Sake in Chiba Kangiku OCEAN99 Junmai Ginjyo Aomi -Summer Sea- Unfiltered Nama-shu This is the second summer sake from Kangiku's OCEAN99 lineup. I drank the 2023 Aomi in the first half of this year and enjoyed it so much that I bought a bottle this time. It has a very juicy sweetness and a slight sourness that cuts through, just like a sake made with Ogawa yeast. The rich minerality is similar to the three grains of Omine. After all, Aomi is delicious. Degree of liking 10/10

Sake in Chiba Kangiku OCEAN99 Kukai-Inflight-Unfiltered, once-fired sake Kukai is the first summer sake in Shangiku's OCEAN99 lineup. It has a dry taste with controlled sweetness and acidity, perfect for drinking in early summer. It is too light and not very pleasant to drink. It is a summer sake, so it is probably better to be this dry. It is just right for drinking in the hot summer daytime. Degree of liking 9/10 Unsubmitted

Nara Sake Kaze no Mori - Test Brewing Sake ver.3 This is an experimental sake from Kaze no Mori. Daiginjos and such are polished to 50% or less to eliminate miscellaneous flavors, but this sake is made with almost unpolished rice from Nara Prefecture's Akitsuho, with a polishing ratio of 90%. When poured into a glass, a slightly carbonated bubble appears and the aroma is sweet and sour and thick. In the mouth, it is not as sweet as the aroma, but it has a complex and deep taste that is typical of Kaze no Mori. The rich flavor is delicious even though it is not nigori sake. This sake was made on a trial basis for next year, and we are looking forward to the future. Degree of liking 10/10

Niigata Sake Murayu Akane Junmai Ginjo Hon Nama This sake is hard to find due to the small number of bottles made. I had high expectations for this sake because I had heard that it is a Niigata sake that is not light and dry. The aroma is subtle. It is described as having an elegant sweetness like wasanbon, but perhaps because of my stupid tongue, I couldn't really taste it. It was faintly sweet and cut by sourness. It was delicious, but I didn't really like it. Liked 8/10

Sake from Saga Prefecture Nabeshima NEW MOON Shiboritate Namaishu Junmai Ginjo Nabeshima is a very popular and hard-to-find sake. I bought it because it happened to be in stock. It has a fresh aroma and a slight effervescence. The sweetness is low and the deliciousness of the rice comes through with a bang. It has a bitter aftertaste. It is better to drink it with a meal than to drink it by itself. It seems to go well with nabe (hot pot). However, it is not so easy to obtain, so I am not sure if I want it that much. I would buy it if I could find it. I saw a purple label Yamadanishiki Junmai Ginjo on sale, so I will buy it if it is available next time I go there. Degree of liking 8/10

Tochigi Sake Houou Mita Mikumari FLY HIGH Junmai Daiginjo-shu My favorite limited edition sake of Houou Mita. I drank it with everyone at the camp, but I couldn't remember what it tasted like, so I bought another bottle. Mikumari is said to be a sake brewed with Nikko gojinsui (divine water). When poured into a glass, it has a slightly carbonated, shwashy bubbling. When the bubbles burst, there was a gorgeous aroma typical of Hououmida. In the mouth, it has more acidity than sweetness, and even though it has a sake degree of -3, it has a dry taste. It can be served as a stand-alone sake or as an in-between-dinner drink. It is indeed a Hououmida. Degree of liking 10/10

Chiba Sake Kangiku True Red Yumachi 50 Orikagarami Nama-naginjo-Junmai Daiginjo This bottle was found in the back of a liquor store's refrigerator. True Red was not released this year, so this is the 2023 version. It is a precious bottle. It has a gorgeous sweet fruity aroma. When you put it in your mouth, you can taste the acidity from the sweetness that is typical of Kangiku. Elegant sweet and sourness spreads in the mouth. The mellow deliciousness is the best. Sake from Fukushima Naraman Junmai Ginjyo Namaishu Sake Mirai I have wanted to try this sake for a long time. I was interested in this sake because it is made from Sake Mirai rice, which is produced by the Takagi Shuzo brewery of Jyushiyo. There is a story that only breweries approved by Mr. Takagi are allowed to use it, but I do not know the truth. The aroma is not very strong. The taste is crisp rather than mellow. It has a faint sweetness, followed by sourness and bitterness. It doesn't seem to have much character. I don't think I will drink it again. Liked 8/10

Nagasaki Sake Asahiran Unfiltered Nama-no-Hashimoto Sake We drank it for the first time in the first half of this year and were shocked by its deliciousness. This is the summer edition of Asahiran. It is made from Asahi rice, 77% polished rice, and Association No. 7 yeast. The aroma is subtle, but when you drink it, the lactic acidic sweetness that is typical of the sake's sake making process spreads at once. It is refined even though it is made with 77% polished rice. It's so delicious. We wanted to drink another bottle, but it was sold out. We are looking forward to drinking it next year. Degree of liking 10/10

Nagano Sake Yamazan Junmai Ginjo Kinmon Nishiki Unfiltered Nama Sake Yamazan Shuzo has been talked about a lot since last year. I was curious about it, so I bought it. The aroma is not rich. The first sip gave it a gentle sweetness similar to that of Urasato, which uses Ogawa yeast. What is different from Urasato is that Yamazou has a richer rice flavor. It exudes a wildness, but disappears leaving behind a sourness. I am not sure if the wildness is due to the unfiltered raw sake or the taste of Yamasan, but I quite liked this rich rice flavor. The rice used for this sake was Kinmon-nishiki, but I would like to try other types. Degree of liking 10/10

