Sake from Gunma Ruka Hatsushiboromi Orikagarami Nama This is my first brand. I have always wanted to drink Ruka. The pink Ruka is well-known, but it had an alcohol content of 10 degrees, so I had passed over it. ←I am a sake drinker. The aroma is slight. In the mouth, it is light and has more sweetness than sourness. I think this taste is similar to the sake made with Ogawa yeast from Ibaraki. I really like this type. It is very easy to drink and dangerous because it is slightly sweet and light with no hint of alcohol. Degree of liking 10/10

Nagasaki Sake HIRAN HEAVEN A second fermentation sake in the bottle with a warning label. The alcohol content is 13%, so it is very easy to drink. The label is cute and looks like stained glass. The fresh aroma is followed by a slight sweetness. The fresh sourness that comes from it has no cloying taste. I don't like alcohol with a strong sour taste, but this is delicious. I drank it all at once, but I think it would be great to take it to a summer festival and drink it with ice and carbonated water. It is so popular that it keeps selling out, so maybe next year! Sake from Saitama Kahayohayaka: sakekazuke Musashi Junmai Daiginjo Unfiltered Nama-shu I bought it because it happened to be on sale at a liquor store I went into. It is a popular sake that is also one of the top 10 best sake on SAKETIME. It had been sitting in the fridge for a few months and I finally had my turn to drink it. Sake Musashi is the name of sake rice produced in Saitama. The aroma is pineapple! Very aromatic. But does it taste like pineapple? Many reviews say it tastes like pineapple juice, but the acidity and bitterness come first, and it does not taste like mellow umakuchi. I wonder if it is just the sake Musashi. Hmmm... Next time, I will try Omachi. Degree of liking 7/10

Sake in Nara Kaze no Mori ALPHA1 Kaze no Mori is not easily available in Ibaraki. I bought it at IMADEYA in Ginza. Basically, I don't want to buy sake by mail order, so I am exploring liquor stores every day. I'm gradually getting to know what I like, so I don't have to explore new sake too much, but I wanted to try Kaze no Mori. However, there are still many brands I would like to try. Kamo Nishiki", "Gunma Izumi", "Wa no Tsuki", "Ryuki", "Tagaji", "Kaze no Mori", "Toyo Bijin", "Kakki Masamune", etc. The journey of exploration is not yet over. Kaze no Mori is very popular and there are many varieties. This time it was ALPHA 1, which I was very interested in because it is brewed using the Bodai yeast method. When I drank it, I found it to be slightly carbonated with a complex and deep flavor from the lactic acid bacteria. It has a fresh fruitiness. And there is a slight acidity. This is very delicious. It is the exact opposite of "light and dry" and has a grain-based sake taste. There is another sake made with the same Bodai yeast called "Hanaboe", which is available at the liquor store I usually go to. Degree of liking 10/10

Sake from Fukushima Keiraku Junmai Ginjo Akaban Omachi Among the precious Omachi rice, this 寫楽 is made from the Akaban district of Okayama Prefecture, which is known as a brand-name sake rice. The fruit-like aroma typical of 寫楽 fully brings out the deliciousness of OMACHI. The rice flavor spreads softly with a crisp aftertaste, making it possible to drink many glasses of this sake as a mealtime drink. Iwate Sake AKABU Junmai Ginjo Sake Mirai This sake is made from a sake rice called Sake Mirai developed by the Jyushiyo Takagi Sake Brewery. It is a valuable sake rice that can only be used by sake breweries approved by Takagi Shuzo. This year we drank Eiko Fuji and Hanayu Sake Mirai. I would like to try Houou Mita, Isshaku Suisei, and 寫楽's Sake Mirai. AKABU's Sake Mirai has a subtle sweet aroma with a beautiful rice flavor. The spiciness that follows is sharp and clean. It is different from Eikoufuji and Hana Yuu, and the acidity and dryness are typical of AKABU. AKABU is hard to find in Ibaraki, and since there are not many stores that carry it and I can only buy it when I visit Tokyo, it is more difficult to find than 寫楽, Hana Yuu, or Hana Yokuyo in my opinion. In that sense, it is a valuable sake because you never know when you will be able to buy it again. Degree of liking 9/10

