There is a bar near where I was staying called "Digital Denen Sake Bar Kanmasu" that has a sake dispenser that reads a QR code. I forgot to go to the brewery because it is located a little far from downtown Aizuwakamatsu 😅I had a soft dry junmai sake from Hanaharu 🍶. The first aroma is slightly sweet. It has a soft sweetness and umami in the mouth. It has a nice sharpness and is perfect for a leisurely evening drink. It was delicious.

This is the times of Otokoyama Sake Brewery in Aizu Misato-cho, which resumed sake brewing in 2020 after 20 years. Don't mind the old lady in the back here too 😑. The initial aroma is slightly fruity and sweet. When you put it in your mouth, it has a light, juicy sweetness with a slight sourness that is refreshingly clean. It was refreshing and delicious 🍶✨️ The third one is Otokoyama Shuzo brewery in Aizu Misato-cho. It is a short 10-minute walk from the Shirai Sake Brewery of the Wind Blows. I won't post a photo, but there was a collapsed building that I think is no longer in use😅. The fourth picture is the mountains of the Aizu Highlands seen from the Miya River flowing through Aizu Misato-cho: ⛰️

Standing drink at a different restaurant. Tatsumi label Black from Tatsumi Sake Brewery 🐲. I blurred out the image, but please don't mind the lady in the back 😑. The first aroma is slightly sweet. The first aroma is slightly sweet, and in the mouth it has a mild full-bodied flavor with a hint of acidity. The aftertaste is light and crisp. It has a good balance of sweet and sour. It was delicious 🍶✨️ The third picture is of the Tatsuizumi brewery in a residential area of Aizuwakamatsu. It is located a couple of minutes away from Yamaguchi Gomei Kaisha. The fourth picture is Uekiya Shoten, a famous liquor store along with Watanabe Sota Shoten, located in Sakae-machi, downtown Aizuwakamatsu. Six sake breweries in downtown Aizuwakamatsu are located within a 1 km radius around Uekiya.

@Shujusai Tianmi Satsu roman of Hanaizumi Sake Brewery in Minami Aizu. You need a car to get there 😅. A bit hard for me with a paper gold license lol The first aroma is slightly sweet. It has a calm and beautiful sweetness with a clean aftertaste. It was quite delicious 🍶. The third and fourth pictures are from the sake corner of a local supermarket, Riondor, in Aizu Sakashita. It's hard to find a supermarket in Tokyo that stocks this much sake 🤔. By the way, Eikawa Sake Brewery is now a subsidiary of Riondor.

@Shujusai Tianmi Shirai Sake Brewery winds up 🤧. Slightly fresh sweet aroma on the top. Slightly sweet and delicious on the palate. Slight bitterness and a sense of sharpness. More like dry 🤔. It was delicious 🍶. The third one is Shirai Sake Brewery in Aizu Misato-cho, located in the southwestern part of the Aizu Basin. It takes less than one hour by bus from Aizuwakamatsu city. Without the "Bandaiho" sign on the telephone pole in the upper right corner of the photo, it would look like a local farmhouse 😂. The fourth picture is a stone statue of Nankobo Tenkai, a famous aide to Tokugawa Ieyasu. Aizu Misato Town is said to be Tenkai's birthplace.

@Shujusai Tianmi Suehiro's Yamahai Junmai🍶. Suehiro Sake Brewery is the originator of Yamahai brewing. I love Yamahai, but I had no idea. 🙂‍↕️ The first aroma is sweet with a hint of lactic acidity. In the mouth, the acidity is modest, but there is a complex flavor of Yamahai. I think the Jungin Yamahai I drank at the Suehiro brewery tour was better😅. The third picture shows the brewery of Suehiro Sake Brewery, which is a 5-minute walk from our accommodation in Aizuwakamatsu. The brewery allows visitors to tour the brewery once an hour, so I jumped in on the day of the tour. Currently, most of the brewing is done at the doctoral brewery in Aizu Misato-cho, and only a limited amount of sake is made there.

