Really refreshing. I usually only drink junmai sake, so this daiginjo is crystal clear. This was given to me by a person who works in Niigata. It is made from 100% Yamadanishiki with a 35% polishing ratio, so it is very clear. YK35 Hokusetsu is good. It is doing its best.

This time, I received a bottle of Bijou from Tano-cho, Kochi Prefecture, as a hometown tax payment. I received two bottles, one Junmai Ginjo and one Junmai, as a return gift. (The donation amount is 13,000 yen.) I couldn't resist taking the Junmai Ginjo first. It's so refreshing! No sarcasm. I didn't know it was possible to make it so pure. I felt that it was a clear, dry Tosa sake, and I'll have it again today with macro sashimi.

It says "First pressing Comet" on the bottle. Comet is a type of rice grown in Hokkaido. It was 16% alcohol by volume, 55% milling rate, and 3080 yen. It was 3080 yen. This is a high price. I am looking forward to the taste change from tomorrow. Also, it looks like I won't be able to drink outside due to the Omicron stock, but I'll have fun with this Fukushuku.

There are many sake that are like water, but this one mixes well with sashimi in the mouth and is great with yellowtail and tuna oil.  The rice polishing rate is 60% for koji rice and 70% for kake rice, and I might not have bought it if the rice polishing rate was this high, but since it was recommended by Sake no Wa, I talked to the liquor store and bought it.  It was good.
