The aroma is like that of white peaches, and the rice flavor is slightly carbonated and bursting with flavor. The final taste is a refreshing burst of acidity. The aftertaste is heavier than last year. It is delicious on its own, but if you drink it while picking green Japanese pepper from Tanba, Kyoto, one by one, you will finish the 4-goupe bottle in no time. Recommended. Degree of liking 10/10

Ibaraki Sake Urasato Prototype4 I thought it was this year's Prototype 5, but it turned out to be last year's Prototype 4. I thought it was this year's Prototype 5, but it turned out to be last year's Prototype 4. Last year's Prototype 4 was very delicious with a mellow and complex flavor, so I was looking forward to drinking the new Prototype 4. I heard that Prototype 4 made with acid base sake yeast does not change much over time, but it seemed more acidic than the last year's sake. Sake of Saga Prefecture Koei Kiku SNOW CRESCENT As the name suggests, it is a nigori sake that looks like snow. The bubbles bursting with a lactic acidic complex flavor can be felt. What is even more intense is the refreshing acidity. This acidity is similar to that of Senkou, which is made from a traditional sake yeast yeast yeast. I prefer a little more sweetness. Sake from Chiba, Japan Denshogiku Junmai Daiginjo Yamadanishiki 50 Unfiltered Nama-shu This is the clear type of Denshogiku. If Denshogiku Oorigarami is like a fully ripe strawberry, the clear type is like a freshly picked strawberry. The sweet and tasty type is the same, but this one is clearer and more refreshing. Both are delicious, but I prefer the Origarami. Degree of liking 10/10

Ibaraki Sake Urasato Junmai Light Nigori Urasato Light Nigori is becoming more and more popular every year. A local liquor store said that it has been selling very well since its release. This popularity may be real. When the bottle is opened, it has a soft aroma reminiscent of melon and banana. In the mouth, the moderate sweetness and acidity are in good balance, and the slight effervescence is pleasant. It is very easy to drink with a crisp aftertaste. I finished the four-pack in no time. Sake in Chiba Denshogiku Junmai Daiginjo Orikigarami Unfiltered Nama Sake I look forward to this Denshogiku every year. The bottle was chilled at -5 degrees Celsius for about a week, so the cork didn't pop. It has a gorgeous aroma, a juicy sweet pineapple-like flavor, and a silky fresh mouthfeel with a slight carbonation. It has a rich flavor but with a nice cut on the aftertaste. I also like Denshogiku that has been left for a few days to mellow out. So I buy it in a bottle and enjoy the change in flavor. Degree of liking 10/10

Sake from Tochigi Sake Sake] "SUMIDA Super Limited Jungin Unfiltered Nama Sake This is a beautiful sake with a high degree of perfection befitting a super-limited edition. It has a gorgeous aroma of peach and melon, rich fruitiness, and layers of umami. The acidity sharply tightens the aftertaste and the balance is exquisite. This complex flavor may be produced by blending seven different types of sake brewed with six different types of sake rice. It is not so sweet because it has a sake degree of -1 degree, but it is well-balanced, so you can drink it easily. Sake in Chiba Ocean99 Toukai Unfiltered Unrefined Uncured Sake This is an autumn sake from Sono Kangiku's Ocean99. Unlike the summer sake, it is once-filtered. Yet, it has a nice piquancy to it. It has a sweet and sour taste with a bit of bitterness that is not found in other Ocean99. My favorite order is Hoshikai > Aokkai > Orangekai. Degree of liking 9/10

Sake in Chiba Ocean99 Aomi Unfiltered Nama Sake This is a series of summer sake from Sono Shangiku. I missed out on buying Kukai, so I finally bought Aokai, Hoshikai, and Orchokai through mail order. The recent popularity of Sono Shangiku is amazing. Aomi is a fresh, sweet and sour sake with a nice sharp taste that reminds me of early summer. It has a low alcohol content and is crisp, so it is like a white wine. I think it might be good with ice and carbonated water. I will try it next year. Degree of liking 10/10

Ibaraki Sake Gokeijo Junmai Ginjo Hiyoroshi The Gokeijo summer nama-zake was so juicy and delicious that I bought a bottle of hiyaoroshi as well. When poured into a glass, it has a gorgeous aroma and a full flavor and sweetness. There is a slight gassy sensation, and the taste is refreshing and juicy. The moderate acidity balances the wine and leaves a refreshing aftertaste. It has a melon-like ripe fruitiness and a delicious rice flavor. As the temperature rises after pouring into a glass, the aroma becomes stronger and you want to keep smelling it. The Aoki Sake Brewery's website says it tastes good at room temperature, so I will buy another bottle to check it out. Degree of liking 10/10
