This is the first time I have been to the brewery, which is rare these days.
I bought a bottle the last time I visited the liquor store. I was attracted by the 80% rice polishing ratio and the home-cultivated yeast.
I was both excited and anxious as I had no prior knowledge of the brewery.
The bottle opened quietly for a recent draft sake. The color was almost transparent.
From the moment it enters the mouth, it hits you hard! It hits you. First, there is the spiciness. Then, you can taste the bitterness.
And, after all, it is 80% polished rice, so it tastes like a mess, but you can enjoy the various expressions of the rice.
It is a classic sake, but it is not in the middle, and the sweetness can be felt, making it a perfect sake for sipping.
