It's been a long time since we've had Wakamusume. And it's raw sake. The expectation is high even before drinking. The aroma is like a lactic acid bacteria drink. From the first sip, the beautiful sweetness is assertive, followed by the freshness unique to nama-shu, with a touch of acidity and bitterness, and then it finishes with a bit of astringency. The aftertaste of sweetness is pleasant. It is not a flashy unfiltered raw sake, but it is very stable and delicious. The cork flew off with a bang as I lit the bottle once. The wine is poured with bubbles. The aroma is of sweet apples and melons. The mouthfeel is sweet and juicy. It is very energetic. However, it is not too sweet and has a spiciness that makes it refreshing. It is like a fine champagne. To put it mildly, it is incredibly delicious. However, the price is twice as much as the year-round sake, Tokujun or Jungin. It's not for everyday drinking, but for special occasions.

SKY is the common name of the series. Many people describe it as an adult ramune, but there is no other way to describe it. The aroma is so sweet that your sense of smell can detect it. As you can imagine, the first bite is ramune. The sweetness is also strong. You can also feel the bitterness and spiciness as it goes down your throat. As is common with Takachiyo in general, the quality of the sake is thick and sticky, but it has a crisp, short aftertaste and a refreshing feeling, so it will be delicious in the hot season to come. If you like sweet, umami, and sour, there is no reason to dislike this completed series. I want it regularly, so I'm always indebted to my distributors.

I imagined it would have a ramune flavor, but that's Aizu Nakasho. There is no acid at all, and the first sip was like a candy cane. Hi-irei Junmai-shu with a milling rate of 70%. What kind of sake do you imagine when you look at these specs alone? If I didn't know about this brand, I would only think of a thick, classic men's sake... but I was surprised. The aroma is apple, just like the color on the label. At first sip at room temperature, I felt the sweetness. The acidity is almost non-existent, but the rich sweetness and umami are strong. It is elegant. Isn't this a Junmai Ginjo by mistake? It is a quality that can be satisfied even with Junmai Daiginjo. The best part is the bittersweetness at the end, which is like bitter chocolate. Is the brewer a genius? Furthermore, it shows a different face when heated. In a good way, of course. The sweetness, umami, and bitterness are smooth and smooth, and it has an incredible level of perfection. If you can get this on a consistent basis, it's one you'll want to keep on hand.

I've been sleeping in the fridge for a few months. The appetizer was handmade gyoza (no picture). There was an option to drink potato shochu on the rocks, but I wanted to drink sake with it, so I took out a bottle of Kaze no Mori, which is a kind of adult ramune. The sound of opening the bottle was like beating a drum. The carbonation was a bit chilly. The aroma on the nose is ramune. It is naturally delicious on its own, but when combined with gyoza, it washes away the smell and oil and resets your mouth. It's an infinite loop of the flavor of the gyoza and the flavor of the rice from the low milling. In the blink of an eye, there was only 1/3 of the rice left. It's only 1300 yen. I'm sure you'll buy it.

The aroma is mild, perhaps because it is not a Ginjo style. At the first sip, the sweetness of the rice spreads quickly, and the nose is like rice. Even with a cold sake, it has enough umami, and in the second half, the bitterness and spiciness kick in. It is like an adult rice juice without the fruitiness. The alcohol content is low, so it is a dangerous sake that will gradually feel like water without tiring. You can continue to drink it while thinking it is delicious all the way to the end. I want to drink it again when the real summer comes. It has no peculiarities, so it's easy to match with food. It was a summer sake like a model.

I did a double-take when I discovered it at the liquor store. It was the first time I encountered it because I didn't even know it existed, even though it was a recommended brand. I heard that it is only distributed locally. It costs 2,200 yen for a bottle, including tax. As it turns out, it's completely different from Jun Gin, which is the basic specification of Kinjaku. If you drink it cold, expecting a similar flavor, you'll be surprised (although the back label says cold sake is recommended). If it's not ginjo-zukuri, why not try heating it up? So I heated it up and it turned into a monster. The aroma is of weak alcohol and a slight banana. It's sweet and fuzzy with a hint of pineapple. It has good flavor and fullness, but it's not heavy and not tiring to drink. However, it is suitable for autumn or later rather than the coming season. Of course, everyone's tastes are different, so there are those who prefer cold sake. Personally, I would recommend it as a heated sake.

This is the second bottle of summer sake. The alcohol content is normal, but it is summer sake. But it's summer sake, and it says "summer" on it. I was attracted by the cool bottle. The aroma on the nose is banana. It reminds me of the Nanada I drank before. It's sweet, juicy, tangy, bitter, and crisp (loop below). It's not heavy, and yet it has an outline that leaves a strong trail of flavor. The level is high. This is a bottle that overturns the notion that summer sake is light and simple. It's a blessing to be able to buy this for less than 1300 yen per bottle. I hope that this kind of sake will soon be available outside as well.

