Last week I went to an izakaya in town for a long time. I had a chance to drink Niseko, a rather standard local sake of Hokkaido, so I did. It was supposed to be spicy, but it was drinkable. It is not too sweet, but refreshing and a little strong in alcohol. We all drank a little bit.
I feel like I haven't had a dry sake in a long time.
It has a much stronger umami flavor and a classic taste.
It is not hard to drink, but after a long time, I think I prefer fruity sake when it is dry.
I like fruity sake better after a long time.
