Sake from Fukushima Keiraku Junmai Ginjo Hi-ire This time of the year, the unfiltered junmai ginjo of 寫楽 goes on sale, and I can't go out to buy it until I consume it because the rest of the refrigerated bottles are already full. I'm sure it will be sold out before I can go out and buy it. Sake is a once in a lifetime thing, so I hope I can buy it the next time I find it when my fridge is empty. But I think I'll buy Hana Yokuyo when I find it. So, here it is, 寫楽 Junmai Ginjo, once-hired. Since it is fire-aged, the overall flavor is subdued. The rice flavor and sweetness are elegant. It has more acidity than Hanayuyuu. It is delicious. You can never go wrong with 寫楽. Degree of liking 10/10

Tochigi Sake Hououmida Akaban Special Activated Nigori Hououmida is a fragrant sake from Tochigi. Among them, Aka-han is a sake that can be drunk only at the end of the year. Although it is called "active nigori," it does not have much carbonation. When the cork is opened, the aroma that opens up at once has a luxurious feel. In the mouth, the smooth flavor of rice spreads. It disappears without a trace, leaving behind no unpleasant taste. It has a mellowness that is different from Hanayuup, and is very delicious. Ibaraki Sake Raifuku Junmai Gohyakumangoku Hatsushibori Raifuku is famous for making sake with flower yeast. Of all the sake brewed in Ibaraki, Raifuku seems to be the most widely distributed in Japan. Raifuku is characterized by its rich aroma, fresh sweetness, and ease of drinking. This Hatsu Shibori is also fresh, not too sweet, and not alcoholic. It is a dangerous sake that is easy to drink. Moreover, it is extremely inexpensive, priced at 1,200 yen for a four-pack. Aomori Sake Tasake Junmai Ginjyo Nama Mild Nigori Tasake is very popular, and some stores only offer it in a package deal. This is not the case at the liquor store where I buy my sake, so I bought the last bottle of Tasake Junmai Ginjyo Nama Usu Nigori. I have had several bottles of Tasake, but I didn't have a good impression of it. I didn't expect much from the light nigori, but this was delicious. It had a fresh sweetness with a sourness that came later. When I drank about half of it, I wondered if the sweetness would increase if I let it sit for a few days. So I let it sit in the refrigerator for about 3 days. When I drank it, the sweetness was gone and the sourness was stronger. Too bad. It would have been better to open the package and drink it in a day or two. I think the atmosphere of the taste is similar to that of Takeyoshi Nigori. Degree of liking 8/10

Sake from Fukushima Hirotogawa Junmai Ginjo Nama This is my favorite Hirotogawa. Next to Hanamup, it is my second favorite sake. This year, I drank one four-pack and three one-pack bottles of Hirotogawa nigori sake alone. It was very tasty. This HIROTOGAWA Junmai Ginjo Nama also has a high level of overall balance, and each sip makes me sigh and say, "Ah, it's delicious. When just opened, it is fresh with a strong acidity, but after a day, the sweetness increases and the acidity is reduced. I think this is delicious cold as well. Unfortunately, I drank it very quickly, so now I will try it cold in a bottle. Degree of liking 10/10

Akita Sake YAMAMOTO Doujunmai Namaizu Yamamoto Sake Brewery's "Do" series. The "Do-harai" of this series was delicious, so I bought the "Dojunmai" as well. It is pure white like doburoku. I have been drinking nigori sake since the end of last year, and this one has the most lees. When you drink it, the sweet and sour taste of lactic acid bacteria spreads in your mouth. It seems to disappear without a lingering taste. This is a drinkable yogurt for adults! It is very tasty. It is one of the best 3 nigori sakes I have ever tasted. By the way, the No. 1 is "Hirotogawa Nigori Sake". Urasato Usu-nigori" was also delicious, as were "Raifuku Moromi Sake" and "Miyakanbai Origaraumi". I can't decide on the top three. This year, I have enjoyed so many delicious nigori sakes that I have not had a day off from drinking. Degree of liking 9/10

Sake in Aichi Prefecture Kunmai Daiginjo Kakunin Kuheiji has a great reputation on the Internet, but it is not sold very often in Ibaraki. I have the impression that there are few sake from western Japan, and most of them are from the Kanto and Tohoku regions. I don't see Tenbi either. I found this sake at Takashimaya in Kashiwa. I just wanted to see some sake, but the clerk came up to me and gave me the impression that he was not very friendly. My impression was that the sourness prevailed on the first day, and it became mellower from the second day. It is indeed fruity, but considering the difficulty of obtaining it, I don't think it can be a regular sake. If that were the case, I would be fine with Hououmida or Raifuku, which I can get at any time. I have heard that Ibaraki sake is largely consumed locally, and perhaps that is what local sake is supposed to be. It was even introduced on YouTube by a liquor store in Aichi as the sake that sold in 2023. I wonder if this is different when drunk at an izakaya in Aichi. I like it 8/10

