This is one I look forward to every year.
This year, after opening the Corona, I finally got to go to the brewery opening and spent a satisfying day there.
So, here is the tasting.
As is the case every year, the first day the bottle is opened, the five flavors seem to be fighting with each other. On the second day, the overall cohesiveness improves, probably due to exposure to air, and the freshness of the unfiltered, unpasteurized sake can be tasted.
Then, on the fourth day. I recommend drinking it slowly over a week or so, enjoying the changes in flavor.
