Nagano Sake Kame no Kai Junmai Ginjo Nama Yellow Label I bought this sake because I was curious about it on SNS. The aroma is very fruity. It is delicious with juicy sweetness and flavor with a mellow aroma. The aftertaste is a bit sour. It is a clear sake with no sweetness. Compared to YOKOYOMA Silver7, this one has a thicker, mellow, umami taste that I really like. Sake of Nagano is very vigorous even if I see Yamazan and Kame no Umi. Degree of liking 10/10

Nagasaki Sake YOKOYAMA SILVER7 Junmai Ginjo Hi-ire Yokoyama" is not easily available in Ibaraki, and I bought it at Hasegawa Sake Shop in Nihonbashi. Compared to the Yokoyama Goju I drank before, the sweet and tasty taste is more refreshing. I prefer it a little thicker, but this is delicious. Degree of liking 9/10

Ibaraki Sake Green Apple Raifuku Junmai Daiginjo Raifuku brews a variety of sake using flower yeast. This sake is made from green apples, but it seems to be made with sunflower flower yeast. It has a fresh aroma and a sweet and sour taste, followed by a bitter and refreshing taste. I like this one better because I feel the sweetness becomes stronger after a few days of drinking. Yamagata Sake Eikofuji Sake Mirai Junmai Daiginjo Unfiltered Nama-shu Eikoufuji Sake Mirai is a sake that I look forward to drinking every year. I was able to drink it again this year. The mellow aroma, delicious rice flavor, and elegant sweetness spread on the palate. This mellow, umakuchi taste is just right for my taste buds. If there is still stock, I want to buy a bottle and compare it with Hana Yuu and Collage's Sake Mirai. I like it 10/10

Aomori Sake Tasake Junmai Ginjo Comet This sake is made from "Comet" sake rice produced in Hokkaido. The bottle is bright red and the name "Comet" reminds me of Char from Gundam. The aroma is slightly sweet, but the taste is crisp, and it disappears quickly, just like a summer sake. It may taste even better as a food sake. Degree of liking 8/10

Sake from Tochigi SENKOKU Modern Nishiki Orikarami SENKOKU became a new sake brewer this year. I was curious about it because I like the delicate and complex taste of the sake made from the traditional sake yeast. I was careful to open the bottle because it is an orikagari, but it did not blow out. The aroma is slightly gorgeous. When I put it in my mouth, I got a sour taste and then a bitter taste. What is it? I don't really feel the flavor of rice. Even though there is a shwashiness, it does not taste very good. It might be better as a stand-alone sake or with Western-style side dishes. Degree of liking 7/10

Ibaraki Sake Gokeijo Junmai Ginjo Summer Nama Sake Gokeijo has been on my mind for a long time. This sake is made by the Aoki Sake Brewery in Furukawa City, Ibaraki Prefecture. I was interested in this sake because it has won many gold medals and is made by Mr. Yanai, the former toji (master brewer) of 寫楽. Aoki Shuzo is not a very big brewery, so it is hard to buy even in Ibaraki, but you can buy it at a local sake bar at Mito Station. The aroma is gorgeous for a summer sake. The clear sweetness and Hitanishiki flavor stand out. Sourness is a bit. There is almost no bitterness. It is similar to Nozomu (bo:), a sake from Tochigi. This is a very tasty sake that can be used all over Japan. It is gorgeous, delicate, clear and juicy. If you can find it, please do. Degree of liking 10/10

Iwate Sake SHI-UCHU Strawberry Label Junmai Ginjo Unfiltered Nama-shu This is a popular sake from Iwate recently. I enjoyed it last year, but it is getting harder and harder to find. This is the Strawberry Label of Murasakyuu. The aroma is gorgeous, as it is called "Strawberry Label. When you put it in your mouth, it has a strong sweet taste. The Iwate yeast "Giovanni no Chikara" has less acidity like Yamagata yeast and Ogawa yeast, but it has a crisp aftertaste, so there is no sweetness. It is delicious. It is a delicious sake to drink by itself rather than as a food sake. Degree of liking 10/10

Sake from Tochigi Houou Mita Mikumari THE 2nd FLY HIGH Junmai Daiginjo Nama Sake I enjoyed this sake very much last year. It has a gorgeous aroma typical of Houou Mita, and the bubbles are petite like micro carbonation. It has a light sweetness with a slight bitterness that refreshes the palate. I think it is drier than last year. It is also delicious this year. Degree of liking 10/10

Gunma Sake Tsuchida TUCHIDA 12 This is the first time for me to drink this brand. To be exact, a friend of mine brought a bottle of Tsuchida Namikawashiroshi to a camping trip, but I was too drunk to remember what it tasted like. This sake is a challenging sake with 12% alcohol by volume and 90% polished rice. It has a wild rice flavor with a hint of acidity afterwards. I didn't know such a sake existed. Amazing! Degree of liking 9/10

Sake from Tochigi Bo: Special Junmai Gohyakumangoku Unfiltered Bottle Heated I have recently been addicted to Nozomu (bo:) sake. I bought this sake because it was on sale in a bottle that was heated. Compared to Hitogokochi's unfiltered raw sake, the aroma and sweetness are generally cleaner, and the bitterness cuts through quickly. This is a sake for summer. Perfect for this time of year. Nagasaki Sake YOKOYAMA Goju Junmai Daiginjo BLACK Unfiltered Nama-shu Yokoyama Goju is hard to buy in Ibaraki. I bought it at IMADEYA in Ginza. It is a sweet and mellow sake, as it was trained at Toyo Bijin, which is a member of the Jyushidai family. From the rich sweet aroma, the sweet flavor of rice, which is typical of Junmai Daiginjo, is wonderful. After that, it is cut off without acidity and bitterness, so it is best drunk by itself in a wine glass. It is not easy to buy, but when I find it, I buy it immediately. Degree of liking 10/10

