It seems to be a local sake only available in Ruyoku. Sou with Hana Sou🌾🍶. I got the bottom of the bottle which is light nigori 😊. The top aroma is a slightly gorgeous sweet aroma. When you put it in your mouth, you can feel the mild sweetness that is typical of Hana Sou🌾, but you can also feel a slight spiciness that asserts Nyozora, and it quickly cools down. I wonder if Hachinohe Sake Brewery separates the Hachitsuru and Jyozora by their sweet and umami tastes and their dry tastes, respectively. I've had a variety of sake, but that's roughly how I feel about them 🤔. I'd like to try a freshly opened bottle sometime. It was pretty good 🍶✨️

This is a one year old 5BY Shinshu Kamerei Miyamanishiki (🙄) given to me by my boss. The top nose has a slight hint of maturity with a hint of hiney. Subtle aroma like a step before caramel 🤔. In the mouth, the gassiness is gone, but the chili-chili-chili-chili-chili-chili-chili-chili-chili acidity is still there. The taste is mildly sweet and delicious with good flavor. According to @Mizuhashi-san, a Shinshu Kamerei nakasekashi, it is easy to get a sense of hine when aged for a long time 🤔. By the way, this year, Shinshu Kamerei's 1sho bottles are now fire-aged, is that something to be concerned about? I would like to ask the brewer 🤔. I'm a well-trained businessman, so I told my boss it was delicious ✨😇

It's been 2 years since I've been to Momoten🍑. I wonder what that toji-san is doing now 🙄. The top aroma is of steamed rice. In the mouth, it has a slightly carbonated pizzazz🫧. Fresh, juicy sweetness and a hint of sourness. It was quite delicious ✨🍶.

This is the first time for Kariho. The sake was bottled by selecting a particularly dry lot. The first aroma is slightly sweet. When you put it in your mouth, it has a hard dry taste. The sweetness is moderate, but the umami is strong. It is a beautiful sake without the bitterness and other unpleasant tastes that are often found in fully fermented sake. It was delicious.

This sake bears the name of Hato Masamune's toji, Ki Sato. This is the newest sake from Sato Koshi, made with Masugura🌾. When we drank it last July, it was delicious and full of flavor! The initial aroma is slightly mellow and sweet. It has a gentle sweetness and richness like light brown sugar in the mouth. It is similar to the sake sold last year in collaboration with Hasegawa Sake Shop. This one tastes a little more intense and is fresh because it is a fresh sake, though. It is tasty enough, but I think I prefer to drink it after it has had a little more time to develop its flavor 😂. Thanks chika 😆. It was delicious 🕊️✨️

Yamamoto🍶 brewed with Akita Sake Komachi🌾 and No.6 yeast from Shinsei The aroma on the nose is slightly sweet. When you put it in your mouth, you can feel the youthfulness of freshly brewed sake. And then there is a refreshing sweetness with a hint of sourness. It may be a self-serving assumption to say that it is made with yeast No. 6, but I felt it was very Shinsei-like. If you ask me which Shinsei it resembles, I can't answer. It was quite drinkable and quite tasty 🍶✨️ No. 7 will be on the menu soon 😊.

It is Nabeshima's Gohyakumangoku🌾🍶. The master was eager to put Nabeshima on the menu this year, so we will be able to drink a variety of Nabeshama this year. The top aroma is fresh and sweet. It has been a long time since I have been to Kawanakajima Genmai 🍶. When I asked the master about the word "aged" on the menu, he told me that it was written as a warning because of the aged aroma. The top aroma has a slight matured aroma. It has a sweet aroma that is one step short of caramel. When you put it in your mouth, it tastes sweet and delicious like Genmai, and there is no problem with the taste. According to the master, the brewery has always had a tendency to produce aged aroma when the temperature is high (manufactured in August 2024). It may be a characteristic of the brewery 🤔. It was delicious ✨

Jyushidai Oorigarami Hon Nama 🍶. This is the first time to drink orikagarami, but also the first time to drink Jyushidai's sake on draft. The aroma on the nose is faintly sweet with a hint of freshness from the unpasteurized sake. In the mouth, there is a slight tangy freshness of new sake on the tip of the tongue. It has a fresh sweetness, but it is refreshing for a Jyushidai. In the aftertaste, I felt a bit of dry spiciness that is often found in orikara and nigori (nigori) nama-shu at this time of the year. According to the master, it was quite dry and did not have much sweetness as soon as it was opened. I guess it is a matter of taste, but if I were to go to the trouble of drinking Jyushiyo, I would have liked to drink a sweeter version. Sogape's Riasake Naturel Tenjinbara🥂. They use Miyamanishiki🌾 produced in the Tenjinbara area of Takayama Village, next to Obuse town. This one was also freshly ripened for about 10 months. The aroma on the nose is soft and sweet with white wine-like acidity. In the mouth, it tastes like cork or wood. The taste has clear acidity and a beautiful sweetness with a hint of cane sugar. The taste is finished off with a slight astringency. It was the second most beautiful taste after No.6 Normal and No.3. It was delicious ✨🥂.

It's OCEAN99 from Kangiku 🍶. It's been 2 years since I drank this. The top aroma is mildly sweet with a hint of nigori. When you put it in your mouth, it has a mild juicy sweetness with freshness and a slightly carbonated pizzazz 🫧. Two years ago it felt quite tangy and dry, but I don't know if it's because it's been open for a while or if it's a winning lot, but I finally got to drink a delicious Kangiku 😊🍶.

It is Akaban Omachi🍶 of Kaiun. The master's restaurant often has Kaiun on the menu, so I drink it from time to time. This is the first time for Hizen Kurashin. Sake from Kashima City, Saga Prefecture, the same city as Nabeshima🍶. It has a fresh, sweet aroma with a modest top note. In the mouth, it is dry with a Sake meter value of +10, but it is well-balanced with a light sweetness and a full-bodied umami flavor. It has a nice sharpness and is quite tasty. ✨️

This is Yamamoto Pure Black Nama Sake 🍶. This is the first time to drink Nama Sake. The top aroma is slightly sweet like honey. The aroma is less intense than that of the previous Hanaoyokyu, but it is more gorgeous than that of the Pure Black Hi-New. In the mouth, it is clear and mildly sweet with a hint of banana🍌 flavor. I think the aroma is pulling me in, but I also feel a stronger sweetness compared to the fire-brewed version. It was delicious 🍶✨️ Yamamoto needs to release more draft sake for seasonal products, not for year-round products 🤔.

It's a nigori of hana-yoku 🍶. I wanted to drink this 😊. The top aroma is a gorgeous sweet aroma with a hint of nigori milky flavor 🍍. It is slightly carbonated and soft in the mouth 🫧. The milky nigori flavor is combined with a mellow pineapple flavor, a true creamy pineapple 🍍. The carbonation is chili with a slight astringency that gives it a kick. I like it better than the clear sake Hana-yoso 😘. I wonder if they could serve a nigori for each sake rice. It was delicious ✨🍍.

2020 BY🍶 of chivalry This is the first time I've ever laid down a bottle of Gikyo. The aroma is modest and sweet on the nose. The taste in the mouth is calm and sweet with a refreshing sweetness. I had an image that Yamada-Nishiki's was full-bodied and sweet, but this one is dry 🤔. I wonder if I should have heated it up 🤔. The third and fourth pictures are from the Gikyo brewery I visited last fall. I asked a lot of questions to the lady at the store and she said "I don't know much about it..." so I left early 😅.