@Shujusai Tianmi Aizu Musume Harumadori. They say this sake is made from pesticide-free, fertilizer-free Gohyakumangoku. The initial aroma is mildly sweet. In the mouth, it has a beautiful sweetness and umami that is typical of Gohyakumangoku. The calmness of the first flame was very nice. It was delicious 🍶✨️

@Shujusai Tianmi Aizu Ryugasawa🐉 at Eikawa Sake Brewery I didn't go to the brewery, but I heard that Egawa Sake Brewery has a history of moving their brewery from Aizu Wakamatsu city to near Bandaisan for better water...who told me that 🤔? The first aroma is slightly sweet. When you put it in your mouth, it has a light and clear sweetness with a hint of sourness. It is refreshing as a summer sake. It was delicious. ✨️

@Shujusai Tianmi Sasama Samune's Jungin Hiroshima Senbon Nishiki. The nose has a gentle but sweet aroma. The palate is smooth with a moderate sweetness and a mild umami. It is very light and goes well with everything. It was delicious ✨🍶. The fourth picture is the Sasamasamune brewery, which is about 20 minutes away by renting a bicycle in front of the Kitakata station. It was located in a village a little far from the city of Kitakata.

The second day in Aizu, we went to Sake-na Tenmi for a drink. I made a reservation in advance because I heard it was recommended by Mr. Muro. Incidentally, I was chatting with two women who were sitting next to me at the counter at the sake bar where I had been drinking the day before, and I found out that both of them worked at Tenjiki, which made me realize how interesting the relationship between sake is 😊. The first glass was Mine no Yuki Junmai 🍶. The aroma on the nose is slightly sweet and calm. It is a bit ripe on the palate, but full-bodied, sweet and delicious. It was quite delicious 🍶. The third picture is of the Mine-no-snow brewery in Kitakata. I had a short chat with the sales clerk, who told me that Mine-no-Snow was the first brewery in Japan to make mead, and that they have recently been making a mead made by fermenting honey with sake yeast.

@cup_cup_place The last brewery I visited at Saihatsurakujo was Gihei of Yamaguchi Gomei Kaisha, the oldest brewery in Aizu. To be precise, it is the newest brewery since it was abandoned and reopened 🤔. The first aroma is slightly sweet. When you put it in your mouth, it has a beautiful sweetness with a hint of sourness. It was refreshing, sharp and delicious 🍶✨️ The fourth picture is the brewery of Yamaguchi Gomei Kaisha. It was a small brewery in a residential area.

@cup_cup_place O's Peach Label H30BY🍑. Ao is sometimes seen at Sake-no-wa. It is a PB of Gonoi Sake Brewery in Aizu Sakashita and is brewed by Akebono Sake Brewery who is well known for Tenmei. The initial aroma is sweet with a slightly ripe, caramelized flavor. In the mouth, it has a mild sweetness with a slight withered nuance. It is a beautiful sake for a fast brewing 30BY. It was quite delicious. The third picture shows the Akebono brewery in Aizu Sakashita. The fourth picture is Gonoi Sake Brewery located next to Akebono Shuzo. In Aizu Sakashita, Hiroki Brewery, Akebono Brewery, and Toyokuni Brewery are all located within a 100-meter radius around Gonoi Brewery.

@cup_cup_place Sharaku's summer gin light nigori 🎐. The first aroma is slightly sweet with a hint of rice. In the mouth, there is a light sweetness and a slight umami of rice. It is refreshing like a summer sake. It was delicious 🍶✨️ The third and fourth pictures are of Miyazumi Meizumi brewery in the center of Aizuwakamatsu city. There were 3 bottles of Miyazumi lined up for free tasting 🍶. As one would expect from a profitable brewery 😌.

@cup_cup_place This is a comparison of 2024 and 2025 Aizu Musume Jungin Oumachi 🍶. The 2024 is full of mellow omachi flavor. The 2025 was chirpy and fresh, but both were delicious 🍶✨️ The third one is Takahashi Shosaku Sake Brewery in the south of the Aizu Basin. It was located in the middle of a rural area on the edge of the fan-shaped Agan River that flows through the Aizu Basin. The Agano River flows from south to north through the Aizu Basin and enters Niigata Prefecture, where it is renamed the Agano River and empties into the Sea of Japan. So the Aizu Basin is on the Sea of Japan side in terms of watershed 🤔.

The ocean in Fukushima and Ibaraki on the Pacific side is cold due to the ocean currents. When I was in junior high school, I lived in Ibaraki and went swimming in the sea, but my lips turned purple in 30 minutes lol. I don't know much about the Sea of Japan side though😅.

