I bought it at a sake brewery because it won the 2022 Platinum Award at Kura Master. The label gave me the impression of a floral sake, but in fact it was the exact opposite. The aroma was typical of the hard times for Japanese sake, and when you drink it, it has a strong dry sake-like acidity, warm citrusy but slightly withered. The taste is rich, not very sharp, and leaves a sticky taste on the tongue. I tried all the recommended ways to drink it, but none of them satisfied me. It is relatively easy to drink on the rocks and warmed, but not for me. I wondered what kind of food French restaurateurs would pair this sake with, and felt a difference in sensitivity.

Second fermentation in the bottle, Ogedara Perfect bubbly, cool sweetness, acidity, and the whole is well integrated and can be served on its own, with Japanese food, or with Vietnamese or Western hors d'oeuvres to keep it moist. Excellent 👍 I think it is one of the three best bubblies along with Nanbu Bijin and Kido. It is 10 times better than Otters!

After the impact of the shwashy, crisp, ramune, calpis cider type, it has the elegant sweetness, acidity, and bitterness of pear kosui. Insanely high specs, check out the photos for details. Unlike Shintschida, it is easy to drink for everyone! The warm, mild, fruity aroma with a hint of history behind it that seems unique to the brewery, the light, pleasant, warm-toned fruit that makes you feel relaxed when you drink it, the moderate sweetness like mandarin oranges, the acidity, the rich umami, and the light alcohol that rises softly, reminiscent of an elegant red wine, all of it fades out nicely. All of them are well integrated and fade out. It is a feat of 12 degrees alcohol and goes well with meat dishes as well as Japanese food in general. Personally, I think it is best at room temperature!

Banana-like fruity aroma, malic acid effect when included, white wine acidity, and the effect of low alcohol content (12%) make it easy to drink, but it lacks sharpness and has a sticky aftertaste of old-fashioned style. I tried it with canned grilled oysters, and while the acidity part was a good match, I would have liked a little more umami flavor. Morishima was better with raw, steamed, and grilled oysters, so I hope they study IMA further to make a better sake.
