I recently purchased a bottle at the liquor store, just for the heck of it. I remembered this brand because my father used to drink it a long time ago. At that time, it was a classic sake as we know it now. And it was also my first time to try a bottle of nama sake. Now, how does it taste? First, let's start with the opening of the bottle. Well, I thought in my heart that there were no bubbles. Then, when I put it in my mouth, I was surprised. The sweetness was more pronounced than I had imagined. My mind was a little confused. I was surprised at the fruity aroma in the nose. However, from the middle stage, the spiciness comes through and it has a nice sharpness. However, the sweetness remains on the lips until the end, which is hard to tell since it is freshly pressed. It may be that the brewing process has been changed to be a little more modern. It is quite a good bottle.

It is a gift. Every year around this time, my front door beeps with the arrival of this sake. It has a calm ginjo aroma without being flashy. Naturally, there are no peculiarities, and the five tastes are well balanced. The sweetness is slightly strong, but it is balanced by the bitterness and slight spiciness from the middle part of the bottle. And yet, it is not watery. The arugula is also doing its job well, and it finishes refreshingly. It does not have many characteristics, but it is a luxurious food sake.

We are almost at the end of the year 2024. So, I went to the liquor store for the last bottle of the year, focusing on stability and calmness. I knew what it tasted like, so I opened the bottle without worry. Well, the first sip. What ‼️ was such a sake⁉️ First of all, it is a piquant. It is a blow to the head which is perplexed by what⁉️. The acidity is very strong. It is a bit of an exaggeration because of its original image, but it has a sourness and sweetness like that of a beetle. However, after a while, the bitterness comes and you feel relieved. The pungency seems moderate. It is a sake whose taste seems to change considerably depending on the elapsed time. It was the first sake that surprised me in a long time.

The softness of the soft water is impressive. +It is 10 degrees Celsius, so it is quite easy to drink, although it does have a bit of spiciness. The moment it enters the mouth, you feel a little bit of sweetness, but it turns pungent in the middle and turns bitter in the end. It then turns bitter and finishes with spiciness. It seems to be a little hard, perhaps because it is a draft sake, so I would like to let it sit for a while.

The bitterness is more assertive than the spiciness, but the balance is just right. I will try to buy it for home use next time.

Oh my! There is not a single bottle of alcohol in the refrigerator! So I took advantage of my day off and went straight to the liquor store. I found the sake I wanted, but they were out of stock, so I bought some in bulk. Among them was a standard sake that caught my eye for the first time in a long time. The price of this sake has gone up quite a bit. Since it is bottle-fired at this time of year, the bottle was opened at a very high price. The aroma is not as loud as that of the raw sake, but it has calmed down. It is still sweet and juicy as usual, but after drinking it for the first time in a while, it has a strong spiciness. And because it is made from Yamada-Nishiki, it has more sharpness than Aizan. As always, I think it goes well with something rich or strong in flavor.

This is a drink that I drink frequently these days. It is a great brand to drink when you are in trouble or when you want to drink with peace of mind. It is a new sake with some ori, so it tastes sweet when you put it in your mouth, but not too much. It is not too pungent, and the bitterness is mild. You can taste the freshness of new sake. This sake is best served with fish. This sake has less sharpness than usual, so I think it goes better with boiled fish than sashimi. Still, it is a stable and reliable sake.

It's Hakusen again. And it's the 4th day since the bottle was opened. I couldn't resist and drank it even though I didn't feel like posting. On the first day, it had a new sake-like crispness and the green apple aroma that is characteristic of this brand. And the taste was thickened by the ori, which is the Hakusen flavor. Now, how about today? The opening of the bottle called "Jupon. You can feel it is alive. The freshness is gone, and the green apple aroma is almost gone (but there is a little left). The freshness has also faded quickly. However, the bitterness and pungency have become more pronounced. The bitterness towards the end is particularly impressive. It is not a very thick sake, so I have the impression that it is not suitable for fried food or animal oil, but it may be good with fish fat. It was a good decision to use a four-pack bottle. However, I prefer ogara-mi immediately after opening the bottle.

