This guy has superb knowledge of sake. Every time, he prepares sake that I have never had before.
Sakuta's special junmai. Naturally, this was my first time drinking it. It is a fashionable sake with lactic acidity, little bitterness, and relatively good flavor.

We went to Nikko the week before last. It closed early but we had good sake 😎. べっさんThe third glass was Izumibashi. It's been a while since I had a glass of Kanagawa sake. My colleagues and I get along well, and as we get older, we have more work contacts, but we have a good cooperative relationship. We share the same base temperament, so we talk quickly. But I think I'm getting close to retirement. べっさんWe ordered 寫樂 together at my request. This is the first time I've had this version. It was covered with a light bitterness. But it too was delicious, with just the right amount of sweetness and acidity. べっさんToday, three of my colleagues and I went out for a drink. One of them lives in Osaka and moved to Tokyo, so we decided to have a drink together. We went to our favorite yakitori restaurant. First, the Osaka-based classmate requested a dry sake, and the restaurant offered a Shiraoi with an unusual label. It was easy to drink with a light nigari flavor. もふりーとBunkajin Dry Junmai Sake. It is a sake from Tosa, Kochi by the way easy to understand, and its blueness is pleasant while being blue. It is crisp, sharp, and quickly takes on heat.
It is the kind of sake you want to drink on a hot day like this. Of course, it should be served at temperatures ranging from snow-cold to flower-cold. もふりーとJumizu Special Junmai Summer Sake.
Jumizu is a brand of sake that is brewed with a 1:1 ratio of water and rice to produce a rich, umami and sweet taste of rice, but this one is intentionally watered down and served as a summer sake.
So it has a lightness as if it were watered down with water, but with a strong umami flavor that comes through on the first sip. It is an interesting experiment.
The manager of Fukuno Tori Kanda is such a sake fanatic that he is almost the only person I can entrust with the selection of the sake I order. So I enjoy listening to his explanations of the sake. RecommendedContentsSectionView.title
