This is one I look forward to every year. This year, after opening the Corona, I finally got to go to the brewery opening and spent a satisfying day there. So, here is the tasting. As is the case every year, the first day the bottle is opened, the five flavors seem to be fighting with each other. On the second day, the overall cohesiveness improves, probably due to exposure to air, and the freshness of the unfiltered, unpasteurized sake can be tasted. Then, on the fourth day. I recommend drinking it slowly over a week or so, enjoying the changes in flavor.

I went to a liquor store and was browsing the refrigerators when it caught my eye. I had a strong impression that this brand was sweet, so I did not pick it up, but since the rice was Hachitan-Nishiki, I gave it a try. When I poured it into a sake cup, it was colorless and clear. The first sip. Hmmm. It is lighter than I expected. It has a strong sweetness, but it is not a rich sweetness. The label on the back says that the alcohol content is 13%. I took another sip, and found it to be a little tangy, bitter, and sweet. There is not much pungency. The aftertaste is not sharp, but it disappears nicely. There is a sweetness, but not so much that it interferes with the meal, so it is good for those who are a little more used to sake.

It's been a year since we last met. In these days and times, the price of sake has gone up so much that I have to choose affordable sake. Since it is a spring sake, the gentle freshness is pleasant. Like last year, it has a good balance of five tastes and is easy to drink. This brand does not fluctuate much from year to year, so it is a bottle that I always pick up with a sense of security.

I think this is another brand that is new to me. I didn't pick it up because I had a sweet image of it. First, let's start with the supernatant. The bitterness from the soft aroma comes, but as expected, the sweetness is strong. I tried mixing in the oli, but since it had been given a lot of rest, it did not mix well. Still, after struggling for a while, we managed to make nigorizake. Nigori (nigori) sake must be mixed. The expression changes from the sweetness of the supernatant. It is not so silky, but the flavor of the rice gives the sake a richness. However, there is almost no sharpness. The back of the bottle says that it can be served warmed, so I will give it a try.

This will be my first time at Ozura again. In the mouth, it is very soft. First, sweetness. Then the sweetness asserts itself. The bitterness and pungency are almost imperceptible. It is like sugar water with alcohol. It has a very good mouthfeel, but it is not sharp and not to my taste.

This is the first time I have tasted this brewery. It has a gorgeous aroma because it is a draft sake, but the aroma is not fruity like in Niigata, but more like rice. My first impression is that it has a good balance between classic and modern. A slight piquancy is immediately followed by an unexpected sweetness. Then comes bitterness and spiciness. The aftertaste is not sharp, as is typical of Niigata, but it finishes nicely. It is fun to drink outside for the first time in a while.

I was drawn to this pale pink label. I quickly picked it up without hesitation. I am glad that I was able to open the bottle without any problems this year. The supernatant has a freshness different from that of new sake. It has a slight effervescence and sweetness. Then it changes from bitter to spicy. When the sake is mixed with Ori, the sweetness fades away and the bitterness and spiciness at the end of the bottle finish it off as they did last year. It is not as sharp as last year, but it still has a predictable taste and can be purchased with confidence.

This is my first visit to a sake brewery. Recently, I have been drinking a lot of strong sake, so I went to a liquor store for low-alcohol sake. I thought it would be quickest to ask the clerk, but I wanted to check out the fridge. This is the sake that caught my eye. I bought it because of the comment that it is easy to drink and goes down smoothly. First of all, I opened the bottle. It started with a "sizzle" and then a "pop". When I put it in my mouth, I was hit with the freshness of new sake. It was more pungent than I expected, but it was not pungent. Then, the sweetness soon arrives and passes down the throat with the piquancy. Sake from Kyushu has a strong sweetness, but I think many of them also have a sourness. However, this sake does not have much of it. However, it is full of freshness and low in alcohol, so it is definitely easy to enjoy. Personally, my impression is that the sweetness is a bit strong. I feel that this feeling makes it go off too quickly.

It's been a year. Now I wonder what it tastes like this year. From the opening of the bottle, which was juicy as usual. Since I started drinking sake with a sake cup, I can see the color of the sake very clearly. This is one of the new pleasures. The aroma is more subdued than usual. Then, the first sip. It is different from the rich sweet juicy taste that is the characteristic of the combination of this sake and Aizan. The sweetness characteristic of Aizan is moderate. The sweetness comes first as usual, but it is soon replaced by bitterness. The lingering taste seems short. This is the impression of a drastic change in the production rather than the rice. I really don't know. It is a bit too much, but it retains the richness that is a characteristic of this brewery. Recently, low-alcoholic sake has been on the rise, so perhaps the brewery has moved a little more in that direction. Still, it is still delicious.

This red label is new to me. I drink this sake all the time, but for some reason I guess I never picked up the red draft sake (mystery). This is the second day after opening the bottle. Oops, not much of the usual green apple aroma. However, the usual soft sweetness comes first, as usual. The spiciness comes in the middle and the bitterness in the end. The quality is as good as ever, but the second day after opening the bottle, it is already starting to have a twinge of bitterness. I kept it in a normal refrigerator, but I think it is too early. Also, the aftertaste is longer than usual. This is my first time drinking it, so I can't say for sure, but I was a little disappointed because I had high expectations for it. Still, it is an enjoyable sake for normal drinking.