This is my favorite sake that I have been waiting for. This year, I asked the liquor store to reserve it for me. Of course, I went to pick it up as soon as I got the call (laughs). This is actually the fourth day after the bottle was opened. The first day is from the opening of the bottle with the unique juiciness of nama-shu. This year, the usual green apple aroma is not so strong. And the sweetness seems stronger. But the piquancy supports it, so it is very easy to drink, with a mouthfeel that even beginners can enjoy. Then, on the fourth day. The piquancy is still gone, but the bitter and pungent taste comes after the sweet taste. Finally, the taste is getting closer to my usual taste. I enjoy this change in taste. It will be gone in no time.

This is my first drink in about a year and a half. First impression. It is delicious. It is delicious. There was a sake I wanted, so I bought it on the side, but it is a brand that has not left much of an impression on me. It has a mild but fresh aroma that is typical of new sake. It is also nice in the mouth. It has a sweetness that accompanies the piquancy. But from the middle to the latter half of the bottle, it finishes with spiciness and bitterness. I end up drinking more than I expected. I think this freshness is one of the reasons. It is a relatively thin sake, so it may be difficult to match it with something, but it may go well with vegetarian dishes such as shochu fries because of its crispiness. Vegetables seem to go better with it than meat or fish. Strongly flavored simmered dishes and pickles from the Kanto region to the north may be good.

It is the first time in a year. This is the season to look forward to. It is a regular sake. This brewery's sakes do not blur the basic line, so you can buy them with peace of mind. It is a safe and secure opening of the bottle (lol). As is the case every year, the gorgeous aroma is subdued and the usual green apple peeks out a little. And then the first sip. Oh ⁉️ I feel a stronger sweetness than usual. This sake has a nice spiciness and bitterness while still having a sweet taste. Hmmm. I can feel the bitterness and spiciness from the middle to the latter half, but it is not sharp enough. Edible rice also seems to be in good shape this year, so maybe the sweetness is stronger. It is a little disappointing, but it is still a satisfying bottle.

This was also my first sake. I asked for this sake because it is from Shizuoka. I ordered mackerel skewers with salt and swordfish skewers with sauce. The sweetness is stronger than I expected. There is not much bitterness, but it is tangy and pungent. And, as in Shizuoka, it has a nice sharpness. I think the sweetness is a little strong, but this may be interesting because it is not typical of Shizuoka!

While looking at the refrigerator of a liquor store, I found a label that did not look like sake. I looked at the back and saw that it was Okuharima. And it was low alcohol, so I bought it. I am not sure about the naming. It has a crisp and tight impression, as is typical of sake from Hyogo. The acidity, spiciness, and bitterness are well combined, making it a well-balanced dry sake. The alcohol content is 13%, so it goes down your throat smoothly. It is not for beginners, but it is good for a light evening drink.

When I see the name Aizan, I am the one who always picks it up. I remember seeing this sake before, but the price was a bit high, so I gave up on it. This time, I wanted it so badly that I bought a 4-goupe bottle of another sake. It is clear and colorless. There is no fancy aroma. It has a calm scent of rice. Now, the first sip to look forward to. Basically, it is the usual Hidakami, but it is a bit thicker. Then comes the sweetness of Aizan. I think to myself, "This is Aizan, right? Then, the spiciness comes in the middle and the bitterness supports the sweetness. I think it is an easy-to-understand sake with the sweetness of Aizan added to the usual Hitakami. The evaluation may be divided. It is neither sweet and juicy nor crisp and tight. It is interesting for those who are interested in sake breweries and rice. This was the one that changed my concept of "fish is good for Hidakami". It was a bottle that changed my concept of "fish for Hidakami".

This is my second Red Takeshi this year. As usual, it is from a sizzling opening. I used to drink it a lot. The price has gone up, and I don't pick this sake up as much these days, but in a word, it has a stable taste. In a word, it has a stable taste. A little less piquancy. This is my first time at the brewery. I wanted a little classical sake, so I bought it. This kind of sake is surprisingly cosy, so it was a challenge for me. First, I drank it cold. It is a bit classical, but it has a soft and bitter taste in the mouth. The spiciness at the end of the bottle left a strong impression on me. Then, I tried it cold. At first, it comes in without any discomfort. It has a slight sweetness, but it has the same mouthfeel as cold sake. It has a soft mouthfeel to begin with, but by chilling it, the spikiness is removed. I don't think this is a sake for beginners, but I think it has a stable taste. Perhaps it would be good as a heated sake.
