Nagano Sake Yamazan Junmai Ginjo Kinmon Nishiki Unfiltered Nama Sake Yamazan Shuzo has been talked about a lot since last year. I was curious about it, so I bought it. The aroma is not rich. The first sip gave it a gentle sweetness similar to that of Urasato, which uses Ogawa yeast. What is different from Urasato is that Yamazou has a richer rice flavor. It exudes a wildness, but disappears leaving behind a sourness. I am not sure if the wildness is due to the unfiltered raw sake or the taste of Yamasan, but I quite liked this rich rice flavor. The rice used for this sake was Kinmon-nishiki, but I would like to try other types. Degree of liking 10/10

Toyama Sake Haneya Kazumizusake Nama Sake I had been curious about Haneya for a while, and when I found out that it was sold in my neighborhood, I immediately bought it. I bought a bottle of Kasumizake, a spring sake, which happened to be left over. The aroma is gorgeous. In the mouth, there is not much sweetness, but you can taste the umami of the rice. After that, the taste of rice is cut off nicely. This sharpness seems to go well with anything as a food sake. It is a gorgeous and refreshing sake. Degree of liking 8/10

Niigata Sake Abe Summer Sake I have wanted to drink "Abe" for a long time. My daughter found it on a trip and bought it for me as a souvenir. The image of Niigata sake is light and dry, such as Kubota, but recently there have been an increasing number of modern, mellow, umami sakes such as Takachiyo and Kafuda-shu. I expected "Abe" to be like that, but it was more of a sour and slightly dry sake. I think it is similar to "Garakudai" also from Niigata. I don't know if this is only for summer sake, but I prefer "寫楽" if it is in the same 2,500 yen range. Degree of liking 7/10

Ibaraki Sake Raifuku Stag Beetle This is a collaboration product created by the president of Raifuku and YouTuber Tomi Mama, who both love stag beetles. The label features a large stag beetle. The aroma is gorgeous, just like Raifuku. The sweetness of the sake comes and goes as soon as you drink it, followed by a refreshing sourness that disappears along with the delicious flavor of the rice. The sweetness and freshness are like a summer sake. Wouldn't it be great to drink it at a campsite or BBQ? Unfortunately, not many liquor stores in my hometown of Ibaraki carry Raifuku. However, Michi no Eki Chikusei and Mito Keisei Department Store have it, so if you can find it, be sure to try it. Degree of liking 10/10

Ibaraki Sake Urasato Prototype4 Urasato Junmai Namaishige This is a test sake produced by the Urasato Sake Brewery in Ibaraki. We bought two kinds and compared them. Urasato Prototype 4 is made using a method invented in the Meiji era (1868-1912), which was later abandoned. Chikara Urasato, the brewery's toji, explains how it is made on his Instagram and X. Urasato Junmai-Namaishige is a method of making sake using the original sake yeast invented in the Edo period (1603-1868). I had high expectations for this sake, as I have recently been enjoying junmai namaisho mashike sake. Both sakes have a ripe aroma of purple grapes, with Prototype 4 having a stronger sweetness and a lower alcohol content (12%), making it easier to drink. The Junmai-Nikagashi has a similar sweetness, followed by sourness and bitterness, which comes quickly. I prefer Prototype 4, but when I drank Junmai-Nikohashi after a few days, the taste became more coherent and the sourness and bitterness mellowed out and became very tasty. I think the Junmai-Nikahashiroshi can be served hot. Conclusion: Both are delicious! Degree of liking 10/10

Fukushima Sake Nanaroman Junmai Daiginjyo, once-fired The ROMAN series by Hanazono Sake Brewery brews all of its ingredients in Fukushima. This is a summer sake from the Loman series. The aroma is sour. It has a strong sourness and bitterness rather than sweetness, so it is best drunk as a mid-meal drink. As is typical of Fukushima sake, it has a nice rice flavor that spreads in the mouth. The POP at the liquor store said it was fruity, but not as fruity as Kangiku or Eiko Fuji. I think I can drink only Kasumi Romain from the Romain series. Degree of liking 8/10

