Gifu Sake W (W) Yamadanishiki 45 Junmai Unfiltered Nama-shu Is this the first sake from Gifu? Sake from western Japan is not easily available in Ibaraki, so I try to buy it when I find it. I bought this sake at Hosono Shoten in Saitama. When you open the package, there is a gorgeous fruit aroma, and when you put it in your mouth, the strong sweetness goes right through. The lack of bitterness and miscellaneous tastes may be due to the 45% rice polishing rate. The taste is more pronounced than sake made with Ogawa yeast from Ibaraki. The alcohol content of 17 degrees Celsius is very good. It is extremely tasty. Degree of liking 10/10

Iwate Sake AKABU Jade This is a summer sake from AKABU, a very popular sake from Iwate. The sweet aroma is followed by a sweet and sour taste. The sweet and sour taste spreads out from the gorgeous sweet aroma, and then quickly disappears. The alcohol content is 13%, so it is very easy to drink. In fact, I drank a four-pack in one day. I wish it were easier to buy because there is no liquor store near me. Degree of liking 10/10

Sake from Tochigi Bo: Junmai Ginjo Hitogochi Unfiltered Nama Sake I wanted to compare this sake with Nozomu's Hitogochi Activated Nigori, so I bought the Unfiltered Nama Sake. Compared to the active nigori, this one has a better overall balance. The active nigori has a stronger sweetness and umami flavor. This elegant balance of Nozomu is different from Hirotogawa. Sonoike Shuzoten, which produces Nozomu, is a brewery that won first place in both the ginjo-shu and junmai-shu categories at this year's Nanbu Toji Sake Competition, the first time for a brewery to win a double award. Incidentally, the second place double winner was Urasato Shuzoten, so it was really close! We are happy to see that there are many local liquor stores that carry Nozomu. It is a sake that deserves to be more popular. Degree of liking 10/10

Sake from Tochigi Bo: Junmai Ginjyo Hitogochochi, Activated Nama Nigori This sake brewery is located in Mashiko. I bought this sake at Okada Sake Shop when I visited the Mashiko Pottery Market. They also recommended Junmai Daiginjo, but I bought this one because it is rare to buy active nigori in May. The label on the back reads The label on the back of the bottle reads, "Brewed to harmonize the umami, sweetness, and acidity of the rice, and to achieve a balance of elegant and refined citrusy fresh aroma and acidity. This is exactly what it says. This is exactly what it says, and everything is well-balanced, elegant, and delicious. It is so delicious that one wonders if this is what it would be like if Jyushiyo made nigori sake. Degree of liking 10/10

Sake from Aichi Prefecture Futato Bizen Omachi 48 Junmai Daiginjyo Nama-no-Genshu 10th Anniversary Label I bought this sake at La Jomon when I visited Yamagata. Ni-Utsuri is another sake that is not easily available in Ibaraki. It is a beautiful sake with a gorgeous aroma, sweet and sour, and disappears quickly. The balance is similar to that of AKABU. The last Wataya was also an Omachi Junmai Daiginjo, but it has a very different flavor. Wataya is more classic, while Ni-Utsu is more modern due to its acidity. Both are delicious. Liked 9/10

Sake from Miyagi Prefecture Wataya Junmai Daiginjo Omachi I got this as a birthday present for my daughter during her trip to Miyagi. Wataya is not easy to buy in Ibaraki, so I was very happy. And the price of this Junmai Daiginjo is quite reasonable even for a Shigou bottle. When I drank it, I could clearly taste the umami of rice in the clean flavor typical of Junmai Daiginjo. The lingering aftertaste disappears without a trace. It is a very elegant sake. This kind of sake is best drunk with a small sake cup and snacks. Degree of liking 9/10

Akita Sake Suitama Junmai Ginjo Unfiltered Nama-shu This sake is produced by Ryoseki Shuzo, the brewer of Hanayu. Suitama means emerald. When you drink it, the mellow aroma is followed by a light sweetness and acidity that quickly fades away. Compared to Hana Yuu, this one is lighter. Compared to other sakes, it is easy to drink and tasty, but the problem is that if you find Suiyu and Hana Yuu in a liquor store, you will buy Hana Yuu. However, Sui-yu has a four-pack bottle, so it is easy to give as a gift. Degree of liking 10/10

Sake in Chiba Kangiku Haruhi Special Yell Unfiltered Nama Sake This is a limited edition spring sake from Kangiku. The rich sweetness disappears from the gorgeous aroma without any unpleasant taste, which is just like THE KANGIKU. It is extremely delicious. I think Ocean99's Aomi will be released soon, so I am looking forward to this one as well. Degree of liking 10/10

Sake from Saitama, Japan Hana-Abi Junmai-Ginjo Hachitan-Nishiki Unfiltered Nama-Shu This is Hana-Abiko, which is not orihagara-mi. I like the color scheme of this year's Hachitan-Nishiki best among the Hana-Abiko labels. The label on the Hanahan-nishiki label does not come off cleanly, no matter how many times I tried. I think the Hachitan-nishiki is more gorgeous and less bitter than the sake Musashi I drank the other day. This Hachitan-nishiki is my favorite among the Hanahyoshis. Degree of liking 9/10

Sake from Iwate SHI-UCHU Junmai Ginjyo Unfiltered Harajuku, Activated Nigori, Polka Dot Label Last year, I had my first taste of SHI-CHU and was blown away by its deliciousness. A little while ago, the topic of Murasakiu was talked about on social networking sites as being better than Jyushiyo. It is an active nigori sake. The yeast used for Murasakiu is Giovanni no Yume, which is unique to Iwate, but I think it is similar to Yamagata yeast in that it has less acidity. The taste has a petit carbonation that makes the sweet taste refreshing. There is quite a bit more nigori lees. It is like a more refreshing version of Eiko Fuji's Shiryoh. I feel it is similar to Urasato Nigori. In short, I love the taste. I would like to drink it again next year. Degree of liking 10/10

