The fridge was getting lonely, so it was time to go to the liquor store. I quickly found the sake I wanted, and as I rummaged around the store, there it was. A bottle of my favorite. This year, the rice is less intense. The aroma is still restrained. Sweetness is also restrained, but it may be just right for this sake rice. Light richness. It is difficult to describe, but please forgive me. The acidity is added in a nice salty way, and the spiciness finishes it off well at the end. This may be my favorite of the year.

This is my first time at the brewery again. Again, this time it was one of the sake I purchased because they did not have the sake I was looking for. Lately, I seem to be buying more and more of the standard sake on the shelf as well as in the fridge. Despite being a dry twice-heated sake, it had a strong sweet taste, but after letting it sit for about a week, the sweetness subsided and the spiciness and bitterness became more pronounced. There is a lingering aftertaste. Since this sake is from Hokkaido, it would be good to sip it while sitting in a kotatsu and enjoying a pot of hot pot.

I found this bottle while wandering around the store without the sake I was looking for. Recently, there are many different types of sake available, and I cannot tell the difference between them even when I try them. Perhaps I am insensitive. It's the third day after opening the bottle, and I can feel the piquancy more than the medium tasting, like a numbness on the tip of my tongue. After that, the taste is the same as usual, but I can feel a slight fizziness, perhaps in accordance with this time of the year. The basic line is almost the same, so you can drink this sake with peace of mind.

I went to the liquor store because there was some sake I wanted, despite the fact that it was stocked in the fridge. After confirming that the sake I wanted was also in the store, I went around the store as usual. I should just buy what I wanted, but I can't do this. It is a saga of a drinker. Then, there was a brand of sake that I had been curious about for a while. I am not fond of sake from Kanagawa because of its hard quality, but there was the desired sake, so I gave it a try. As is typical of nama-shu, there was a hint of ginjo aroma. Even so, I was still 80% anxious. But the aroma did not betray me. It seems to have a good balance of the five tastes. Everything is united and spreads in the mouth. Toward the end, the dry taste comes in and finishes it off. The dry taste comes in the last stage and finishes it off. I paired it with stewed pork, and it was quite good. I was betrayed in a different way. Next time, I would like to try a standard sake.

This is my first sake. It has a fruity aroma with a sourness that is typical of a sake brewer's yeast yeast. It also has an Omachi-like aroma. It is not the acidity of today's sake, but the acidity of the sake's origins. The acidity is the main taste, but it is supported by bitterness and sweetness. It has a lingering aftertaste, as is typical of Miyagi.

The spiciness and bitterness come rushing in from the slight piquancy and seem to support the amami. The lingering piquancy is long, but not too crisp. It was a bit of a discovery.

This is one that I did not pick up because it was too standard. Prices of seasonal sake have gone up dramatically across the board, but I have the impression that prices of standard sake like this have not gone up much. It is a quiet sake, but since it does not interfere with the accompaniments, I think it is a good food sake that can be served with anything. It doesn't have much aroma or taste in the mouth, but it has a nice balance of bitterness and acidity. Then, the sweetness comes in as an accent, which adds thickness. The spiciness can be felt throughout, but I think it is connected to the tightening effect and the crispness at the end. It is a stable sake.

This is the first one in this series in many years. I don't remember much about it, although my own comments from last time indicate that I didn't like it very much. I am half anxious and half hopeful because this year's taste is quite different. The color is almost colorless. The aroma is not flashy either. It has the aroma of so-called "junmai" (pure rice). As expected, it does not have the rich sweetness that I remember from before, but I first felt a tingling sensation on the tip of my tongue. Then, sweetness and sourness in the middle. In the second half, there is a bitter taste followed by a pungent taste. The sweetness and pungency are strong, but they are balanced by the acidity. I had been reluctant to buy Kame-no-o because I did not like it very much, but I think this one is good. Well, I think the main reason is that my tastes have changed. As for what to pair it with, I think it should be something well-seasoned and strong.

