When I went to the restroom and came back, I lost them and had a drink at the Aomori booth because it was a waste of time.
Hachinohe Sake Brewery Co. in Hachinohe City has two manufacturing plants, and their representative brands are Hachitsuru and Nyokaku. The Hachitsuru Plant in Hachinohe City makes Hachitsuru, and the Goto Plant in Goto-machi, Sanno-gun makes Nyoku.
◉Hachihatsuru Junmai Ginjo
A sweet and delicious sake, with a slight richness. It has a slightly mellow taste.
You can find Nyozora at Yamaya, but I don't think I've ever seen Hakutsuru.

It seems that Hakutsuru is basically only wholesaled to Aomori, and outside of the prefecture, they serve Nyozora first.
The Hakutsuru is delicious with the TSURU label of the raw sake and the one wrapped in newspaper.

This is the first Hwaso with the TURU label.
We had the first sip 🍶.
The first aroma is slightly sweet.
In the mouth, it has the full-bodied sweetness and umami that is typical of Hwasoi🌾 with a slight acidity that finishes off the taste.
It was delicious 🍶✨️

This is Hakutsuru's summer Junmai.
Sake made with malic acid high-producing yeast🍶.
The aroma is slightly sweet on the nose.
In the mouth, it has a mild sweetness with a hint of malic acidity.
The acidity of the malic acid is not too assertive, like Fuji apples🍎.
It was refreshing and delicious🍶✨️
Hachitsuru 2024 Early Summer Limited Edition Special Junmai Sake [Hachinohe Sake Brewery, Aomori].
The mouthfeel is apple-like, with a hint of sourness and sweetness. A lingering astringent taste and a sense of alcohol.
Ingredients: rice (domestic), rice malt (domestic)
Rice polishing ratio: 60
Alcohol content: 17%.
Delicious 😋.
The sweetness and bitterness balance each other out, and there is almost no sourness.
For me, I feel an astringency that I don't usually feel.
It's a new and interesting sensation for me! ✌️
It is arabashiri from Hakutsuru.
Sake brewed with No. 10 yeast and Hanafuki🌾🍶.
Hakutsuru is said to be one of the first breweries to brew sake with No. 10 yeast. It is said that Hakutsuru is one of the first breweries to brew sake with No. 10 yeast.
The first aroma is a fresh sweet aroma that is typical of new sake.
In the mouth, it has a freshness that is more youthful than the roughness of new sake.
It has a refreshing sweetness with a slight sourness and astringency that gives it a nice sharpness.
There's enough tingling and pain in the mouth this time of year, but I personally prefer it calmed down this much.
I think Hakutsuru is still delicious 😋.
I drank it with sushi and it was perfect.

The other vine labels are sweeter, so if you want to drink it by itself or pair it with something stronger like roasted bara 🤔.
Junmai Ginjo 🍶 Unfiltered Nama Sake✨
A little stronger aroma. You can feel the acidity. Strong and thick 😆 but not harsh. Sweet and sour. The Sanriku octopus (🐙) softens the strong sweetness. When served in a flat bowl, the sweetness is diluted and it turns into a beautiful sake✨The character is reduced but it's easy to drink👍.

Hachitsuru" purchased at a liquor store in Hachinohe on a business trip.
We opened the bottle at a sake party at the end of the year.
As one would expect from a local sake from Aomori, it matched perfectly with the tuna sashimi, and the taste was unintentionally delicious. It has a rich, sweet taste with a refreshing aftertaste, making it very easy to drink. I found myself downing it in the blink of an eye.
It is a wonderful sake that shows off Aomori's nature and sake brewing techniques. I would definitely like to repeat this experience.
