The two choices for sake in Shiga used to be Matsu no Tsukasa or Shichihon Yari. But But this sake, Kirakucho, is also good. I mean, Kirakucho is too good. I regret that I haven't had it until now. It has a balance of umami, bitterness, and sweetness that sake drinkers love, and can be drunk at room temperature for as long as you like. Lately, I've been seeing a lot of dried bonito, but I can't seem to get it right, even though I love dried bonito. Sake is so tasty, but it just doesn't seem right.

USJ is such a fun place. My brother's family was going to visit USJ in this hot weather, so he stayed at our house. My brother and his wife, who were able to make it, sent us a lot of sake for my brother's arrival. I really appreciate it. My brother and I had sukiyaki together. In response to a request to drink Kansai sake, we had a Matsu-no-Masa Junmai Ginjo, a favorite of ours. While Sancho and Namaho sake are punchy and full of rice flavor, Junmai Ginjo is a light and balanced sake that can be drunk indefinitely. Even my brother, who is a sake drinker, will be satisfied with this ginjo-shu, which is as good as a strong-flavored sukiyaki. He drank quite a lot of sake, complaining that it had no special characteristics.

I've always liked hiyaoroshi and new sake, and I've often bought fresh sake. but I have not been drinking much summer ginjo. However, I bought summer sake because I am in the midst of a summer heat wave. Kuroryu, Joyo, and Kirakucho. Today's sake is Kuroryu. It is cool to the taste. This is good. However, I thought it was punchy, but it was recommended to drink on the rocks because of its 18% alcohol content. The Olympic climbing was interesting. I couldn't take my eyes off of the action of the two climbers, Anraku and Mori, which really had my hands sweating. I applaud them both.

Yay, summer vacation! I drink in the morning. I'm a lefty, but I'm also a sucker for sweets. When it comes to anko (sweet bean paste), I prefer grains, but not akafuku. It's good, good, good, good, good. I drink my family's regular sake, Kenrishi, with it. My father, who left the countryside to work in Tokyo, always chose Hakkaisan or Kenrishi when it came to sake. Business trip to Tajimi So I had a glass of Sanzenzori ginjo-shu at a business hotel. After work, before going home, I stopped in Nagoya and had a barrel of Kamotsuru sake at Daijin. Sake is delicious all over Japan.

Ishikawa Prefecture has a wide variety of excellent sake, including Shirakiku, Sogen, Tengu Mai, and Tetorigawa, but recently I have been enjoying Jokigen. I prepared some summer snacks and drank the chilled Yamahai Junmai. The golden sake is good, too good. But it is too hot. When heated up, the sake's warming qualities assert themselves noisily, as if to say, "This is a delicious sake. It's a delicious sake. Heating sake in an air-conditioned room is a luxury. I prefer a lighter version of the heavier, spicier, harder sake, but Jokigen is a good balance and I love it.

The spoils of my recent business trip to Fukuoka. Today is Mitsui's Kotobuki. It is basically light and dry, while retaining some umami. The label says it is very dry, but it is not that dry. However, if you want to drink it, it should be served cold. It is not smooth at room temperature. It is a somewhat bland sake. That is why it is a good sake to drink at a bar with a glass of chilled sake. Where has the sparkle of the sake I drank there gone? Is it the kind of delicious sake that can only be enjoyed at restaurants? It was delicious when I drank it at an izakaya in Kokura, but now I feel indigestion.

I thought I've had a lot of Miyagi sake, but this is the first brand I've had. Sake from the mountains of Miyagi. As the name suggests, this brand uses the underground water from Mt. Kurikoma, and it is soft, mild, lazy, and delicious. Cold tomatoes, hot cabbage rolls, Enjoying sake at room temperature in an air-conditioned room after taking a bath. The cold and room temperature sake were good, but the hot sake was too good. The balance of umami and cleanliness was so good that I could drink it forever. The warmed sake had a heavier umami and bitterness that was also delicious. By the way, I heard that Kurihara City was ranked No. 1 in the countryside where people want to live, and there is a cotton shop in Kurihara City.

Yakiniku at home. I like Halami when it comes to yakiniku. Shinomine, about 2 weeks after opening the bottle. Unfiltered raw sake at room temperature. It is light and easy to drink when cold. When it is brought back to room temperature, the deliciousness of the rice is in full bloom. It is easy to drink with a strong sake-like flavor and acidity, perhaps in consideration of the recent trend. I would like to try Shinomine's local sake someday.

