The top aroma is soft and sweet in both cases.
By this point, I was too drunk to understand the subtle differences.
In the mouth, the Daiginjo has a mildly sweet flavor with a clean finish.
The Junmai Daiginjo is extremely mildly sweet and delicious.
It is indeed a 40% polished Junmai Daiginjo.
The Daiginjyo had a clean aftertaste, perhaps due to the fact that it was alkalooseted.
You have to look at the label on the back of the bottle to see that it is aluzoe, though.

The fifth drink (two on the left) and sixth drink (two on the right) are a comparison of Kinjaku's autumn rise 2024 and 2025: 🐦️
The top aroma is sweet with a hint of acidity in both.
Maybe it's because I'm drunk, but I don't notice much difference in the aroma.
In the mouth, both have a mildly sweet flavor, but the 2024 has more depth and is tastier.
If you have ever had Kinjaku, you would know that it has a light flavor while still having a good drinking experience, so even though it is an Aki-agari, you don't feel it is too heavy.

The fourth cup was Kinjaku's Lore Yamahai Zozo.
The top aroma is slightly sweet.
In the mouth, it has a mild sweetness with a hint of acidity.
Compared to the other Kinjaku, this one had a richer flavor and the sweetness was the best.
This Yamahai was highly rated among the participants at the drinking comparison event.

The third cup is Kinjaku's Secret Hidden Nama Hashiro.
The first aroma is sweet with a hint of pineapple candy.
In the mouth, there is a soft acidity from the sake yeast and sweetness from the pineapple candy.
It has a rich and mellow taste as well as the Yamahai which we will drink next among the Kinjaku.

The second glass is Kinjaku Junmai Ginjo 50 🐦️
The first aroma is slightly sweet.
When you put it in your mouth, you can feel a slight gasiness.
Clear sweetness with a hint of acidity.

I know this is back to back, but the weekend before last, I participated in a Kinjaku 8-sake drinking contest 😊.
We started with Kinjaku's only raw sake.
The first aroma is slightly sweet.

The balance between the refreshing sweetness and sourness is exquisite.
I could understand why it is so popular.

It is a four-stage rice-insertion over-prepared sake from Raku no sei.
We had the first sip 🍶.
The first aroma is sweet with a hint of ripeness.
When you put it in your mouth, it has a full-bodied, deep sweetness.
Very sweet and thick 😂.
When I drank it 2 years ago, I was astonished by its rich sweetness like syrup from a pineapple can, but this year, I don't feel much acidity or pineapple flavor due to the strong sweetness.
Maybe it's because it was a mouth opener? 🤔

It seems that this sake was designed to go well with oysters, and is brewed with white wine yeast.

We started off with a light spring sake, SAKURA🌸.
The cherry blossoms in Tokyo are at their best but the temperature during the day was about 7℃... 😵(24℃ the day before 😅) I wonder if people are still viewing the cherry blossoms 🤔.

The color is like potassium. I wonder if it is unfiltered.

I thought it was different from what I expected, but it was interesting to see the difference in taste.
