This brewery is located in Shunan City, Yamaguchi Prefecture.
Koji rice is "Yamadanishiki" produced in Yamaguchi prefecture.
Kake rice is "Saito no Shizuku" produced in Yamaguchi Prefecture.
55% polished rice.
Soft aroma, refreshing mouthfeel, gentle acidity and sweet aftertaste.
Gentle acidity and sweetness in the aftertaste.

The first opening of the New Year is Harada's Fuyu.
Actually, when I stored this sake, I thought it was safe because it was unopened, so I kept it on its side and the contents started leaking out.
However, as a result of actually opening the package and drinking it, the fizziness is quite strong, leaving a carbonated soda-like fizz on the tongue with a very rich rice flavor and a strong kick at the end, but there is also a feeling of alcohol clinging to the throat, so I think the taste is different because some ingredient has leaked out.
It is not that it is not tasty, but the taste is quite peculiar.
(I am not sure if this is a normal taste or not.)

It is not as good as I was impressed in the past, but it is still delicious.
I thought it would be more gorgeous and sweet in my old memory, but it has a strong sense of pure sake, dark and even a little bitter. However, the beautiful sweetness of Yamadanishiki adds depth. Personally, I find the bitterness a little disappointing, but the overall taste is refined.
I thought it was a delicious sake, with a subtle acidity and refreshing sweetness, followed by a good amount of bitterness that was crisp, smooth, and easy to drink.
Junmai Unfiltered Nama Nama Sake🍶Summer Junmai☀️🏝️
A little matured, but also has the freshness of a summer sake. Dry aftertaste. Serve with a penne salad with toro eagle 😋.