Hokkaido Sake Kamikawa Taisetsu Goryo Junmai Daiginjo This is the first sake produced in Hokkaido. I heard that this Kamikawa Taisetsu Goryo is only sold in Hakodate, but my daughter bought it as a souvenir from Karuizawa. Sake rice produced in Hokkaido is quite popular now, and many sake breweries are using it. This Goryo is also made with Hokkaido sake rice. The aroma is elegant and sweet. It has a dignified sweetness on the palate, and it disappears quickly. I think this beautiful taste is similar to the three grains of Omine. It is delicious. I would like to try other Kamikawa Daisetsu sakes, but they are hard to find. I think Seacomart sells a small bottle. If I find it, I will buy it. It has become my favorite brand. Sake from Chiba, Japan Kangiku Denshogiku Yamadanishiki 50 Junmai Daiginjo Super Limited Unfinished Nama-shu Everyone loves Denshogiku. We found last year's Denshogiku quietly left in the refrigerator of a liquor store. Of course, we bought it. I really wanted to get a bottle of Orikarami Denshogiku, but it was sold out. Let's hope for this autumn. It is an unfiltered, unpasteurized sake made from 50% Yamada-Nishiki. It has a fruity aroma, a gentle sweetness, and a delicious rice flavor. Yamagata Sake Eikofuji Aizan Junmai Daiginjo Unfiltered Nama-shu Eikoufuji produces sweet and delicious sake. This sake is made by Eikoufuji using rare sake brewing rice "Aiyama" produced in Hyogo Prefecture and polished to 50%. The sweetness and juiciness of "Aizan" combined with Eikoufuji's production process makes this sake the sweetest and most delicious sake. Sake from Gunma Ruka Hatsushiboromi Orikagarami Nama This is my first brand. I have always wanted to drink Ruka. The pink Ruka is well-known, but it had an alcohol content of 10 degrees, so I had passed over it. ←I am a sake drinker. The aroma is slight. In the mouth, it is light and has more sweetness than sourness. I think this taste is similar to the sake made with Ogawa yeast from Ibaraki. I really like this type. Nagasaki Sake HIRAN HEAVEN A second fermentation sake in the bottle with a warning label. The alcohol content is 13%, so it is very easy to drink. The label is cute and looks like stained glass. Sake from Saitama Kahayohayaka: sakekazuke Musashi Junmai Daiginjo Unfiltered Nama-shu I bought it because it happened to be on sale at a liquor store I went into. It is a popular sake that is also one of the top 10 best sake on SAKETIME. It had been sitting in the fridge for a few months and I finally had my turn to drink it. Sake Musashi is the name of sake rice produced in Saitama. The aroma is pineapple! Very aromatic. But does it taste like pineapple? Many reviews say it tastes like pineapple juice, but the acidity and bitterness come first, and it does not taste like mellow umakuchi. I wonder if it is just the sake Musashi. Hmmm... Next time, I will try Omachi. Degree of liking 7/10

Sake in Nara Kaze no Mori ALPHA1 Kaze no Mori is not easily available in Ibaraki. I bought it at IMADEYA in Ginza. I'm gradually getting to know what I like, so I don't have to explore new sake too much, but I wanted to try Kaze no Mori. However, there are still many brands I would like to try. Kamo Nishiki", "Gunma Izumi", "Wa no Tsuki", "Ryuki", "Tagaji", "Kaze no Mori", "Toyo Bijin", "Kakki Masamune", etc. The journey of exploration is not yet over. Kaze no Mori is very popular and there are many varieties. This time it was ALPHA 1, which I was very interested in because it is brewed using the Bodai yeast method. When I drank it, I found it to be slightly carbonated with a complex and deep flavor from the lactic acid bacteria. It has a fresh fruitiness. And there is a slight acidity. This is very delicious. It is the exact opposite of "light and dry" and has a grain-based sake taste. Iwate Sake AKABU Junmai Ginjo Sake Mirai This sake is made from a sake rice called Sake Mirai developed by the Jyushiyo Takagi Sake Brewery. It is a valuable sake rice that can only be used by sake breweries approved by Takagi Shuzo. This year we drank Eiko Fuji and Hanayu Sake Mirai. I would like to try Houou Mita, Isshaku Suisei, and 寫楽's Sake Mirai. AKABU's Sake Mirai has a subtle sweet aroma with a beautiful rice flavor. The spiciness that follows is sharp and clean. It is different from Eikoufuji and Hana Yuu, and the acidity and dryness are typical of AKABU. AKABU is hard to find in Ibaraki, and since there are not many stores that carry it and I can only buy it when I visit Tokyo, it is more difficult to find than 寫楽, Hana Yuu, or Hana Yokuyo in my opinion.