Sake in Fukushima, Japan Instrument Masamune JAM SESION Fukunoka There are not many sake shops in Ibaraki that sell Gakki Masamune, so it is very difficult to obtain it. So this is my first time to try it. Even though it is my first time, it is JAMSESION from the brewing test series. The aroma is sweet and sour. It is said to be the sweetest of all the Musical Instrument Masamune, but it has a clean sweetness compared to Eiko Fuji and Hana Yuu. It is good for a mid-meal drink because of its sourness. Yamagata Sake Bakuren Super Dry Ginjo This sake is produced by Kamenoi Shuzo, which brews Kudoki-Ue. Kudoki-Ue is a sweet-tasting sake made with Ogawa yeast, and Bakuren is a very dry sake with a Sake - +20 degrees. I usually drink only sweet sake, but I happened to find this one and bought it for the regular price of 2,420 yen. The aroma is gorgeous, as is typical of Ogawa yeast. In the mouth, the crisp umami of rice disappears without any bitterness or other unpleasant taste. It is a dry or rather refreshing sake. Speaking of dry sake made with Ogawa yeast, there is Kiri-Tsukuba dry sake, but I would like to compare them next time. Degree of liking 9/10

Sake from Saitama, Japan HANA-YOUKAKU OMACHI Junmai Daiginjo Unfiltered Nama-shu We let last year's Hana-Abi sit in the refrigerator for a year. I feel that the bitterness at the end of the bottle, which is present in other Hana-Abi, has calmed down. It seems mellower than the Hachitan-nishiki I drank before, which may be due to the fact that I let it sit in the refrigerator for a year. It might be better to separate the evaluation of HANAHEIKOU from that of ORIGARA or PREMIUM. Degree of liking 9/10

Gifu Sake W (W) Yamadanishiki 45 Junmai Unfiltered Nama-shu Is this the first sake from Gifu? Sake from western Japan is not easily available in Ibaraki, so I try to buy it when I find it. I bought this sake at Hosono Shoten in Saitama. When you open the package, there is a gorgeous fruit aroma, and when you put it in your mouth, the strong sweetness goes right through. The lack of bitterness and miscellaneous tastes may be due to the 45% rice polishing rate. The taste is more pronounced than sake made with Ogawa yeast from Ibaraki. The alcohol content of 17 degrees Celsius is very good. It is extremely tasty. Degree of liking 10/10

Iwate Sake AKABU Jade This is a summer sake from AKABU, a very popular sake from Iwate. The sweet aroma is followed by a sweet and sour taste. The sweet and sour taste spreads out from the gorgeous sweet aroma, and then quickly disappears. The alcohol content is 13%, so it is very easy to drink. In fact, I drank a four-pack in one day. I wish it were easier to buy because there is no liquor store near me. Degree of liking 10/10

Sake from Tochigi Bo: Junmai Ginjo Hitogochi Unfiltered Nama Sake I wanted to compare this sake with Nozomu's Hitogochi Activated Nigori, so I bought the Unfiltered Nama Sake. Compared to the active nigori, this one has a better overall balance. The active nigori has a stronger sweetness and umami flavor. This elegant balance of Nozomu is different from Hirotogawa. Sonoike Shuzoten, which produces Nozomu, is a brewery that won first place in both the ginjo-shu and junmai-shu categories at this year's Nanbu Toji Sake Competition, the first time for a brewery to win a double award. Incidentally, the second place double winner was Urasato Shuzoten, so it was really close! We are happy to see that there are many local liquor stores that carry Nozomu. It is a sake that deserves to be more popular. Degree of liking 10/10

Sake from Tochigi Bo: Junmai Ginjyo Hitogochochi, Activated Nama Nigori This sake brewery is located in Mashiko. I bought this sake at Okada Sake Shop when I visited the Mashiko Pottery Market. They also recommended Junmai Daiginjo, but I bought this one because it is rare to buy active nigori in May. The label on the back reads The label on the back of the bottle reads, "Brewed to harmonize the umami, sweetness, and acidity of the rice, and to achieve a balance of elegant and refined citrusy fresh aroma and acidity. This is exactly what it says. This is exactly what it says, and everything is well-balanced, elegant, and delicious. It is so delicious that one wonders if this is what it would be like if Jyushiyo made nigori sake. Degree of liking 10/10

Sake from Aichi Prefecture Futato Bizen Omachi 48 Junmai Daiginjyo Nama-no-Genshu 10th Anniversary Label I bought this sake at La Jomon when I visited Yamagata. Ni-Utsuri is another sake that is not easily available in Ibaraki. It is a beautiful sake with a gorgeous aroma, sweet and sour, and disappears quickly. The balance is similar to that of AKABU. The last Wataya was also an Omachi Junmai Daiginjo, but it has a very different flavor. Wataya is more classic, while Ni-Utsu is more modern due to its acidity. Both are delicious. Liked 9/10