I went to the liquor store because I wanted a tangy and refreshing sake after a series of sweet sake recently. The summer sake is already here. I remember drinking this sake, but it was not recorded. In a word, it is crisp and clear. It does not have the piquancy that is typical of summer sake, but the timing of the transition from a moderate piquancy to bitterness is exquisite. The bitterness comes just before the spiciness disappears, and then it disappears. I paired it with a plate of fresh bonito, and although it may be an exaggeration, it was a perfect marriage with the fresh bonito. The sweetness of the sake is brought out in combination with the acidity of the bonito. It was a home run level pairing after a long time.

This is my first sake in two years. I went to a liquor store for another sake, but it happened to catch my eye and I bought it on impulse. Even though it was called "active," I opened the bottle without any difficulty. And the supernatant has a fizzy feeling on the tip of the tongue, and when you roll it around, it entertains you with its fizziness on the tongue. The sweetness is slight. There is a slight bitterness. Now, let's try mixing in the ori. This kind of sake tastes better when mixed. The sweetness is added and the flavor is thicker. Still, the sweetness is kept low, so it is crisp and refreshing, which is good for the coming season.

I knew what I was looking for, so I started off with a glass. It is a stable taste. First of all, you can feel the spiciness on the tip of your tongue. Then, spiciness and bitterness come in the middle. The sweetness disappears quickly in the last half of the drink. After swallowing, the aroma that leaves your nose is also pleasant. It has a taste of traditional sake, but also has a modern taste. It is a satisfying bottle.

This is the first time since last July that I have been to Yamori. I was looking forward to this year's event. I quickly opened the bottle. As usual, it started with a "jouwer" and then a "ponk". First, the aroma. Hmmm...the aroma is not as strong as I expected. Well, it's Junmai, so it's not that bad. I put it in my mouth thinking, "Well, it's Junmai, so it's not like this. First of all, I was surprised to find a freshness that I had never experienced before. Then, there was a big change in taste. The taste is different from the rich, sweet and juicy taste of the past, with the sweetness being suppressed and the acidity standing out. From the middle to the latter half of the bottle, the bitterness comes in and disappears. This is quite a shock to those who have been drinking it up until now. Simply put, it has adapted to the trend. Personally, I prefer it as it was before. However, it gives the impression of being very hard just after opening the bottle, so I would like to enjoy it slowly.

With the recent price hikes in sake, I took on the challenge of finding a low-priced sake. I was attracted by the price of 2,090 yen (including tax) for a bottle of sake, saying that I did not have a bad impression of Shizuoka's sake. Even at worst, it can be used as a cooking sake. I had it cold on the day I opened the bottle. It has a slight sweetness, but not much pungency or bitterness. It is not enough to drink by itself, but it is good as a food sake because it does not interfere with the accompaniments. When I put it in the refrigerator to make it cold, the sweetness disappeared and the bitterness and pungency became too assertive and unbalanced. The aftertaste is not as good as it used to be. It is a thin sake, so it does not interfere with the taste. It tastes much better when served cold.

This is one I look forward to every year. This year, after opening the Corona, I finally got to go to the brewery opening and spent a satisfying day there. So, here is the tasting. As is the case every year, the first day the bottle is opened, the five flavors seem to be fighting with each other. On the second day, the overall cohesiveness improves, probably due to exposure to air, and the freshness of the unfiltered, unpasteurized sake can be tasted. Then, on the fourth day. I recommend drinking it slowly over a week or so, enjoying the changes in flavor.

I went to a liquor store and was browsing the refrigerators when it caught my eye. I had a strong impression that this brand was sweet, so I did not pick it up, but since the rice was Hachitan-Nishiki, I gave it a try. When I poured it into a sake cup, it was colorless and clear. The first sip. Hmmm. It is lighter than I expected. It has a strong sweetness, but it is not a rich sweetness. The label on the back says that the alcohol content is 13%. I took another sip, and found it to be a little tangy, bitter, and sweet. There is not much pungency. The aftertaste is not sharp, but it disappears nicely. There is a sweetness, but not so much that it interferes with the meal, so it is good for those who are a little more used to sake.

It's been a year since we last met. In these days and times, the price of sake has gone up so much that I have to choose affordable sake. Since it is a spring sake, the gentle freshness is pleasant. Like last year, it has a good balance of five tastes and is easy to drink. This brand does not fluctuate much from year to year, so it is a bottle that I always pick up with a sense of security.
