK broadcast of the Tsukishioi Sake Brewery also introduced the process of making sake using the traditional sake yeast. I would like to try Japanese moon someday. HIRAN's Nikkomaru has a grapefruit-like aroma and a lactic sweet and sour taste in the mouth. It tastes like the grapefruit flavor of Calpis. The alcohol content is 14%, so you can drink it like a juice without feeling alcohol. Wow, it's delicious! It is not easy to find it sold in many places, but if I find it, I will buy it immediately.