@cup_cup_place Izumikawa, a local brand of HIROKI This is my first time to drink Izumikawa. The first aroma is slightly sweet. It has a light and mild sweetness on the palate, but it is more refreshing than Tobiroki. It is delicious 🍶. The third picture is the Hiroki Sake Brewery's main store, which we visited the next day. It was located in the center of Aizu Sakashita. It was a surprisingly small sake brewery, although it was deep.

I had a long weekend off, so I went on a trip to Aizu 😊. After arriving in Aizuwakamatsu, we visited Watanabe Sota Shoten in front of the station and had a quick drink at Hairan Sho, which we had reserved 🍶. Tenmei's Tokyo Seibai 🍚. This sake is made from Kitakata-grown Yamadanishiki rice that has been polished by a professional rice-polisher in Tokyo so that it does not need polishing. The initial aroma is of slightly cooked rice. In the mouth, it is a clear sake that is hard to believe it is 87%. It has a subtle sweetness and umami, with a slight acidity that finishes off the taste. It is a dry sake with a moderate sweetness, perfect for a mealtime drink. It was delicious 🍶✨️ The first photo is of the master, Kazu. He was a very fun master with a great spirit of service 😊. The third picture is Watanabe Sota Shoten. I was going to ask to be included in Sota's back hump group that Muro-san is in, but I decided not to since I am a first-time customer 😌.

Special Unblended Sake of Tasake, limited to Imanaya. I let it sit for about 6 months 😌. The first aroma is slightly mellow and sweet. When you put it in your mouth, it has a mild sweetness with a hint of acidity. It has a light aftertaste, as is typical of Hanafukuyuki sake. Although it is a pure sake, it is only 1 degree higher than regular Tokujun at 17 degrees, so it may be a little thicker than this year's Tokujun 🤔It may just be my imagination lol. But still, this year's Tasake Tokujun is well-balanced and delicious 😊. Last year I felt it was a bit sweeter, but personally I like this balance of this year's.

I asked about the "Mai-Bijin" on the menu and was told that there were 9 kinds in total, so I asked for 4 kinds to compare in order of their perversity 🫶 😆. From left to right... Mai-bijin MYVY MYVY🫶 with sake lees re-fermentation, shipped in October 2023. It had a color like soy sauce 🤭. I had the same MYVY 2 years ago and it was a bit more transparent 😅. But it seemed more flavorful and mellow than 2 years ago. Mai-bijin mizu-hashiroshi MUKU As Nemuchi-san drank the other day, the top aroma is of matured cheese 😂. The moment it is poured into a cup, it smells like a big bubbly 😅. When you put it in your mouth, you can feel the gas. It has a refreshing acidity and a mild umami flavor. The aroma is not what it smells like, but the taste is delicious. Bottom of tank Slight aroma of cooked rice. The taste is mellow lees with a sense of exhaustion. I guess I didn't feel the weirdness that is typical of Mai-Bijin🫶. Mai-bijin Jun-Dai, aged at room temperature for a long time, H27BY It is said to cost about 5,000 yen. It has a sweet aroma with a faint scent of old chests. The taste is elegant and dry, as it is Jun Dai. MYVY was good, but I think MUKU (mizu-hashiroku) was the best one 😂🫶.

花巴のSODA POP🥤🍿 去年から随分とオシャレな瓶になってますね。 上立ち香は乳酸の酸を感じる微かに甘い香り。 口に含むと強めだけど爽やかな酸にさっぱりジューシーな甘味。 酸好きの方にオススメですね🫶 なかなか美味しかったです✨🍶

It is a Jungin Nama Hashiroshi from Morinori 🍶. I had been wanting to visit a restaurant that I had seen retweeted on Twitter (X) by Ijima Sake Brewery, which is patronized by bouken (Mr. Ijima's wholesaler), so I went and had a drink at the restaurant. The first aroma was sweet with a hint of acidity. When I put it in my mouth, I felt a gas. It has a slight acidity from the sake yeast and a beautiful sweetness that is typical of jungin. Compared to Morinori's Kami-Sen, this Junmai-Ginjo is very elegant. It was quite delicious 🍶✨️
