Here is another sake we received.
When I told him that the winter hikuma was delicious, he said that he had some autumn hikuma left and would like to try it. I felt like I was urging him to drink it, but he gladly did.
I wonder if it is hiyaoroshi in autumn. Unlike winter, this sake has a strong umami of rice and a good acidity, so I thought I would like to drink it heated up 😅.

The aroma is mild.
I have had many light nigori, and this one is creamy but lighter and sweeter than other light nigori. It is easy to drink with a slight gaseous feeling.
It is easy to drink with a little gas.

Soft, calpis-like aroma. The light sweetness of rice and yogurt-like flavor is matched with a refreshing acidity and strong carbonation. It has a refreshing aftertaste and can be easily paired with a variety of dishes.
It is also good to drink a cooled sake while warming up under a kotatsu (table heater).

I saved this limited edition sake from Hokkaido.
It was getting cold, so I warmed it up and had a glass of sake.
When chilled, the sweetness and umami are assertive, but when heated, the roundness comes through,

Chitosekuru's Fuyuhiguma, which we drank last year as well.
The last time I drank it, I heated it up to about 40 degrees Celsius.
It gave the impression of being quite full of umami.
This time, it was served cold, so it had a refreshing taste.
I thought it was quite refreshing even though it was a light nigori, and the label clearly said it was refreshing.
So that is the concept of this sake.
When I decided to go on a business trip to Hakata, I asked Mr. Gura to organize an off-line meeting in Fukuoka 🙏.
The place was Tempura Taka, a Japanese restaurant.

Except for Ms. Gura, it was the first time for all of us💓I was very nervous to go to the venue.
We started with a set of drinks and snacks (5 kinds of tempura, etc.) recommended by Fukuoka members!
We each chose our favorite sake, but everyone started with a sake toast 😁.
The first sake was Chitose Tsuru Fuyu Higuma Mild Nigori Nama!
We all ended up with the same one!
It wasn't freshly opened, but it was good for a toast because you could feel the fizziness of the sake 🥰.
You can also feel the umami of cloudy rice and it's delicious!
It also has a sourness that goes well with meals 😋.

This is the first white sake of the season.
It's here, and it's exciting.
White sake is good, whether it is shuwa or not.
First Chitose-Tsuru.
First, the supernatant. There is a chirichiri gasiness, bitterness and acidity are a little noticeable, and there is a sweetness at the back.
When the lees are mixed, the soft and thick sweetness increases. The bitterness and acidity are pleasant.
This is a good food sake.
