Today's Morimasu. Special Junmai. It has a light amber color and not much aroma. It is like delicious water that the rice has been melted in. It has a full-bodied taste, but it is mild and natural, without bitterness or roughness.

Today is Oroku. Junmai Daiginjo Unfiltered Nama Sake. It is a right authentic sake! Quite dry, solid, orthodox and tasty sake. The freshness of unfiltered raw sake also coexists. The alcohol content is 17.5 It seems to be similar to Etsukaijin, which I like. On the second day, it becomes more relaxed, and this is delicious.

Yesterday's Nara no Awa. It is said to be sparkling sake, but perhaps because of the addition of sugar and acidifiers, the classification seems to be liqueur fizzy①. It tastes almost like Calpis soda. It is quite good. It is low-alcoholic and super sweet. It can be enjoyed with people who don't like sake. Degree of alcohol content: 5 degrees. Shinomine yesterday. I think it is a very major sake in Nara, but this was the first time I drank Shinomine as far as I can remember. Fruity ginjo aroma flavor, maybe a rather dry sharpness at the end. It was delicious.

Another Mimuro cedar today. Junmai Daiginjo-Shu Mirai. The hiyaoroshi was so good that I had to have the junmai-daiginjo as well, even though the price was quite aggressive. Of course it was delicious, but it did not have the same impact as the hiyaoroshi, and compared to the price, it may have been disappointing. It seemed to have been opened around June, so it could not be helped. I was reminded of the importance of freshness in sake.

Haneya today. It is a sweet and tasty type, fresh, fruity and juicy, slightly carbonated. We had it with 👍Toyama's firefly squid. The lid is not shaped for easy opening, but the fizz boosts it and no stress.

Today's sake is a packaged sake. Koshi-tanrei. A very well-balanced sake. It is an honor student, a balancer, or a beautiful pentagonal image. Due to some circumstances, I had to serve it with summer vegetable curry 😭, but it was a delicious sake that also goes well with curry.

Today's tiled roof. The representative brand "Iraka" brewed by the newest brewery in Japan, Iraka Sake Brewery, is named after a traditional Japanese architectural roof and the Northern Japan Alps as the roof of Japan. The brewery uses only "Hitogokochi" and "Kinmon-nishiki," specially grown rice without chemical fertilizers, grown in the same mineral water in Matsukawa Village, as brewing water. First tasting of "Hitogochi" and "Kinmon-nishiki". It's so delicious 😋. Personally, I like that the lid is easy to open.

Houou Mita today. Mikumari = moisture god. The label is already very promising. It has an aroma of citrus fruits and rice flavor. aroma, rice flavor, strong bubbles, dry flavor, rice flavor, and a sharp bitter taste. This feels quite newborn and energetic! As expected from Phoenix Firebird ‼️🐦‍🔥✨ Thank goodness for the development of the distribution network that allows us to get sake bottled 4 days ago in Tochigi in Yokohama. I expected it to be a bit sweeter, but this level of sweetness feels more vital somehow.

Today, Senkori, sparklers. On the last flowery Friday night of August 2025. It's still hot like midsummer, but summer will eventually come to an end. Like ramune, like sports drink, like sake. But it certainly doesn't have that beetle-like, head-on, midsummer feel to it. It gives the feeling of the end of summer. It's a really nice thing about sake to be able to feel the seasons.

Today is the Wind Forest. I knew it was delicious ‼️ I'm a novice who only recently figured out what the numbers next to Akitsuho mean, but Kaze no Mori is still good ✨‼️🤩 Of course it's good all the way through, but I feel like the first sip is just so much better at Kaze no Mori ✨.

Today, Japan Fountain. This year's Koshien tournament ended with Okinawa Shogaku's victory, but it was still a great performance by Prefectural Gifu Commercial that made the tournament so exciting. The game against Yokohama was great! So, with respect to Prefectural Gifu Commercial, let's have a drink from Gifu City 👏. Boa sorte means "good luck" in Portuguese. Boa sorte means "good luck" in Portuguese. The name was given to the sake in honor of Hideyoshi Toyotomi, a man of rare luck in the history of Japan. It was a little different from the image of Hideyoshi we know from history, but the taste was polite and gentle. Today's hope. Nozomi is a special brand for me. Today is not a special day, but somehow. The rice is 100% Miyamanishiki polished to 60%. It is said to be the third largest sake produced in Japan after Yamadanishiki and Gohyakumangoku. Yes, it is delicious. Not too sweet, with a lingering bitter aftertaste, but that may advance the meal. So I ate and drank, and then ate and drank again.

Seven spears the other day. Shichibonjari is my favorite brand. I found one for sale in October 2024 at Kakuyasu. The sake rice is 100% Shiga Prefecture-grown Tamakabane. I had never heard of Tamakabane, but I was told that it is often used to make sake with a unique richness, with the disadvantage that it is not suitable for highly refined ginjo sake. Yes, when you put it that way, it may be full-bodied. But it's pretty refreshing and doesn't seem to interfere with food.

Yesterday's crop. Hakutsuru-Nishiki is said to be a kind of sibling sake rice to Yamada-Nishiki, having the same parents Yamadaho and Watabune as Yamada-Nishiki. It is said to have been developed with the aim of surpassing Yamada-Nishiki as a sake rice. The taste is mild, mellow, and clear. Of course it tastes great, but since it is a Junmai Daiginjo from Sakusama, I may have expected a little too much😅. Also, not that it matters, but I'm kind of glad I got a good picture of it in my mind: ☺️
