Tosa Rei by Bunkajin. Tosa Rei seems to be a recently registered variety of sake rice🌾. The initial aroma is mellow and sweet with a hint of acidity. In the mouth, there is a hint of acidity and a juicy sweetness that is typical of Bunkajin. It seems to have been fired once, but it was fresh and gorgeous and quite delicious 🍶✨️

Urasato's Junmai Namaisake🍶. The nose has a sweet aroma typical of Ogawa yeast with a hint of melon🍈. In the mouth, there is a juicy sweetness with a slight acidity. It finishes with a slight astringency. After about 3 days after opening the bottle, the melon aroma and taste both increase and it becomes sweet and juicy 😊. It was delicious🍈✨️

Kikunoi no Hisa◯🙆‍♂️ This is Hanafuki🌾 sake 🍶. The one we drank last October was delicious with a lot of flavor. The first aroma is slightly sweet. Tsugaru Peninsula, sold only at 5 liquor stores in Aomori City. I guess you could say it's Ozaki Brewery's version of sake made from the same Hana-Soi🌾 as Shichiriki🙄. I got the first sip 🍶. The first aroma is slightly sweet. The first aroma is slightly sweet, with a hint of acidity and clear sweetness in the mouth. It finishes with a slight astringency. Maybe it's because it's a bit hard 🤔. I can't feel the goodness of Hwaso very much. Thank you for the food: ✨️

I had just started drinking a bottle of Jyoppari Hi-iri that I had bought at the Aomori Kitasaikan in Iidabashi, and then I saw a notice at Ringo no Hana in Arakicho that they had some new Jyoppari draft sake in stock, so I hurried to compare them 😆 (sake kuzu). First, I tried the hi-ire at home 🍶. The first aroma is a slight acidity and sweetness of rice. It is quite dry on the palate. The taste is a little sweet with a hint of acidity. It finishes with a slight bitterness. It is like a calm sake that has been fire-aged. Then, we went to Ringo no Hana and had a glass of nama-shu (raw sake). The first aroma is slightly acidic and sweet with a hint of rice. When you put it in your mouth, it has a slight acidity and a light sweetness. The slight astringent taste gives it a sharp finish. The sweet aroma is a little stronger in the nama-shu, so you can feel the sweetness. If you want to drink it on its own, it might be the nama-shu, but I felt that both were food sake. This is a 50th anniversary commemorative bottle of sake, exclusive to the famous 7-Eleven Tsudanuma store, which is famous for having a lot of sake on hand. The proprietress asked a customer who lives in Tsudanuma to buy it for her. The top aroma is fruity and sweet. When you put it in your mouth, it has a juicy, fruity sweetness with a hint of sourness. I would like to visit Tsudanuma Seven once 🤔. It was quite delicious ✨🍶.

It is a new sake from Takacho 🍶. The first aroma is sweet and sour with a richness that is typical of Bodai yeast. It has a slight caramel taste in the mouth. It has a full-bodied, dark sweetness and a good acidity. Compared to two years ago, this year's sake is a little lighter, but I think it has become more beautiful and easier to drink. Like Mimuro Sugi's Bodai Hashimoto 🤔. It was delicious 🍶✨️

It is Junmai Daiginjo from Ajigasawa 🍶. I remember hearing from the brewer that Ajigasawa is a wholesaler's PB... 🤔. The first aroma is a faint sweet aroma of rice. When you put it in your mouth, it has a moderate sweetness and a slight astringency. It is a little bit hard. The proprietress said the special junmai from the same Ajigasawa was delicious 🙄.

Koueikiku's Ikumochi 2022BY brewed with natural lactic acid bacteria 🍶. I opened it once last autumn because I heard it was better to let it sit for a while, but the balance was not good, so I kept it in the fridge for another half year 😅. The first aroma is sweet with a hint of acidity, which is typical of natural lactobacillus brewing (Yamahai). When you taste it in your mouth, it has a full-bodied sweet and sour aroma that is typical of Yamahai. However, it is not that heavy like Koei Kiku. It was quite delicious 🍶✨️

This is a new sake from Miyoshikiku. The color looks like aged sake, but it is said to be R6BY sake😅. The top aroma is sweet and sour apple? It is a bit sweet and sour. In the mouth it has a sweet and sour taste like a mellow apple vinegar sour. Interesting but detailed specs unknown🤔. It was quite tasty 🥹🫶.

There is still a bit of the youthfulness of new sake 😊. Juicy sweetness with a hint of sourness that finishes with a kick. It was delicious🍶✨️

I have again attended a Raku-no-Se meeting. This is Raku-no-Se's new product, Omachi. The fourth step has been changed from fukunohana🌾 to omachi🌾. It will be on sale as soon as the label is ready. It was served at room temperature 🍶. The first aroma is sweet with a hint of acidity. The palate has a hint of acidity accompanied by a rich umami flavor. The third step is Yamadanishiki and the fourth step is Omachi, so the umami is even more intense 🤔. I thought it would be interesting if it was aged at room temperature since there is a good amount of acidity. The second photo is the sake we drank 🍶. The third photo is President Murase Although Raku-no-Sei does not disclose the specifications, Mr. Murase told me that Junmai sake basically has an acidity of 3 or higher, and Honjozo sake has an acidity of around 2.7 because it is diluted by the addition of alcohol. We also had a lot of fun talking about sake brewing and other topics 😊.

Yamahai Junmai Natural Akita Cedar Wood Oke Brewed with Association No.1 Yeast from this time and the amount of information is Osugi 😂. I got the first sip 🍶. The first aroma is slightly sweet like honey. The first aroma is slightly sweet like honey, and the second aroma is juicy sweetness with a refreshing aftertaste like Yamamoto's.
