Today is Kamikigen. The only drawback that I have noticed recently after drinking a series of delicious nama-shu is that I tend to be concerned about the freshness of the bottle after opening it and try to open a 4-gouple bottle. It's hard to keep up with that, so I decided to tear out my stock of nama-shu and open a bottle of the Kamikigen Junmai Daiginjo that I got from the Furusato tax payment. Polishing ratio 43%, 100% Aiyama It was smooth, juicy, gently sweet, refreshing, and in a good mood! I learned that Aiyama is called the diamond of sake rice!

Sentori today. The first Sentori was a modern orikara. I see! That's how it is! Fine bubbles, shiny milky white color with a hint of corkage, lactic acidity, green apple? Lactic acidity, green apple-like fruitiness, complex silk!

Today is brewer Kuheiji. It is a light nigori (light nigori), unpasteurized sake made from Yamadanishiki produced in Kurodano-sho. I bought it with reservations. As expected, it is fresh, fruity, and has a nice bitterness!

The cold weather is continuing, so I bought a set of hot sake heater. Sawanotsuru-san was selling a sake warmer that makes it easy to heat up sake. Good old Nada sake. Traditional Japanese saké! It's fun.

Otters today. Fruity sweetness, mellow umami, and a little sake-like dryness and bitterness at the end? However, it goes really well with today's dinner, oyster nabe from Hiroshima! I don't mind the aftertaste when paired with a meal, or rather it is good! I feel very good about the fact that they are making an effort to provide a stable supply of sake, not some rare sake that you can't get your hands on. It can be drunk casually but has dignity. The thick lid that makes it easy to open the bottle is also gentle.

Today is the moon after the rain. It was a Junmai Daiginjo of Yamada-Nishiki, unfiltered, raw and unpasteurized. It was a delicious sake with a fruity, muscat-like flavor and a crisp, clean aftertaste.

Obuse winery Soga's sake is brewed during the period when wine cannot be made. It has a thin, cloudy white color with a lactic acidity, but it also has layers of rice and fruit marbling, and a good amount of gas. It may be truly "erotic. The cork is a nice touch. Thank you for this rare and delicious sake.

I was too impressed with Jikin Hachitan-Nishiki Nama, so I went out in search of Jikin. This one has a more traditional sake taste than the Hachitan-Nishiki Nama. It is delicious. It has an elegant sweet and sour taste with a slight bitterness (minerality?) at the end. I felt there was a bit of bitterness (minerality?) at the end.

Kurodasho's Yamada Nishiki, and brewed exclusively with rice certified by the company's own four-star evaluation standard, is called "Kurodasho" in Japanese. The rice is called "Inone" because it is the "root of life. It tastes basically the same as a regular Yamadanishiki Junmai Daiginjo (which, by the way, is twice the price), but it has a more dignified, luxurious taste! Gorgeous, fresh, clear, but mellow as if clad in a thin robe of feathers! Delicious! It's so delicious! The workmanship of the label on the back is also wonderful. I felt the soul of the maker.

Sake Contest Brewed with Omachi Sake Rice The 15th Omachi Summit 1st Prize, Grand Prize in the Ginjo-shu category It is quintessentially delicious. Slightly sweet and fruity, with a delicious rice flavor, yet refreshing. I want to drink it again.
