My first drink. I think. Hmmm. It has the image of a Mie sake. I think it is a bit more like Kangiku, adding acidity to the image of Saku. It is lightly nigori (lightly cloudy). The acidity and bitterness give it a nice balance, and it is very good for this time of year when the lingering summer heat is severe.

It has been a long time since I have posted. I've been drinking, but I've been slacking off in this heat. Today is my first Hakusen in six months. This brand is my favorite and I drink it regularly, but this is the first time I have seen this label. I checked the brewery's home page again. It was a classic sake. First, let's open the bottle. The sake was well heated, but it was very strong. When I poured it into the sake bottle, I was surprised to find that it was yellowish in color. The aroma was naturally mild, and the usual green apple flavor was very slight. The taste is sweet as usual, but again, the bitterness and pungency are very moderate. The acidity is slight. The taste is similar to Mutsu Otokoyama, another brand of this brewery, and has a slightly classic feel. This sake would be delicious served cold with a pot of hot pot on a chilly night.

It's been quite a while since I've had this drink. It is much more refreshing than I expected. I don't know if it's the summer version, but it has a strong acidity that is perfect for this time of year. It is still firm and goes well with the bonito from Miyagi.

This is surely the first brand I have ever seen. In a word, it is still Miyagi. I thought it would have a strong sweetness because it is pure Dai, but it has a moderate sweetness and bitterness. It has been a long time since I have had this drink. It had been a whopping 4 years since I drank this super-hot wine. I always saw it, so I was under the illusion that I had been drinking it more. It has been about a week since the bottle was opened. As before, I don't notice much change. For the first moment, I can feel the sweetness and aroma of Mutsu Hachisen, but after that, the spiciness hits me just as you reported. However, for this spiciness, it is really easy to drink. Also, this brewery's sake does not fluctuate much from year to year, so it is good to be able to buy it with peace of mind. We enjoyed it again today.

Unable to stand the excessive heat, I went to a liquor store in search of a low-alcohol drink. I looked in the fridge and had no idea what I was looking for, so I asked the clerk and this sake came up. It was a new brand to me, but I had already had another brand from this brewery, so I bought it as recommended. As is typical of Niigata sake, opening the bottle was no problem at all. According to the label on the back, only one bottle per year is brewed during the cold season. The first sip is a slight sweetness, but that sweetness soon disappears and the spiciness of the royal road comes in. The aftertaste is slightly long, but if you drink it slowly, the initial sweetness will leave your nostrils at the end. It is not a high-impact sake, but I think it is a dining sake that can be drunk smoothly during this hot season.

The fridge was getting lonely, so it was time to go to the liquor store. I quickly found the sake I wanted, and as I rummaged around the store, there it was. A bottle of my favorite. This year, the rice is less intense. The aroma is still restrained. Sweetness is also restrained, but it may be just right for this sake rice. Light richness. It is difficult to describe, but please forgive me. The acidity is added in a nice salty way, and the spiciness finishes it off well at the end. This may be my favorite of the year.

This is my first time at the brewery again. Again, this time it was one of the sake I purchased because they did not have the sake I was looking for. Lately, I seem to be buying more and more of the standard sake on the shelf as well as in the fridge. Despite being a dry twice-heated sake, it had a strong sweet taste, but after letting it sit for about a week, the sweetness subsided and the spiciness and bitterness became more pronounced. There is a lingering aftertaste. Since this sake is from Hokkaido, it would be good to sip it while sitting in a kotatsu and enjoying a pot of hot pot.

I found this bottle while wandering around the store without the sake I was looking for. Recently, there are many different types of sake available, and I cannot tell the difference between them even when I try them. Perhaps I am insensitive. It's the third day after opening the bottle, and I can feel the piquancy more than the medium tasting, like a numbness on the tip of my tongue. After that, the taste is the same as usual, but I can feel a slight fizziness, perhaps in accordance with this time of the year. The basic line is almost the same, so you can drink this sake with peace of mind.

I went to the liquor store because there was some sake I wanted, despite the fact that it was stocked in the fridge. After confirming that the sake I wanted was also in the store, I went around the store as usual. I should just buy what I wanted, but I can't do this. It is a saga of a drinker. Then, there was a brand of sake that I had been curious about for a while. I am not fond of sake from Kanagawa because of its hard quality, but there was the desired sake, so I gave it a try. As is typical of nama-shu, there was a hint of ginjo aroma. Even so, I was still 80% anxious. But the aroma did not betray me. It seems to have a good balance of the five tastes. Everything is united and spreads in the mouth. Toward the end, the dry taste comes in and finishes it off. The dry taste comes in the last stage and finishes it off. I paired it with stewed pork, and it was quite good. I was betrayed in a different way. Next time, I would like to try a standard sake.

Prices of seasonal sake have gone up dramatically across the board, but I have the impression that prices of standard sake like this have not gone up much. It is a quiet sake, but since it does not interfere with the accompaniments, I think it is a good food sake that can be served with anything. It doesn't have much aroma or taste in the mouth, but it has a nice balance of bitterness and acidity. Then, the sweetness comes in as an accent, which adds thickness. The spiciness can be felt throughout, but I think it is connected to the tightening effect and the crispness at the end. It is a stable sake.
