Machida Shuzo Junmai Ginjo 55 Yamadanishiki
Machida Shuzo is a sake brewery that I often hear about these days. I happened to find a store that sold it, so I bought it. It has a sake level of -1 and an alcohol content of 16 degrees. The aroma is citrusy, with more acidity than sweet and sour. The bitterness that comes after drinking seems to go well with various dishes as a food sake. Is the strong acidity similar to that of modern Senkou? After drinking various kinds of sake, I have come to realize that I may not like sake with strong acidity and a tangy taste.
