It was a fresh sake as it was a Thanksgiving gift for the 2022 harvest, but since I have already drunk about half of it, I feel that it has become more moist. It is light, but you can feel the depth of sake later on. A bottle of Daiginjo for 3,520 yen is inexpensive. The rice is Akihikari from Okayama. Polishing ratio 50%. The alcohol content is 16%. It is very good. It is served with sashimi again today.

It started out strong, but now it is mellow and sweet. That's why a bottle is better. So, I suggest that home-drinkers buy a bottle of sake. It's a man's sake! It has a solid body. You can feel the junmai sake flavor. It really goes well with fish. Shibotan is made in the town next to my hometown, so I have been familiar with it for a long time. Please support Kochi sake. Really, at my age, I'm kind of happy to have a local feeling. I bought it at the Marugoto Kochi Antenna Ship in Ginza 1-chome and brought it home! It goes great with sashimi. Today I am having it with sea bream and squid that I received as part of my hometown tax payment. I bought the tuna. Polishing ratio 60%, alcohol 17-18%, production December 2022. I wonder if it is a new sake. Recommended for those who like strong sake.

Yum. It's been a while since I've posted because I've been out drinking a lot lately. This is my first post in a month. I bought this at my usual liquor store. I haven't had Nagasaki sake for quite a while. I bought it because it was rare. It has a refreshing taste with no unpleasantness. It is sweet and refreshing but rolls well on the bottom. I will enjoy it with sashimi again today. Polishing ratio 55%, alcohol 16%.

It is a solid, masculine sake. The rice polishing ratio of 60% may have contributed to this. The moment it was opened, it smelled quite a bit like oak. After that, it calmed down. The alcohol content is 15%. It is said to be made with Fukuoka Prefecture's patented Yume Yeast No. 3. It is said to have a refreshing sourness of malic acid, but it is not so sour when just opened. For those who like sake, this robust taste is easy to match as a food sake. I had it with bonito and white fish sashimi, but I was so focused on drinking that I forgot to take a picture.

It is thick. Dark, but refreshing. It becomes fruity from the second sip. I guess that's the point of unfiltered sake. It is now in the second sip and the taste has changed to moist and refreshing. I guess you have to buy a bottle and drink it at home to enjoy the change in taste. Today I am drinking it with striped horse mackerel from Kochi, my hometown in Japan. By the way, I moved to a new place and will be going to a new liquor store. I will go there from now on and try new tastes.

A refreshing taste. Wrapped in newspaper to block sunlight. Why? This not-for-sale sake is said to be the sake that Hourai-san drinks when he comes to visit the brewery, and it is reproduced. That is why it is not for sale. I wonder if it came out to the liquor store because the number of people visiting the brewery is decreasing because of Corona now. It's been a while since I've had anything other than junmai, but at 18% alcohol by volume, it has a clean, robust flavor. Interesting is interesting.
