This is my first time to read "Kita no Katsu". It's called "Kitano Katsu" 🙄. I had it with cold sake 🍶. The first aroma is slightly sweet like light brown sugar. It has a thick, sweet flavor on the palate with a clean aftertaste as if it were aluzoe. It is similar to Morinori's Kami-Sen from Hyogo or Sankou Hinokuchi Asashibori from Okayama. I can't refer to them because they are all minor sakes 😂. It was delicious 🍶✨️

Koikuma-san, this is my first time 🧸. I knew the name of the brewery, but the name of the brewery was changed from Aruga Brewery to Niu Brewery from the 6BY. I looked it up and found out that it was a sake brewed by a couple of hired brewers who rented equipment while helping the brewery. I had it with a cold nigori sake from Koikuma. The initial aroma was of steamed rice with a hint of acidity. In the mouth, it has a youthful tanginess. It has a milky mouthfeel with a slight bitterness and a hint of sweetness. It was a little dry. It was delicious 🧸🍶.

It's a chrysanthemum aisan in cold chrysanthemum 🍶. The aroma is sweet, which is typical of Kangiku. It may be a brewer's peculiarity, but you can tell it's a Kangiku by the aroma. When you put it in your mouth, you can taste a slight chilli. The beautiful sweetness and acidity that is typical of Aizan and the richness that is typical of Kangiku are well-balanced without being too refined. I guess it is a matter of taste. It was delicious 🍶✨️

Banshu Issen Spring Sake🌸 This one is said to be a four-stage brewing process. It was served cold 🍶. The first aroma is slightly sweet. It has a slightly sweet aroma on the top nose and a gaseous feeling in the mouth. It has a juicy sweet flavor with a hint of acidity that finishes off the taste. I couldn't really tell the difference because Banshu Issen is juicy sweet and tasty even if it's not a 4-step brewing process 🍶✨️😅

This is Tamagawa's untouched sake Gohyakumangoku. This is the first time for us to serve untouched sake. The aroma is of slightly cooked rice with a hint of acidity. In the mouth, it has a mellow sweet and sour taste, but since the sake rice is Gohyakumangoku, it is not as deep as Tamagawa's. Last year, I drank a limited edition Nakakumi (Kitanishiki🌾), which had a rich mellow sweet and sour taste with a smooth texture. I want to buy it 🤔 It was good to drink it at room temperature or warmed up. It was delicious 🍶✨️

The other day we had Yamamoto with No.6 yeast, and this time we had Yamamoto brewed with Akita Sake Komachi🌾 with No.7 yeast, which was given to us by Ippaku Suisei. We had the first sip 🍶. The first aroma is soft and sweet. When you put it in your mouth, you can feel the ultra-fine carbonation on the tip of your tongue. It has a slight sweetness and a full-bodied flavor. I personally prefer the No. 6, although it was just opened and felt a bit hard. I prefer No. 7 for Yamahai and Namahashi sake, though. But still, Yamamoto's sake is very good. It was delicious 🍶✨️

Shinshu Kamerei Hitogokochi. This year, the bottle is fire-aged 🤔. The top aroma is still modest compared to that of the raw sake. It has a slightly sweet aroma. When you put it in your mouth, the tip of your tongue will get a little bit chili chili. Juicy sweetness and a hint of sourness. It finishes with a slight astringency. The taste is not bad, but the aroma is important. Shinshu Kamerei is not the type of sake for eating 🤔. The master said, "The price will be a bit higher, but I think I'll buy a bottle of raw sake... 😌.

New brand of Koshinohomare "Nishiki". There are many gorgeous fruity sakes, so they are often on the menu at the master's restaurant. The initial aroma is softly fruity and sweet. This is the first time for Kurosho Senjo 🍶. It is a spring sake with a picture of Okojo on it. This is a Takato sake, isn't it? The aroma on the nose is fresh, dark, and sweet. When you put it in your mouth, it has a slightly carbonated and sizzling aroma. It has a juicy sweet flavor with a slight astringency that finishes off the taste. The aroma is sweet, so it feels even sweeter, but the sharpness is not bad. It was quite tasty 🍶✨️

Sato Ubei 🍶 which is only available in Akita prefecture. I think this is my first time to drink it. The top aroma is slightly sweet. The mouthfeel is juicy, sweet, acidic, and full-bodied. The alcohol content is 14%, which is like sake. It's very drinkable and delicious 😋. I like it better than Niimasa 😘lol

It's numeroan 2024 in Sogape 🥂. I wonder what Sogape will be like this year😊. The top aroma is slightly sweet with white wine-like acidity. In the mouth it has a refreshing sweetness and mild acidity. I drank last year's Numeroan more than half a year after it was released, so I can't make a simple comparison, but the acidity and sweetness are a bit subdued and refreshing. It tastes good enough even if you don't let it sit 🤔. I wonder if I should put it to sleep 🤔

Nyoku no shirouma🫏. Sake made with Hua Moui🌾🍶. The top aroma is slightly sweet with a hint of rice. In the mouth, it has the roughness of new sake. It has a hint of sweetness and sharp acidity. The spiciness is sharp and finishes off with a kick. It is a little dry and dry like Jyozora. Shirouma (a kind of white rice) is good!

Nyoku's #MUROKA Junmai Sake This one is also limited to Aomori. Sake made with Hanafuki🌾🍶. The aroma is sweet and reserved on the nose. When you put it in your mouth, you can taste the soft umami of rice with a hint of sweetness. It is a dry sake with a nice sharpness typical of Aomori. Delicious ✨.

It seems to be a local sake only available in Ruyoku. Sou with Hana Sou🌾🍶. I got the bottom of the bottle which is light nigori 😊. The top aroma is a slightly gorgeous sweet aroma. When you put it in your mouth, you can feel the mild sweetness that is typical of Hana Sou🌾, but you can also feel a slight spiciness that asserts Nyozora, and it quickly cools down. I wonder if Hachinohe Sake Brewery separates the Hachitsuru and Jyozora by their sweet and umami tastes and their dry tastes, respectively. I've had a variety of sake, but that's roughly how I feel about them 🤔. I'd like to try a freshly opened bottle sometime. It was pretty good 🍶✨️

This is a one year old 5BY Shinshu Kamerei Miyamanishiki (🙄) given to me by my boss. The top nose has a slight hint of maturity with a hint of hiney. Subtle aroma like a step before caramel 🤔. In the mouth, the gassiness is gone, but the chili-chili-chili-chili-chili-chili-chili-chili-chili acidity is still there. The taste is mildly sweet and delicious with good flavor. According to @Mizuhashi-san, a Shinshu Kamerei nakasekashi, it is easy to get a sense of hine when aged for a long time 🤔. By the way, this year, Shinshu Kamerei's 1sho bottles are now fire-aged, is that something to be concerned about? I would like to ask the brewer 🤔. I'm a well-trained businessman, so I told my boss it was delicious ✨😇

This is the first time for Kariho. The sake was bottled by selecting a particularly dry lot. The first aroma is slightly sweet. When you put it in your mouth, it has a hard dry taste. The sweetness is moderate, but the umami is strong. It is a beautiful sake without the bitterness and other unpleasant tastes that are often found in fully fermented sake. It was delicious.
