Sake made with malic acid yeast🍶.
The top aroma is mildly sweet.
The balance between the subtle umami and the fresh sourness of malic acid in the mouth is very pleasing 🥰.
It is a calm sake that is typical of Sakuta.
I am not a fan of watery sake, but I personally think it is a legitimate food sake that hits the edge of that line and has enough umami to not interfere with the meal 😌.
Not the latest fad, lol.