A gift from a branch office in Miyagi. It was delivered as a year-end gift. Since no one took it home with them, we gratefully received it. Katsuyama is a brewery in Sendai City, and this is the first time I have had this brand, but it is still a Miyagi sake with a calm taste and a delicious rice flavor. It is really delicious. It was this good on the day the bottle was opened. I am looking forward to drinking it in the future. Bonito tataki is good, but sashimi is also delicious. I am happy to drink with tasty snacks.

In summer, aji sashimi and cold tomatoes. I will be serving Joyo, a locally brewed sake from Yamashiro, Kyoto. This brand is sometimes seen at liquor stores in Osaka and Kyoto. It has the image of a sake for drinkers who are faithful to the basics and have a strong core. Unusually for such a Joyo, I thought it was a good summer sake with a fizzy and light taste until about the third day after opening. After a week, the taste became a quiet delight for connoisseurs and sake drinkers. It is hot even though the rainy season has not yet ended.

Gokayama's sake, San-Shoraku. Sanjoraku is a delicious raw sake. The other day, I drank a Yamahai Yamahai with water added and hi-iru, which was a waste of time. It is beautiful but punchy. Speaking of Wakayama's sake Kido is the most popular sake in Wakayama. I would like to push Kurogyu. Of course, I think Kido is a good sake. I also like Kurumizaka. I thought Kurogyu made a punchy, umami sake. But when I looked at the label, I realized that the toji was from the Noto Toji lineage. That makes sense. Now, Kurogyu. It shows the potential of sake. It is a great match for fatty fried hormones and other strong-flavored foods such as fried eggplant and sweet-and-sour pork. It is interesting even when the temperature is raised, and also tastes great when cooled. Kurogyu is a brewery that produces a lot of new sake, such as unpasteurized sake and seasonal sake. Although Kurogyu is a brewery that produces a lot of new sake I like this orthodox Junmai the best, just like Kurogyu.

Tenpoichi in Fukuyama, Hiroshima. It is a dry sake with a sharp taste, as the old saying goes. In the hot season, a sharp cold sake can be drunk forever. The next morning after falling asleep, I drank it at room temperature. It is a quintessential Hiroshima sake and has a deep flavor. Personally, I preferred it at room temperature. Welcoming sake is also good.

Niigata sake today because Tochioage was on sale at the supermarket I often go to. The only Niigata sake that is sold at a local liquor store is this one, Yukinuchubai's "Normal Sake". My definition of sake is a sake with added sugar. To be honest, I don't like to drink it, but Yukinakubai is an exception. Honjozo is good, but for me personally, this is the best sake. Alcoholic sake is often criticized for its strong alcoholic smell, but I think the smell of alcohol is what makes this sake so good. The flavor of soybeans from Tochio-age (fried horse mackerel) and the flavor of big slices of aji (horse mackerel). The umami of horse mackerel cut into large pieces and the umami of soy sauce. The alcohol and the sake's deliciousness do not lose out to the deliciousness of the ingredients. Who said that Niigata sake is light and dry? Good sake, Yukichubai!

Whenever I go to Kyoto, I stop by a liquor store, which is a special distributor of Matsunotsu no Tsukasa. The special junmai is a rare class of sake that only a limited number of liquor stores carry. This time, however, they had a bottle of nama-shu on hand, so I bought a four-pack of nama-shu and a bottle of hi-iru (hi-iri). It is interesting to note that the sake and acidity levels change between the nama and hi-iru versions. Today's sake was the first. The first sip was delicious. Sweet but delicious. I was at a loss for words. Matsu no Tsukasa is one of my favorite brands of sweet sake with a sharp aftertaste, so it is easy to pair with sashimi and other dishes. And above all, heated sake is delicious. But it's hot. I was sweating after drinking hot sake.

One of the pleasures of business trips is drinking at business hotels. At my regular hotel in Kokura, I have a drink with snacks I bought at MaxValue. Fukuoka has great sake, fish, and meat. I also want to eat ramen. Sake is from Kitaya. A brewery that makes a good honjozo is sure to be good. It is delicious. This is my favorite Fukuoka sake. Kitaya and Morinokura. A traditional and delightful sake. This business trip lasted three days. We compared a 65% polished Yamada for a distributor and a 60% polished special honjozo for the local market. Now, which sake should I bring back this time?

I'm happy to say that it's for work. I travel to Fukuoka a couple of times a year. Each time, I always pack my suitcase, but I always buy this Morinokura. This sake is sold at a supermarket near my usual business hotel. There is nothing special about it. There's nothing special about it, but you'll know it when you drink it. One sip and you will understand the excellence of this humble and unassuming sake. It's June and everyone is drinking summer sake, but there's still plenty of time for heated sake. but heated sake is still delicious these days.
