An easy-drinking sake that is a modern take on the classic Bunraku by a young brewer. The label says it has a lemon-like acidity, but in the mouth it has a sweetness from the rice and a umami like sake yeast, all wrapped up with a citrus acidity like mandarin oranges, and finished well without the mess that used to linger in the mouth with sake. It has a rich umami sweetness with a sourness that reminds me of Italian lemon cello, if I may be so bold. Good for a leisurely drink!
