This is the first sake made in a year, and this time only 300 liters were used. It is a blend of sake mother and amazake, pressed and fermented in the bottle. The alcohol content is 9%. It has a sweet and sour taste.

Mellow, umami and slightly mellow, with a tangy aftertaste.

Today we had a Junmai Daiginjo from Harada-san 😀.
Kaorin won this Junmai Daiginjo from Mr. Harada in Yamaguchi, Japan at the recent Yamaguchi Prefecture Sake Restoration Meeting held in Osaka 😀.
I've had Harada's junmai ginjo and seasonal sake before, but this is the first time I've had a jun-dai 😀 It has a solid taste 😀.
It has a very robust taste 😀.
I don't get a very strong aroma from junmai 🤣.
But the umami is amazing 😀.
It's a very rich umami 😀.
Moreover, I don't feel much bitterness or acidity, but it finishes nicely 😀.
This sake was also a delicious sake with strong umami 😇

The gasiness and acidity come first.
The aftertaste is slightly bitter.
It has sweetness and is easy to drink.
It tastes best when mixed with oden soup stock and served with dashi!

Harada, as always, is really stable and delicious!
Slightly fizzy and fruity, with a deep flavor, it's the best of the best.