Akita Sake Hanamaru Omachi Junmai Ginjo Namaishu Compared to last year, Hanamup has become more difficult to obtain. Even so, I bought the Omachi, which I like the most. It has an elegant sweetness like white peaches, a delicious taste of rice, and a nice bitterness after swallowing. It is still delicious. It is my favorite sake. Degree of liking 10/10

Chiba Sake Kangiku Hisashinmoku Hazy Moon Unrefined Unrefined Nama Sake This is the first Sono Shangiku sake using Fukuoka's sake rice "Jushinmu". It is also orikara! The cork did not fly open, although I was told to be careful when opening the bottle. The aroma was weak for a Kangiku sake. It has a great shwashiness. Although it is an orihara of Kangiku, it is not as sweet and delicious as Densho-Kiku, and the aftertaste is dry due to the carbonation. I also felt the same with Eikoufuji's Jyukinmu, but maybe the rice used for Jyukinmu sake is drier? Degree of liking 9/10

Fukushima Sake HIROKI Special Junmai Namazume This is a premium sake from Fukushima. At a certain liquor store, you can buy five bottles of Tobiroki on a points system. When I drank it at an izakaya, I didn't like it that much, but when I drank it at home, I could taste the beautiful rice flavor from the mildly sweet aroma. It is not a sweet-tasting sake, but rather a well-balanced sake as is typical of Fukushima sake. It has a lighter flavor than Hirotogawa. After about a week in the refrigerator, the taste has mellowed and it has become easier to drink. This is a sake that can be transformed into a good sake when served with a meal. Degree of liking 9/10

Yamagata Sake Eikoufuji Jyushinmoku Junmai Daiginjo Unfiltered Nama-shu Kotobukinmu is the name of a relatively new sake rice produced in Fukuoka Prefecture. The sake has a Sake Brix of ±0 degrees, which is unusual for Eikofuji, which often produces sweet sake. The aroma is not so rich, but when you put it in your mouth, it has a sweetness that is typical of Eikoufuji, and it disappears with the umami of the rice. As one would expect from Eikoufuji! I think it is similar to the Eikoufuji Shin that I drank before. However, I prefer Eikoufuji's sweet flavor. Degree of liking 9/10

Yamagata Sake Eikofuji Arahata Shogen Junmai Ginjo Unfiltered Nama-shu There is not much information about Eikoufuji's new series. I thought Eikoufuji only made seasonal products, but they have launched the New Arata series as a year-round product. Among them, Shogen is said to be a junmai ginjo-shu. I bought it at the Keisei Department Store in Mito. There were no other Eikoufuji seasonal products, so maybe they only carry the new series. I wish there was a Eikoufuji dealer in Mito. The taste is less sweet and more refreshing than Eikoufuji's seasonal products. It is a sake that seems to be popular with everyone, as if it has no characteristics because of that. Sake from Fukushima Hirotogawa Junmai Nigori Sake Nama Yogobottle This is the last Hirotogawa Junmai Nigori sake of the year. I will leave it until December. In the end, I drank one bottle and three bottles of Yongo. Hirotogawa has always had a good balance of sweetness, umami, acidity, and bitterness, and I think it is a sake that is liked by everyone, regardless of whether you are a dry or sweet drinker. In particular, the junmai nigori sake has a very special umami flavor. It is understandable that it is popular, but if it becomes too popular, it will be difficult to obtain. Degree of liking 10/10

Sake from Fukushima Tenmei Nakadori Sangou Junmai Oorigarami Unfiltered Nama-shu Among them, Tenmei's Nakadori series has various themes. The Nakadori Sango is "our deliciousness." When you drink it, you will find that the sweetness is just a little bit sweet and the acidity comes out after the gentle rice flavor. It goes well with sashimi. Fukushima Sake Kasumi Romain Junmai Ginjo Usu Nigori Nama-shu This sake has the sweetest taste among the Loman series. I was shocked by the taste when I drank it last year and drank other Romans, but Kasumi Romans was the most delicious. It is sweet and juicy with a fresh and complex aftertaste. I don't know if this is due to the four-stage brewing process using glutinous rice or not, but it is like making a sake with a fresh yeast yeast. I am glad I could drink it again this year. Ibaraki Sake Raifuku Junmai Namaishu (pure rice sake) Mamashi-shu This sake is produced by the Raifuku Sake Brewery in Chikusei City, Ibaraki Prefecture. Originally, Raifuku brews sake using a variety of flower yeasts, but we were unable to determine which flower yeast was used for this sake. When I drank it, I found it to be very sweet, as it is called moromi sake. It is also a perforated crown that is activated in the bottle, so it is a very lively sake with a lot of pizzazz when drunk. It is recommended for those who like sweet and tangy sake without sourness and bitterness. Degree of liking 10/10

Sake from Saitama HANAHODAKE Junmai Daiginjo Unfiltered Nama-shu Sakare Musashi This is a hard-to-find sake, Hanaoyokko. It used to be sold quietly at a local liquor store, but word has gradually spread that it is being sold, and even there it has become difficult to buy. I've had several bottles of Huayoukou, and I think it is more suited to drinking as a food sake than on its own, as it has a more subdued aroma than Houou Mita, less pineapple-like than Kameizumi CEL24, and a longer lingering bitter aftertaste. Considering the price and difficulty of obtaining it, I think Hanayuup or Hououmida would be fine. Degree of liking 8/10