Akita Sake Hanamaru Miso Nishiki Nama Sake Hanamura does not ship seasonal nigori or hiyaoroshi sake like other sake breweries, but instead offers a variety of different types of sake, mainly based on the rice used to make the sake. Last year I missed out on the Yamadanishiki Junmai Daiginjo, so this year I want to try all the varieties. The first sake rice this year is Misato Nishiki. It is a rice from Akita. The characteristics of Misato Nishiki are described as "a round, fruity aroma with a pungent aftertaste that pulls the whole thing together and balances it out. This Hanayuup Miso Nishiki also has a superb sweet flavor, followed by a fine acidity. Compared to Hanayuyuu Omachi, the sweetness is mellow and the acidity is strong. The refinement that is typical of Hanamup is the best. I really like Hanayuup after all! Degree of liking 10/10

Akita Sake Yukino Kayasha Junmai Ginjo Namaishu I have been drinking only nigori sake recently, so I wanted to try a clear sake once in a while. The taste is fresh, as is typical of nama-shu. You can feel the full flavor of the rice, but without too much sourness or bitterness. Unlike nigori sake, it has a slightly greenish taste. Yukino Kayasha's Yamahai is also delicious hot, but this one is best served cold, in a glass of chilled sake, and is best drunk in small sips. Ibaraki Sake KIRITSUKUBA Hatsu Shibori Mild Nigori Hon Nama Kiri-Tsukuba" is one of Urasato Shuzoten's two signature sake brands introduced in the last issue. This is the first pressing of the "Kiri-Tsukuba", and it is a light nigori honnagori sake. Compared to "Urasato Light Nigori", this one is more refreshing. It is less sweet than "Raifuku Moromi Sake. It has a more pleasant bitterness that cuts through quickly. I think I can recommend this to my friends who are into dry sake. Kiri-Tsukuba is gradually becoming more and more popular, and some local stores are sold out, making it difficult to purchase. Ibaraki Sake Urasato Junmai Usu Nigori Nama Urasato is a sake from Ibaraki that has recently become a hot topic on SNS and other social networking sites. It is made with rice, water, and yeast from Ibaraki, using Ogawa yeast (Association No. 10 yeast), which originated in Ibaraki. I was looking forward to drinking it this year since I could not drink it last year. The aroma is fruity and sweet. The taste is just as it should be, with no cloying taste, and it seems to disappear quickly and easily. It is similar to Raifuku Moromi Sake, but this one is richer. It is very easy to drink and can be enjoyed as an in-between-dinner drink. I finished a four-pack in one day during my New Year's vacation, so I will buy a one-pack next time. I think that Ibaraki's sake will be better known if this kind of delicious sake spreads not only in Ibaraki but also throughout the country. Degree of liking 9/10

Tochigi Sake Ona Special Junmai Nigori Nama This sake is from Tochigi Prefecture. I found out about it from SakeLabo's X. I bought it because it happened to be sold at a sake shop I usually go to. I bought it because it happened to be sold at a liquor store I usually go to. I have been drinking only nigori sake since December. I can only drink it now, so I can't help it. This sake has a sake strength of -9, but it doesn't seem so sweet. Rather, it has a strong acidity. It has a sharp sharpness to it. It is similar to Takeyuki's nigori sake. Takeyuki is more dry than sour. The sweetness of the rice can be felt, so the feeling may change after a while. As a food sake, it was great with simmered dishes! Degree of liking 8/10