This sake is made with Ibaraki's Ogawa yeast and Ibaraki's Hitanishiki, a raw yeast strain. The label is written by the director of "Aubergine: Summer in Andalusia". The gentle sweetness typical of Takeyuki gives it a more acidic taste than others. It also has an alcohol content of 14 degrees, so it is easy to drink. Kochi Sake Kameizumi CEL-24 This is a sake from Kochi. This may be the first sake from Kochi. I have not had a chance to drink it because sake from western Japan is not available in Ibaraki. I bought it unexpectedly because it was sold at a liquor store where I went to buy Nozomu. It seems that the sake level varies depending on the tank, and the one I bought was -17. It is quite sweet, and CEL-24 is a yeast developed by Kochi. The aroma is quite gorgeous and is directly connected to the taste. It has a slight sourness that keeps it refreshing without being bland. While Hanamup is sweet like honey, it has a sweetness like that of a pineapple. This is delicious! It's not easy to buy, but I'll be a repeat customer. Degree of liking 10/10

Ibaraki Sake Takeyu Junmai Ginjo Yamadanishiki Takeyuu is a sake brewery located in Yuki City, Ibaraki Prefecture. Takeyuu is a sake brewery that was featured in the manga "Mijishinbo. Takeyuu is famous for its Honjozo sake, but this time it is a Junmai Ginjo sake, Black Label. It is made with Yamadanishiki and brewed with Ogawa yeast, which has low acidity. Rather than a mellow umami-kuchi, it is slightly sweet with a crisp bitterness that makes it perfect as a mid-meal drink. It is a gentle sake that does not match its name, Takeyoshi. Sake in Chiba Ocean99 Nagi Junmai Daiginjo Mild Nigori Unfiltered Nama Sake This is this year's Ocean99 Nagi. The image of this sake is the sea of Kujukuri in early spring. The sake rice has been changed from Omachi to Kitashizukushi this year. The moment I removed the plastic cover to open the bottle, the cork flew up to the ceiling. It barely didn't blow out, but I was surprised because it was the first time the cork had flown out with such force. When I poured Ocean99 Nagi into a glass, I didn't notice much of an aroma. In the mouth, it has a faint sweetness and a mild acidity that comes later. It is just like a windless ocean, with little change in taste. It is tasty, but after drinking Ocean99 Aomi, it might be a bit lacking. Degree of liking 8/10

Hirotogawa Nigori Nama Sake, which is released during the year-end and New Year holidays, is famous, but the Junmai Ginjo, which is available year-round, is also very cost-effective. Hirotogawa is usually made from Fukushima Prefecture's "Yumeko" sake rice, but this sake is made from "Omachi" rice. This is a dream combination for Hirotogawa fans and Omachinists. It has the full flavor of Omachi rice and is more floral than the Junmai Ginjo from "Yume no Kaori". It is a delicious sake anyway, so if you can find it, be sure to try it. Akita Sake Hanamaru Omachi Junmai Ginjo Nama This Omachi is the most gorgeous and sweetest of all the Hanamup brands, with a fine acidity. It is sweet like a white peach, but has no unpleasant aftertaste, so you will want to drink more and more. I like Omachi the best among Hanayu. I have yet to buy a Junmai Daiginjo made with Yamada-Nishiki, so I would like to try that as well. Many people think of sake as dry, but in the past, the sweetness of second-grade sake was sticky and left a cloying taste in my mouth. Because of this, I feel that many people prefer light dry sake, but I would like people to try the mellow sweet sake made with junmai, which is also shockingly tasty. Degree of liking 10/10

Sake in Saitama, Japan Hanayuyo THE MARCH Unfiltered Nama Sake The name of this sake is gorgeous. The label is also stylish. It is made only in small quantities and has become famous as a hard-to-find sake because of its fruity taste. I was looking forward to drinking it. When I opened the bottle, I could smell the pineapple aroma even before pouring it into the glass. It was stronger than that of Kangiku, and it was like Houou Mita. It was slightly cloudy when poured into the glass. When you put it in your mouth, it is sweet and sour with more acidity than sweetness. This sweet and sour taste seems to have high potential as a food sake. It seems to go well with dishes with strong flavors. On the second day, HANA-YOUNG became less sour and much mellower. I will drink it again after a few days. I like it 8/10

Gunma Sake Machida Shuzo Junmai Ginjo 55 Yamadanishiki Machida Shuzo is a sake brewery that I often hear about these days. I happened to find a store that sold it, so I bought it. It has a sake level of -1 and an alcohol content of 16 degrees. The aroma is citrusy, with more acidity than sweet and sour. The bitterness that comes after drinking seems to go well with various dishes as a food sake. Is the strong acidity similar to that of modern Senkou? After drinking various kinds of sake, I have come to realize that I may not like sake with strong acidity and a tangy taste. Degree of liking 7/10