This is a kasumi nama sake with popular specifications. The initial aroma is of ripe fruit. In the mouth, it's peach! The nose is also peachy. However, it doesn't feel heavy because of the bitterness. It's a well-calculated superb feeling. You don't need any sauce. Let's enjoy it alone.

This is a sake (subjective) comparable to Igami. I don't know if there is a relationship between them because they are both from Gifu. There are many kinds of Enayama, and I've never had anything other than this one, but this Cheers is a taste that I can't describe. It's even sweeter than the Ibis. This one has a light sweetness, while the beauty is a sticky sweetness in a good sense. But it feels sweeter than the beauty. The aroma is reminiscent of a sweet lactic acid bacteria drink. The taste is a mass of sweet and sour, and the sweetness is strong. The aftertaste is also long. The bitterness comes out slowly, so it brings it together nicely. I don't know if I can define them as Gifu sake, but they are two bottles that symbolize Gifu in my mind because of their high level of satisfaction. In addition, it's a Junmai Daiginjo Origarami Namaishu, 40% polished Yamadanishiki, and it's less than 1500 yen including tax, and it's not a hard to find brand. Good sake while it's good. Although we bought this sake 3 months ago, it will soon be 4 months old, so we will open it before the taste fades as we head into summer. Well, it's Sagami. Before I drank it, I had a preconceived notion that it couldn't not be good. It's still very delicious. The aroma of freshly cooked rice. The sweet and sour flavors rush in like a raging storm, and the bitterness and sharpness finish it off. It's a very satisfying experience. I'm sure there's no one who doesn't like it. It should be accepted by everyone except those who don't like sweet sake. This is a difficult brand to find if you don't have a distributor near you, but I came across a sake that is very similar to this one, and is no less wonderful. Matsumoto, it's as delicious as ever. It is a test brew, so the quantity is limited to only one tank. It is probably Junmai Ginjo. Since the specifications are not disclosed, it is daringly tagged Junmai. I was relieved to see the stable finish. It has a sweet aroma. The sweetness on the palate is there, but the pronounced gasiness and clean acidity make it sharp and crisp. It's delicious. The alcohol content isn't too high, so if you're on vacation the next day, it's easy to empty the No. 4 bottle. Beautiful, delicious and swishy. Thank goodness now that it's not hard to find!

It is another brand of the same brewery as Mimurosugi. Mimurosugi's production is more than 90% and Imanishi's is only about 5%. It's like a back menu. Let's open the bottle. The aroma is green apple. It looks delicious at this point. The taste is very similar to the one of "Gakki Masamune". I drank the Asahi rice from Senkou, but the sweet and sour taste comes first, and then the spiciness is gradually felt. As the temperature rises, the umami and astringency also come out, but I recommend drinking it well chilled. If you ignore the vocabulary, it is super delicious. The selling price is cheap as well as Mimurosugi. In other words, it is a god spa. I dare to say that there is no reason not to buy it when you see it.

A gem brewed by the Toyo Bijin brewery. About eight years ago, the city of Hagi in Yamaguchi Prefecture was hit by a torrential rainstorm, along with neighboring Shimane Prefecture, and this brewery was also damaged. The sake rice used is 100% Yamadanishiki, which is grown in a different area of Yamaguchi Prefecture. We open the bottle with our hearts in our mouths. The initial aroma is the freshness of fruit typical of Toyo Bijin. In the mouth, the expected sweetness is subdued, and it has a clear, watery feel. The spiciness follows suit, and it is refreshing. It has a drier impression than the Spring Goddess Poem that we drank before, and it is a summer sake that can be drunk easily during the hot season. You can't go wrong with Toyo Bijin.

The five flavors of sweet, umami, acid, astringent, and bitter all come together in a pleasant way. It is difficult to draw a line between classic and modern, but it is good to drink it without worrying about it. I don't care about the details (outrageous theory). If you've had it before, you'll understand, but it's just delicious (vocabulary). All the specs will not betray your expectations. It's easy to drink and satisfying at the end of drinking. If it is always available, it is one of the bottles that I want to keep in the storage room.

The ban was lifted after the regular checkup. This is the first sake I've had in four days, and I chose this one. After all, we couldn't do the Hanami sake again this year, so we unearthed this one that had been sitting in the storage room. It's low in alcohol, so I thought it would be good to get used to it. It's only been brewed once, and the aroma is that of rice that has just been polished. It has a clean mouthfeel, but you can feel the sweetness and umami, and the slight sourness and bitterness finishes it off. It is not a fruity taste, but a feeling of being out of the nose after eating rice. It can be drunk like water. I've posted a few of this brand before, but this low-alcohol spec is not lacking, and it's one that makes me think that Ro-Man is a no-brainer.