Ibaraki Sake Takeyuu Special Junmai Nigori Sake Nama This nigori sake is made with Ogawa yeast from Ibaraki and Yamadanishiki from Hyogo. The aroma is not so strong, and the taste is fresh and not so sweet on the palate. It is fresh on the palate and does not have much sweetness. Sake from Wakayama, Japan RYUJINMARU Junmai Ginjo Nama-no-Hara Sake This sake was introduced in the manga "Moyashimon" and quickly became famous and difficult to obtain. Since "Moyashimon" was published in 2005, the crisis of sake has been introduced in the manga for quite some time. I was lucky to be able to purchase it because I wanted to drink it at least once when I was reading the manga. Moyashimon" was a favorite anime of my daughters, who were in elementary school at the time, and they collected many stuffed toys of Orizee and his friends. I was deeply moved to be able to drink Ryujinmaru with my daughter 18 years later. Ryujinmaru tastes very fruity, just as it is presented in the manga. Today, fruity sake is on the rise, but back then, light and dry sake was the mainstream, and sweet sake was made with a lot of additives. Sake from those days tended to be avoided because it gave people a bad hangover. Nowadays, as shown in the manga, junmai (pure rice) sake is increasingly made using traditional methods. One reason may be that more and more toji (master brewers) are graduating from Tokyo University of Agriculture. I would be happy if "Moyashimon" was the catalyst for this trend. Ibaraki Sake Raifuku mottled sake Raifuku is an Ibaraki sake. I had a previous Raifuku Pineapple that was very fruity and delicious, so I had high expectations for the Moromi Sake as well. When opened, it has a mild sweetness bursting with a slight carbonation. The texture is smooth. The sourness comes a little later, but there is no cloying taste. It is very easy to drink. When I poured it into a glass again a few days later, the carbonation was gone and the taste had changed to sweet and sour. There is no alcohol taste at all, so it is like a fruit juice. It is a mellow and soft sake, not clear and refined like Daimine Fuyu no Otoshiri. At 2,150 yen (excluding tax) for a bottle, it is a sake that I would like to drink all the time because of its excellent cost performance and the easy availability in my hometown of Ibaraki. Yamaguchi Sake Daimine 3 grains, the first sign of winter This nigori (nigori sake) is a type of sake that is twice as popular as Sengoku's snowballs. It is hard to find in Ibaraki, so I bought it at a liquor store in Okachimachi. When the screw is opened, the lees float up in the bottle and snow seems to dance. The sweetness and acidity are just right, and the beautiful umami flavor disappears quickly. It is just like snow melting. It is often called "clean sake," but this sake has no bitterness or other unpleasant tastes. Sentori tastes fresh, while Winter's Visit tastes clear. I prefer this sake to Sentori. However, considering the availability, Hirotogawa is the best nigori sake. I still have Ona nigori sake, Raifuku Moromi sake, Urasato nigori sake, and Takeyuki nigori sake in my refrigerator, so I am looking forward to comparing them. Degree of liking 9/10

Iwate Sake AKABU Junmai Sake I have wanted to try this sake for a long time. It was hard to find it in my neighborhood and I was very curious about it. I happened to find it at a supermarket and bought it. The aroma is slightly fruity. The aroma is slightly fruity, and the taste is a little sweet, followed by a pungency. It is similar to Tedorigawa. Akita Sake Yuki no Bijin Activated Nigori Akita's next5 Yuki no Bijin Activated Nigori Sake When my daughter was in Akita, I always bought Yuki no Bijin and Isshaku Suisei whenever I went to see her. I was super lucky to find a store where I could buy them in Ibaraki! This winter I'm drinking only nigori sake. It's so delicious. This Yuki no Bijin is an active nigori, which means it is fermenting in the bottle, so it is very hard to open. Even if you open it slowly, it seems to blow out. When you pour it into a glass, there is almost no aroma. In the mouth, unlike other active nigoris, there is almost no sweetness. The carbonation and alcohol taste is quite strong. It was quite dry for a muddy sake. If it is kept in the refrigerator for about two days, the carbonation is removed and the sweetness increases tremendously. Even though there is more amami, there is still quite a bit of alcohol. As a cloudy sake, it may be similar to Senkou's Yukidaruma. But it's pretty dry with just a strong carbonated can, so it doesn't have the crappy feeling of Senkou. But it's a good alternative to beer at the start of a meal.

Tochigi Sake Houou Mita Soban I have wanted to drink Hououmida for a long time. I bought it because the new Soban was released. The Hououmida Hiyoroshi that I bought before that is still unopened. I will open this one around New Year's. The aroma is as strong as its reputation. It has a stronger aroma than Hanamup. As the description says, it has a ripe muscat aroma. It tastes like ripe fruit in the mouth. The sweet and sour taste comes afterwards, and then it is cut off quickly. The fruitiness is similar to that of Raifuku's pineapple, but Hououmida has more sweetness than acidity. Raifuku's pineapple has a stronger sourness. This strong sense of mellow umakuchi is modern and popular. It has a stronger fruitiness than Senkou, even though they are both from Tochigi. I prefer this one. Degree of liking 9/10

Ishikawa Sake Tetorigawa Junmai Namaeshu Shiboritate I bought this sake at my favorite liquor store to try other sake besides Akita, Fukushima, and Ibaraki. This sake is delicious. I don't know if it tastes good because it's a raw sake, but I like it. It is similar to Kido in feel. It has sweetness and umami, with no cloying taste. It has more acidity than Kido, but it is not unpleasant. It has a sour taste, but it is mild and disappears quickly. It is delicious. I found a good sake. I am happy that I can buy it at my favorite liquor store. It might be a good idea to find a brand you like and enjoy the sake of the season. There are so many brands that I like.
