Yamazan Junmai Ginjo Kinmon Nishiki Unfiltered Nama Sake
Yamazan Shuzo has been talked about a lot since last year. I was curious about it, so I bought it. The aroma is not rich. The first sip gave it a gentle sweetness similar to that of Urasato, which uses Ogawa yeast. What is different from Urasato is that Yamazou has a richer rice flavor. It exudes a wildness, but disappears leaving behind a sourness. I am not sure if the wildness is due to the unfiltered raw sake or the taste of Yamasan, but I quite liked this rich rice flavor. The rice used for this sake was Kinmon-nishiki, but I would like to try other types.