It is a major sake that can be found at any liquor store. It is a sake that I did not take at the opposite because I see it so often. I had drunk this sake a long time ago, so I felt comfortable purchasing it. First of all, I opened the bottle without any problems. It had a higher pitched sound than I expected. I poured it into my usual sake cup. Alas, it was a little cloudy. When I looked at the back of the bottle, I found that it was written in the bottle. I was surprised because I had not learned about it beforehand. It is a jungin (pure sake), but the aroma doesn't come up much. When you put it in your mouth, you can taste a slight sweetness, followed by a crisp, tight spiciness in the middle part of the mouth. The bitter taste comes in the end. It is an easy-drinking sake. It seems to go well with all kinds of snacks. Incidentally, we paired it with genovese, and it was an interesting combination because the aroma of the basil was enhanced by the lack of aroma from the sake. It will definitely be gone in a day.

Uraojisan. I remember drinking it before, but there was no record of it being posted. I am sure I drank it all before posting. This kind of thing happens quite often. It is safe and stable as usual, but what about this year? I get the usual green apple aroma and sweetness in my mouth, but only for a short time. Then the tangy pungency and underpinning bitterness follow. The final taste is sharp and not spicy, but fades away smoothly. It is like this on its own, but when served with snacks, it does not interfere at all, giving the impression of a slightly modern food sake. I wish I had bought a bottle.

This is the first sake from Kanagawa in six months. This will be the first time for me to visit the brewery as well. I chose this sake because I was planning to have sashimi today. From the opening of the screw. Since it is freshly squeezed, it has more aroma than I expected. It smells like sake from a long time ago. I have a bad feeling. The first thing you notice is the freshness of the new sake. Then comes the spiciness and sweetness at the same time. Finally, there is bitterness. The bitterness lingers for quite a long time. It might be better to warm up the sake. The impression is that it is an ordinary sake with no sharpness. Then, I paired it with sashimi. In my mind, Sagami Bay is famous for shirasu (baby sardines) and horse mackerel. This time, I paired it with horse mackerel. I was surprised. The firm horse mackerel and this sake are very good together. Tuna is also quite good. The strong bitterness is neutralized by the fish, giving it a sharpness. Also, the sweetness of the shellfish is enhanced when paired with hontsubu mussels. It is a sake that seems to go well with fish dishes. Boiled fish is also good. I think it lacks the volume to match with meat dishes. It is the first sake I have enjoyed in a long time.

I saw this sake on the Facebook page of my favorite liquor store, so I bought it along with the other sake. I think this is also the first time I have had this sake from this brewery. The bottle opened with a modest sizzle and then a high pitched pop. The color is slightly yellowish, but almost colorless. There is not much of an aroma. When you put it in your mouth, it bounces around on your tongue as if it is a nama-zake. The sweetness comes first, but the freshness of the aroma passes through the nostrils, which may be due to the fact that this is also a nama sake. It is also juicy. From the middle to the end, bitterness and spiciness come together. The aftertaste is quite long. If this were a fire-brewed sake, it would be a bit too much. However, I think this sake is quite good.

It is a classic of the standard. There are so many different kinds these days. It had been a whopping 3.5 years since I had had this sake. The first sip. It seems somewhat thin. Maybe it is because I have been drinking punchy sake recently. But it is still delicious. Since it is the first sip, it has a fresh feeling, but it has a moderate sweetness, then bitterness and acidity. And spiciness. It finishes with a crisp finish and doesn't leave a residue in the mouth. What tastes good is good. And it's affordable. I would not miss it after all.

This was also my first time to visit the brewery. I was a little anxious, so I chose a four-pack bottle. The bottle was opened with a high pitched "ponk" and poured into a sake cup. The aroma is not very noticeable and the color is almost transparent. My guess is that it is a classic. It is still a classic. But for a 16% alcohol content, it comes in and disappears quickly and easily. When you put it in your mouth, it gives the impression of water, but in the middle, there is a bitterness from the pungency. The bitter taste is followed by a slight sourness at the end. It is a light sake, but still gives a strong sake taste.

This is the first time I have been to the brewery, which is rare these days. I bought a bottle the last time I visited the liquor store. I was attracted by the 80% rice polishing ratio and the home-cultivated yeast. I was both excited and anxious as I had no prior knowledge of the brewery. The bottle opened quietly for a recent draft sake. The color was almost transparent. From the moment it enters the mouth, it hits you hard! It hits you. First, there is the spiciness. Then, you can taste the bitterness. And, after all, it is 80% polished rice, so it tastes like a mess, but you can enjoy the various expressions of the rice. It is a classic sake, but it is not in the middle, and the sweetness can be felt, making it a perfect sake for sipping.

Today is the day to go to the liquor store. So I enter the store after doing some advance study, which I usually don't do very often. I had already decided on the brand I wanted to buy, but I was too busy rummaging through the store. I couldn't find the sake I was looking for, so I asked the clerk to take it out of the refrigerator. I have to say that the introduction is as long as usual, but let's try the sake right away. First of all, I was attracted by the bright red bottle. I had learned in advance that they were out of sake bottles, but when I asked for a bottle, one was available. This is the best part of going to the store. Being +17, how spicy is it? First, the bottle opened quietly. First, the bitterness is assertive. There is also a slight cemedine smell. Above all, the sake quality is hard. It feels like it hits you hard in the mouth. However, from the middle to the latter half of the bottle, the spiciness becomes more pronounced, and there is a slight sweetness to compensate for it. This might be good. I am sure that the taste will change after a few days of storage, so I will give it a rest and look forward to it.