Toyama Sake Haneya Kazumizusake Nama Sake I had been curious about Haneya for a while, and when I found out that it was sold in my neighborhood, I immediately bought it. I bought a bottle of Kasumizake, a spring sake, which happened to be left over. The aroma is gorgeous. In the mouth, there is not much sweetness, but you can taste the umami of the rice. After that, the taste of rice is cut off nicely. This sharpness seems to go well with anything as a food sake. It is a gorgeous and refreshing sake. Degree of liking 8/10

Niigata Sake Abe Summer Sake I have wanted to drink "Abe" for a long time. My daughter found it on a trip and bought it for me as a souvenir. The image of Niigata sake is light and dry, such as Kubota, but recently there have been an increasing number of modern, mellow, umami sakes such as Takachiyo and Kafuda-shu. I expected "Abe" to be like that, but it was more of a sour and slightly dry sake. I think it is similar to "Garakudai" also from Niigata. I don't know if this is only for summer sake, but I prefer "寫楽" if it is in the same 2,500 yen range. Degree of liking 7/10

Ibaraki Sake Raifuku Stag Beetle This is a collaboration product created by the president of Raifuku and YouTuber Tomi Mama, who both love stag beetles. The label features a large stag beetle. The aroma is gorgeous, just like Raifuku. The sweetness of the sake comes and goes as soon as you drink it, followed by a refreshing sourness that disappears along with the delicious flavor of the rice. The sweetness and freshness are like a summer sake. Wouldn't it be great to drink it at a campsite or BBQ? Unfortunately, not many liquor stores in my hometown of Ibaraki carry Raifuku. However, Michi no Eki Chikusei and Mito Keisei Department Store have it, so if you can find it, be sure to try it. Degree of liking 10/10

Ibaraki Sake Urasato Prototype4 Urasato Junmai Namaishige This is a test sake produced by the Urasato Sake Brewery in Ibaraki. We bought two kinds and compared them. Urasato Prototype 4 is made using a method invented in the Meiji era (1868-1912), which was later abandoned. Chikara Urasato, the brewery's toji, explains how it is made on his Instagram and X. In short, it seems to be an unusual way of making sake. In short, it seems to be an unusual way of making sake. Urasato Junmai-Namaishige is a method of making sake using the original sake yeast invented in the Edo period (1603-1868). I had high expectations for this sake, as I have recently been enjoying junmai namaisho mashike sake. Both sakes have a ripe aroma of purple grapes, with Prototype 4 having a stronger sweetness and a lower alcohol content (12%), making it easier to drink. The Junmai-Nikagashi has a similar sweetness, followed by sourness and bitterness, which comes quickly. I prefer Prototype 4, but when I drank Junmai-Nikohashi after a few days, the taste became more coherent and the sourness and bitterness mellowed out and became very tasty. I think the Junmai-Nikahashiroshi can be served hot. Conclusion: Both are delicious! Degree of liking 10/10

Fukushima Sake Nanaroman Junmai Daiginjyo, once-fired The ROMAN series by Hanazono Sake Brewery brews all of its ingredients in Fukushima. This is a summer sake from the Loman series. The aroma is sour. It has a strong sourness and bitterness rather than sweetness, so it is best drunk as a mid-meal drink. As is typical of Fukushima sake, it has a nice rice flavor that spreads in the mouth. The POP at the liquor store said it was fruity, but not as fruity as Kangiku or Eiko Fuji. I think I can drink only Kasumi Romain from the Romain series. Degree of liking 8/10

Hokkaido Sake Kamikawa Taisetsu Goryo Junmai Daiginjo This is the first sake produced in Hokkaido. I heard that this Kamikawa Taisetsu Goryo is only sold in Hakodate, but my daughter bought it as a souvenir from Karuizawa. Sake rice produced in Hokkaido is quite popular now, and many sake breweries are using it. This Goryo is also made with Hokkaido sake rice. The aroma is elegant and sweet. It has a dignified sweetness on the palate, and it disappears quickly. I think this beautiful taste is similar to the three grains of Omine. It is delicious. I would like to try other Kamikawa Daisetsu sakes, but they are hard to find. I think Seacomart sells a small bottle. If I find it, I will buy it. It has become my favorite brand. Sake from Chiba, Japan Kangiku Denshogiku Yamadanishiki 50 Junmai Daiginjo Super Limited Unfinished Nama-shu Everyone loves Denshogiku. We found last year's Denshogiku quietly left in the refrigerator of a liquor store. Of course, we bought it. I really wanted to get a bottle of Orikarami Denshogiku, but it was sold out. Let's hope for this autumn. It is an unfiltered, unpasteurized sake made from 50% Yamada-Nishiki. It has a fruity aroma, a gentle sweetness, and a delicious rice flavor. It disappears with just a hint of residual flavor. This mellow and gentle taste is just like the image on the label. I should have bought a bottle. Degree of liking 10/10

Yamagata Sake Eikofuji Aizan Junmai Daiginjo Unfiltered Nama-shu Eikoufuji produces sweet and delicious sake. This sake is made by Eikoufuji using rare sake brewing rice "Aiyama" produced in Hyogo Prefecture and polished to 50%. The sweetness and juiciness of "Aizan" combined with Eikoufuji's production process makes this sake the sweetest and most delicious sake. The sweetness is not too strong, and after the delicious taste of rice, it finishes clean and refreshing. It is really a rice juice. The juice-like flavor of "Takachiyo" is similar to rice juice, but this one has a sweet and sour taste. Both are delicious. Degree of liking 10/10

Akita Sake Hanamaru Omachi Junmai Ginjo Omachi is the most popular sake in Hanamaru. This time it is a fire-brewed sake. It has a strong fruity sweetness with a slight sourness and bitterness that complements food. It seems to be more acidic than the nama-shu, but that is probably just my imagination. It is a really good sake. Sake Mirai is also out and I must buy it. Degree of liking 10/10
